GOAT CHEESE PIZZAS
This is an easy yet impressive looking appetizer which works well for casual gatherings and more formal ones. I made these for a cocktail party at my home and they went fast.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Separate the pita breads by cutting around the outer edge, and carefully prying the halves apart to make two rounds out of each one.
- Place the separated pita rounds onto cookie sheets. Generously sprinkle goat cheese, roasted red peppers and sun-dried tomatoes onto each one.
- Bake the pizzas for 16 minutes in the preheated oven, or until the crust is crisp. As soon as the pizzas come out of the oven, sprinkle with torn basil, and drizzle with balsamic vinegar. Cut into quarters, and serve hot or warm.

LAMB&GOAT CHEESE PIZZA, SUNDRIED TOMATOES&MINT
Millie and Rose Mary inspired me with her goat cheese operation. I had some ground lamb in the freezer and some mint on hand. I also had a pizza crust I needed to use. I went with a completely Greek theme. Mint, lamb, goat cheese, sun dried tomatoes, pine nuts and rosemary. Wow. This pizza is very unusual. Add on some Kalamata olives, peppers and ...more...oh my. Steps:
- Lightly oil a pizza stone with olive oil and gently press on the dough. (Use Jamie Oliver's Pizza crust recipe if you can...if not, canned refrigerated crust will do). Bake in a 400 F oven for 8 minutes.
- While the crust is pre-baking, chop and slice veggies and brown the lamb in a tablespoon of olive oil. When almost brown, drain in a colander to remove oil.
- Remove the pre-baked crust from the oven, lightly brush with olive oil. Sprinkle on the Rosemary leaves, onion, and lamb.
- Drain the rehydrated tomatoes, top with slices of red and green peppers. Top with pine nuts and olives.
- Top all with goat cheese and slices of fresh mozzarella, mint and a sprinkle of red chile flakes.
- Bake for 10-14 minutes more at 400 F. Remove from oven and allow to sit 5 minutes before cutting.
BONELESS LEG OF LAMB WITH HERBED GOAT CHEESE

- Preheat oven to 450°F. Remove netting from lamb and place on cutting board. Open the meat up and season with salt and pepper. In a mixing bowl, combine the goat cheese, garlic, parsley, rosemary and Craisins®. Place the goat cheese mixture in the middle of the lamb opening and fold side layer on top of lamb. Cut 12 pieces of twine and tie lamb so goat cheese mixture is intact. Season the outer layer of lamb with salt and pepper. Cook lamb at 450°F for 20 minutes. Turn oven down to 400°F and cook for another 55 minutes. Take out of the oven and let rest for 15 minutes before slicing.

Steps:
- Place pizza crust on pizza pan.
- Brush with oil.
- Sprinkle with rosemary.
- Add layer of tomatoes.
- In medium skillet cook onion over medium-high heat for 2 minutes.
- Add lamb (cook and crumble until no longer pink).
- Drain well
- Distribute over pizza crust.
- Sprinkle with cheese & bell peppers.
- Bake in 375 oven for 8 to 10 minutes.
- Remove from oven and cut into 8 slices.

Steps:
- Combine yeast with water and honey, sift the flour and add milk, oil and salt. Knead the dough for 10 minutes in your mixer. Cover and leave for 2 hours to rise.
- Combine the ingredients for the vinaigrette.Combine the lamb mince with spices and form small balls.Divide the pizza dough into two and roll out. Transfer to a floured baking sheet and spread with the vinaigrette. Add mozzarella and goat cheese, meatballs, cherry tomatoes and bell pepper and top with pine nuts. Bake for 5-10 minutes at 250°C.
- In the meantime combine all ingredients for the garlic sauce.Remove the pizza from the oven, top with pomegranate seeds and garlic sauce. Eat!
