CUMIN LAMB STIR-FRY



Cumin Lamb Stir-Fry image

Fragrant, intense and full of fiery chile, this lamb stir-fry isn't for the timid eater. For the most authentic flavor, it's worth your while to seek out Sichuan peppercorns, which have a woodsy, tongue-numbing, camphor quality. (They are available at specialty spice markets, in Chinatown, or online.) You can substitute regular black peppercorns, but you won't get the same punch. If you're not a lamb-lover, you can also try this with lean beef. Serve this over white or brown rice to cut the heat, with a side of sliced cucumbers dressed with sesame oil and salt for freshness.

1 tablespoon whole cumin seeds
2 teaspoons Sichuan or regular peppercorns
1 pound boneless lamb
1 teaspoon ground cumin
3/4 teaspoon kosher salt
4 to 8 dried red chiles (or substitute 1/2 teaspoon or more crushed red pepper)
1 large white onion
1 bunch (about 8) scallions, trimmed
2 tablespoons peanut oil
3 large garlic cloves, finely chopped
1 1/2 tablespoons soy sauce
1 1/2 tablespoons Chinese cooking sherry (Shaoxing rice wine) or dry sherry
2 cups fresh cilantro, leaves and stems
Rice, for serving

Steps:

  • In a dry skillet over medium heat, toast cumin seeds and peppercorns until fragrant, 1 to 2 minutes. Transfer to a mortar and pestle and crush lightly.
  • Slice meat across the grain into 1/2-inch-thick strips. Toss meat with crushed spices, ground cumin, salt and dried chiles.
  • Peel onion and halve it through the root end. Trim the ends and cut each half lengthwise into 1/2-inch-thick slices. Cut white and light green parts of scallions into 2-inch lengths. Thinly slice scallion greens; keep separate.
  • Heat a very large skillet or wok over high heat until screaming hot, about 5 minutes. Add oil. Toss in onion and the scallion bottoms. Cook, tossing occasionally, until vegetables are lightly charred but still crisp, about 2 minutes. Transfer to a bowl.
  • Add lamb and chiles to skillet. Cook, tossing quickly, until meat begins to brown. Add garlic, soy sauce and sherry. Cook until most of the liquid has evaporated and lamb is cooked through, about 2 minutes. Toss in onions and scallion bottoms. Remove from heat and mix in cilantro and scallion greens. Serve hot, over rice.

250 g lamb steak (cut into strips)
0.5 broccoli
1 red pepper
1 pak choi
70 g baby corn
50 g mangetout
300 g egg noodles
1 tbsp sesame oil
2 tbsp sesame oil
4 tbsp soy sauce
2 garlic cloves (crushed)
30 g fresh ginger (finely chopped)
1 lime (juice only)
1 tbsp Chinese Five Spice

Steps:

  • Trim the fat off the lamb and cut into strips of about 1cm / 0.5 inch thick.
  • Chop your vegetables.
  • Heat some oil in a pan over a medium heat and cook the lamb for 2 minutes, until browned all over.
  • Make the sauce by mixing together the soy sauce, sesame oil, lime juice, garlic, ginger and Chinese Five Spice.
  • Get the noodles ready.
  • Add the vegetables to the hot pan and cook for 4 minutes.
  • Add the noodles and sauce to the pan and cook for a further 3 minutes.
  • Serve topped with chopped spring onions (scallions) and sliced chilies.

2 - 3 tablespoons rapeseed oil
1 onion - finely chopped
2 - 3 green chillies - cut into thin rings
1 tablespoon garlic and ginger paste
10 curry leaves
500g (1lb) cooked lamb leg or shoulder - cut into small pieces
1 tablespoon curry powder, garam masala or mixed powder
1/2 teaspoon chilli powder
1 tablespoon ground black pepper
1 tablespoon dark soy sauce
Salt to taste
2 tablespoons chopped coriander
Juice of one lemon

Steps:

  • Heat the oil in a frying pan over medium high heat. When visibly hot, add the onion and fry for about five minutes until lightly browned.
  • Add the green chillies, garlic and ginger paste and curry leaves (optional) and fry for a further 30 seconds before adding the cooked lamb.
  • Stir this well and ad the dry spices. Fry until the meat is crispy on the outside and then add the soy sauce and salt to taste. Remember, the soy sauce is already quite salty so taste before adding more salt.
  • Squeeze the lemon juice over the top and garnish with fresh coriander to serve.

