LAMB CHOPS WITH APRICOT AND HERB SAUCE

Lamb Chops With Apricot and Herb Sauce image

This is my adaptation of a Canyon Ranch Health Resort recipe from 'low-fat cooking guru' Jeanne Jones. It first caught my attention because of its low fat content; but with its fine blend of herbs, not surprisingly, it's also delicious. When I've served it, no one has in the least suspected that this is a low-fat recipe! I found it in Prevention Healthy Cooking's 'Eat up Slim down: tried-and-true recipes from real weight-loss winners' by Jane Kirby and David Joachim.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

4 boneless lamb steaks, boneless, trimmed of all visible fat
1/2 teaspoon garlic salt
1/2 teaspoon fresh ground black pepper
4 ounces dried apricot halves
14 fluid ounces low sodium chicken broth
1/2 teaspoon balsamic vinegar
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon salt (to taste)
1/8 teaspoon ground nutmeg

Steps:

  • Sprinkle both sides of the lamb evenly with the garlic salt and pepper, warm a large non-stick pan (with a lid for use later) over a medium heat until hot, add the lamb and brown on both sides.
  • Add the stock and the apricots to a medium pan, over a high heat, and bring to the boil.
  • Reduce the heat to low and simmer for 5 minutes, or until the apricots are very soft.
  • Reserve half of the apricots and set aside.
  • Transfer the other half of the apricots and all of the stock to a blender or food processor, add the vinegar, oregano, thyme, rosemary, salt and nutmeg, and blend to make the sauce.
  • Pour the sauce over the lamb, sprinkle the reserved apricots over the lamb and, over a low heat, simmer the lamb for 10-15 minutes or until the lamb is cooked through.
  • Serve with steamed green vegetables andyour favourite mashed potato recipe. I'd recommend Bergy's Irish Mashed Potatoes #10974, which are beautifully creamy but also low in calories.

LAMB CHOPS WITH BALSAMIC REDUCTION

Lamb Chops with Balsamic Reduction image

This recipe for lamb chops is a favorite in my house. It is an easy and quick recipe for two people (we eat two chops each). Rosemary and thyme give it great flavor. If you double the recipe, remember that the sauce will take longer to reduce.

Provided by PGRAYMENDOZA

Categories     Meat and Poultry Recipes     Lamb     Chops

Time 40m

Yield 4

Number Of Ingredients 10

¾ teaspoon dried rosemary
¼ teaspoon dried basil
½ teaspoon dried thyme
salt and pepper to taste
4 lamb chops (3/4 inch thick)
1 tablespoon olive oil
¼ cup minced shallots
⅓ cup aged balsamic vinegar
¾ cup chicken broth
1 tablespoon butter

Steps:

  • In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
  • Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.
  • Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.

GRILLED LAMB CHOPS WITH HERB MINT SAUCE | THE HUNGRY HUTCH
2019-12-25 Whether indoors or outdoors, this recipe for grilled lamb chops with mint herb sauce is a sure bet. Lamb isn’t always the first protein that comes to mind when people think of grilling, but this dish might just change a few minds. I’m a big fan of lamb and love the distinctly meat flavor it offers. • Add all of the ingredients except the olive oil to a food processor and run until finely chopped. (You may need to scrape the sides down a few times.) With the motor running, slowly pour in the olive oil until well blended. (You may need to scrape the sides down a few times here too.) Transfer to a bowl; reserve. (Yields approximately 1 cup. Will last in the refrigerator for a few days. You can add more olive oil to loosen it as desired.)
  • Heat a grill or grill pan to medium-high heat. Sprinkle both sides of the lamb with some salt and pepper. Place on the grill and cook to the desired temperature. (Medium-rare/medium took about 2 to 3 minutes per side on my stovetop grill pan.) Transfer to a cutting board or other serving platter.
  • Spoon some of the Mint Herb Sauce over the lamb and serve with the remaining sauce on the side. Don’t forget to pair with Vinho Verde!
