LAMB CHOPS WITH APRICOT AND HERB SAUCE
This is my adaptation of a Canyon Ranch Health Resort recipe from 'low-fat cooking guru' Jeanne Jones. It first caught my attention because of its low fat content; but with its fine blend of herbs, not surprisingly, it's also delicious. When I've served it, no one has in the least suspected that this is a low-fat recipe! I found it in Prevention Healthy Cooking's 'Eat up Slim down: tried-and-true recipes from real weight-loss winners' by Jane Kirby and David Joachim.

Steps:
- Sprinkle both sides of the lamb evenly with the garlic salt and pepper, warm a large non-stick pan (with a lid for use later) over a medium heat until hot, add the lamb and brown on both sides.
- Add the stock and the apricots to a medium pan, over a high heat, and bring to the boil.
- Reduce the heat to low and simmer for 5 minutes, or until the apricots are very soft.
- Reserve half of the apricots and set aside.
- Transfer the other half of the apricots and all of the stock to a blender or food processor, add the vinegar, oregano, thyme, rosemary, salt and nutmeg, and blend to make the sauce.
- Pour the sauce over the lamb, sprinkle the reserved apricots over the lamb and, over a low heat, simmer the lamb for 10-15 minutes or until the lamb is cooked through.
- Serve with steamed green vegetables andyour favourite mashed potato recipe. I'd recommend Bergy's Irish Mashed Potatoes #10974, which are beautifully creamy but also low in calories.

GARLIC AND HERB-RUBBED LAMB CHOPS
Steps:
- Gather the ingredients.
- In a large baking dish, toss the lamb with the olive oil, garlic, black pepper, red pepper flakes, rosemary, oregano, and thyme.
- Once the chops are evenly coated, cover and refrigerate for at least 4 hours or up to overnight.
- Preheat grill, grill pan, or broiler.
- Remove chops from marinade and salt both sides generously.
- Cook about 5 to 6 minutes per side for medium-rare (will vary depending on thickness).
- Scatter with fresh parsley and mint.
- Let rest for 5 minutes before serving.

LAMB CHOPS WITH BALSAMIC REDUCTION
This recipe for lamb chops is a favorite in my house. It is an easy and quick recipe for two people (we eat two chops each). Rosemary and thyme give it great flavor. If you double the recipe, remember that the sauce will take longer to reduce.

- In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
- Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.
- Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.

- Sprinkle lamb chops with salt and garlic powder. Rub each side of chops with Dijon-mayonnaise blend and sprinkle with brown sugar. in a large nonstick skillet coated with cooking spray, brown chops on both sides over medium-high heat., Add apricot nectar and mint. Reduce heat; cover and simmer for 12-15 minutes. Add apricots. Simmer, uncovered, 5 minutes longer or until meat reaches desired doneness and sauce is slightly thickened. Serve sauce over lamb.

- Combine all the ingredients for the marinade in a small mason jar. Cover it with a lid and shake until all the ingredients are combine.
- Place lamb chops on a large plate/casserole and pour the marinade over the lamb chops. The marinade sauce should cover all sides of the lamb chops.
- Let the lamb chops marinade for 30 minutes at room temperature.
- In a large skillet, heat 1 tablespoon of olive oil on medium heat and add lamb chops.
- Cook on medium-high heat about 4 minutes on each side and until it gets the internal temperature of 160F.
- Remove the lamb chops from the skillet and set aside.
- Add wine to the same skillet and bring to boil.
- Add mustard, fresh thyme, and minced garlic and bring to boil until the sauce gets thick. It's about 2-3 minutes.
- Add back to the skillet the pan-seared lamb chops.
- Simmer on low-medium heat for a minute or two.
- Season the sauce with salt, cracked black pepper and fresh thyme.

GARLIC AND HERB LAMB CHOP RECIPE

- Mix all ingredients except the garlic in a small bowl.
- Pour the marinade on top of the lamb chops in a large bowl.
- Rub the marinade evenly into the chops.
- Throw the garlic cloves into the bowl
- Cover with lid or plastic wrap.
- Refrigerate for at least 3 hours or overnight.
- Remove the lamb chops from the refrigerator about 1 hour before searing to allow them to return to room temp.
- Heat olive oil in a large, cast iron skillet on medium high.
- Once oil is hot, add in the lamb chops.
- Allow the chops to sear for 5 minutes. Do not move the chops around.
- Flip the chops over
- Add in the butter, garlic cloves from the marinade, and rosemary sprigs to the skillet.
- When the butter melts, baste the chops with the butter.
- Continue searing for mins or until a meat thermometer registers 145°F (or cook to your prefer level of doneness)
- Remove chops to a plate to keep warm and rest.
- Pour the wine into the same skillet to deglaze it
- Add in the chicken broth and Worcestershire sauce and butter
- Stir until wine reduces and the butter melts; about 2 minutes.
- Pour sauce over the lamb chops and serve.
- Enjoy!

- Add all of the ingredients except the olive oil to a food processor and run until finely chopped. (You may need to scrape the sides down a few times.) With the motor running, slowly pour in the olive oil until well blended. (You may need to scrape the sides down a few times here too.) Transfer to a bowl; reserve. (Yields approximately 1 cup. Will last in the refrigerator for a few days. You can add more olive oil to loosen it as desired.)
- Heat a grill or grill pan to medium-high heat. Sprinkle both sides of the lamb with some salt and pepper. Place on the grill and cook to the desired temperature. (Medium-rare/medium took about 2 to 3 minutes per side on my stovetop grill pan.) Transfer to a cutting board or other serving platter.
- Spoon some of the Mint Herb Sauce over the lamb and serve with the remaining sauce on the side. Don’t forget to pair with Vinho Verde!