Steps:

  • Allow lamb chops to come up to room temperature before cooking.
  • Add salt and pepper to both sides of the chops.
  • Heat a skillet to Medium heat on your stove top.
  • Stand the chops up, fat edge down, in the heated skillet.
  • Let them cook for about 2 to 3 minutes.
  • Lay chops down on the flat side, cook for 3 to 4 minutes.
  • Flip chops over, continue to cook until done.
  • Chops are done when internal temperature reaches 145F degrees.
  • Remove from skillet when done. Place on plate and let rest for 5 minutes before serving.

2 pounds American lamb cut thinly for stir fry (use leg of lamb of shoulder cut)
3 Tablespoons Soy Sauce
1 Tablespoon grated ginger
1 Tablespoon grated garlic
1 Tablespoon ketchup
1 Tablespoon chilli sauce (more or less to taste)
1 teaspoon sesame oil
1 Tablespoon sesame oil (or any neutral oil)
3 Bok Choy cut up into slices
2 carrots sliced
2 cups mushrooms sliced
2 cups green beans
1 red onion sliced
1 red pepper sliced
1 cup broth
1/2 cup soy sauce
2 tablespoons ginger
1 tablespoon garlic
1 Tablespoon cornstarch
2 Tablespoon chilli sauce (more or less to taste)
1 teaspoon honey
1 teaspoon rice vinegar
1/4 cup cilantro chopped
2 Tablespoons mint chopped
1/4 cup chopped Peanuts
2 tablespoons Chilli Sauce (extra)
2 cups cooked noodles (or 6 ounce pack of uncooked noodles. Cook according to the package instructions. )

Steps:

  • Place the lamb in a bowl and add all the marinade ingredients except the oil and mix well.
  • You can marinade the lamb for 10 minutes and upto 3 hours.
  • Preheat a wok with the sesame oil until really hot, then add in the veggies and keep stir frying for 4-8 minutes (depending on the size of your veggies). Veggies should be crisp and vibrant.
  • Remove the veggies on to a plate and add the remaining oil to the pan.
  • Add the lamb once the pan is hot and stir fry it for 5-7 minutes (depending on the thickness of the lamb slices). Don't over cook the lamb.
  • While the lamb is cooking, make the stir fry sauce by mixing all ingredients in a large liquid cup or bowl.
  • Once the lamb is ready, add in the veggies, noodles and sauce to the pan.
  • Toss the stir fry together and bring the sauce to a boil. As soon as it boils, drop the heat to low and let the sauce simmer for just 2 minutes.
  • Finish off with fresh cilantro, mint and top with chopped peanuts.
  • Add in dollops of chilli sauce if you want extra spice to your stir fry.
  • Serve right away and enjoy!! :)

2 tsp. ground cumin
2 tsp. Chinese or Korean chile flakes*
1 tsp. salt
1 tsp. black pepper
1 lb. boneless lamb, cut into ¾ inch cubes
3 Tbsp. neutral oil with a high smoke point, such as peanut or canola, divided
1 large yellow onion
1 bunch scallions
3 cloves garlic, minced
1 tsp. grated fresh ginger
2 Tbsp. soy sauce
2 Tbsp. Shaoxing rice wine or dry sherry
Rice for serving

Steps:

  • In a medium bowl, whisk together the cumin, chile flakes, salt, and pepper.
  • Add the lamb and toss to coat with the spice mixture.
  • Let the lamb sit at room temperature for 15 minutes while you prepare the rest of the ingredients, or, if preparing in advance, cover and refrigerate for up to one hour.
  • Peel and quarter the onion. Then, slice each quarter into three or four wedges.
  • Trim the roots and tops of the scallions. Cut the white and light green parts into two or three pieces and thinly slice the dark green tops. Set aside the tops to garnish the dish.
  • Heat a wok or deep large skillet over high heat until it is hot enough that a drop of water sprinkled on the pan instantly sizzles, about 2 minutes. Add two tablespoons of the oil and heat until shimmering.
  • Add the onion and white and light green parts of the scallion to the wok and toss to coat with oil. Stir-fry, stirring frequently, until the vegetables are softened and browned, about five minutes.
  • Transfer the vegetables to a bowl.
  • Add the remaining tablespoon of the oil to the wok and swirl to coat the bottom.
  • Add the lamb and stir-fry, stirring frequently, until all the pieces are browned, about 2 minutes.
  • Add the garlic, ginger, soy sauce, and Shaoxing rice wine and stir to combine.
  • Continue to cook for an additional minute.
  • Return the onion and scallion to the wok and cook for an additional minute.
  • Garnish with the scallion tops and serve immediately over rice.

Recipe that's a combination of some useful ideas I got from a post in the Aus/NZ forums along with a few ideas from recipes found on the web. If you don't have access to Vegemite try black sauce (thanks mummamills for that and more!).

500 g lamb liver
1 tablespoon sea salt
1/4 cup flour
2 teaspoons butter
200 g bacon (about 4 rashers)
2 medium onions, diced
1 1/2 cups water
1 tablespoon vegemite
1 tablespoon cornflour

Steps:

  • Place lamb liver in a small bowl, sprinkle with sea salt, cover with water and refrigerate for a few hours.
  • Peel skin off lamb's fry and remove any other pieces of tissue, slice and lightly coat with the flour. I normally like to cut any long strips in half again so they're bite size.
  • Remove excess fat and rind from the bacon and chop coarsely. Leave a bit of streaky fat on the bacon, it adds to the flavour.
  • Melt butter in a frypan, add bacon and onion and fry around 8-10 minutes over medium to high temperature until onion is soft and bacon is fairly well cooked but not crisp.
  • Add lamb's fry and lightly fry a few minutes turning often to brown evenly, you don't need to cook it through at this stage.
  • Blend water, vegemite and cornflour and add to the pan and mix through well.
  • Bring to a gentle boil, reduce temperature to a simmer and continue to cook for 20 minutes stirring every 5 minutes or so. It may take a little more time but you want a fairly thick gravy runs a little slowly off a spoon.
  • Serve with mashed potatoes or it's also good re-heated and served on toast for breakfast.

500 g (1 lb 2 oz) lamb's liver
plain (all-purpose) flour, to dust
375 ml (13 fl oz/11.2 cups) chicken stock
1 tsp worcestershire sauce
15 g (1.2 oz) reduced-fat canola or olive oil margarine
2 tsp canola or olive oil
2 onions, sliced
8 slices low-fat bacon (we used 97% fat-free), chopped
canola or olive oil spray
2 tbs chopped parsley
4 thick slices wholegrain bread, toasted

Steps:

  • 1. Peel off and discard the outer membrane from the lamb's fry, then cut the flesh into 1 cm (½ in) slices. Put some flour in a shallow bowland season with salt and freshly ground black pepper. Dust the lamb's fry with the seasoned flour and shake off the excess flour, reserving 2 tablespoons. 2. Blend the chicken stock, Worcestershire sauce and reserved flour in a jug. 3. Heat the margarine and oil in a frying pan over medium heat, add the onion and cook for 3 minutes, or until golden. Remove the onion from the pan and set aside. Add the bacon to the pan and cook over medium heat for 2 minutes, or until brown. Remove from the pan and set aside. 4. Spray the pan with oil. Add the lamb's fry to the pan and cook over high heat for 1 minute on each side, or until lightly browned. Return the onion to the pan, then pour in the chicken stock mixture and stir until the mixture boils and thickens. Reduce the heat to low and simmer for 3 minutes, or until the lamb's fry is tender. Stir in the cooked bacon and parsley. Serve immediately with the toast.
