LAMB CHOPS WITH RED WINE AND ROSEMARY SAUCE
This recipe for this dish is one that I received a while back, in one of my cooking classes on American Bistro. I have since changed and added some ingredients to suit my taste. It is a lovely dish, that is fairly quick, easy to make and very tasty. Most ingredients are ones you may have on hand. The sauce is a lovely compliment to the lamb. Served with a side of wild rice and a green salad or veggie, it is a perfect dinner.

Steps:
- Heat a large skillet over medium-high heat. Season lamb chops with salt, pepper and garlic powder.
- Add the oil to the skillet. Add chops to the pan cook 4 minutes.
- Turn chops over and cook 3 minutes longer.
- Remove chops from the skillet and set aside in a warm place.
- Pour off all but 2 tsp of fat from skillet. Add the garlic and shallot. Cook until they become transparent and tender.
- Add the wine, rosemary, and parsley, stirring up browned bits from the bottom of the pan.
- Simmer over high heat until syrupy. That will take about 3 minutes.
- Add the chicken broth and continue to simmer until sauce is reduced by about half.
- Combine butter and flour in a cup (beurre manie).
- Stir mustard and cream into sauce. Adjust seasonings. Bring to a boil.
- Add beurre manie to sauce and stir well until incorporated into sauce and sauce thickens, about 2 minutes.
- Remove sauce from heat.
- Plate chops, 2 per plate, and add sauce over top. Garnish with a sprig of rosemary.
- Serve Immediately.
LAMB CHOPS BURGUNDY
Adapted from the Culinary Arts Institute (not to be confused with CIA) Cookbook. We've been making this for decades. We typically eat it with a bit of rice (brown these days) and black beans. We also typically make extra onions which we cook in the marinade and then pour over the rice and beans. Don't be afraid to increase the garlic if you like it as much as we do.

Steps:
- Put lamb chops in a shallow dish or gallon-size ziploc bag.
- Combine burgundy, olive oil, red onion, garlic, salt, pepper, and cumin in screw-top jar or in the bag. Seal whichever container you're using and shake to combine ingredients.
- Pour marinade over meat or add meat to bag and manipulate to coat meat. Place in fridge for about two hours and turn chops from time to time.
- Remove chops from marinade and place on a broiler rack. Reserve marinade. Set under the broiler with tops of chops 3-5 inches from the heat.
- Broil 18-22 minutes or until meat is done as desired. turn once and brush occasionally with marinade.
- To test, slit meat near the bone and peek at the meat (stop cooking just short of desired doneness). Let rest five minutes after taking out of the broiler.
- If desired, simmer leftover marinade and serve as sauce/condiment alongside the chops.

BAKED LAMB CHOPS WITH POTATOES, ONIONS AND BEER RECIPE

- In a large skillet, heat the vegetable oil. Season the lamb chops with salt, pepper and cumin. Add the lamb to the skillet and cook over moderately high heat until browned, about 3 minutes per side. Transfer the lamb to a large plate.
- Preheat the oven to 350°. Melt the butter in the skillet. Add the onions, season with salt and pepper and cook over moderate heat, stirring occasionally, until starting to soften, about 10 minutes. Reduce the heat to low and cook the onions until very tender, about 5 minutes. Sprinkle the onions with the turmeric and thyme and cook, stirring, until fragrant, 2 minutes. Scrape the onions into a bowl. Add the beef stock to the skillet and boil, scraping up the browned bits from the bottom, about 1 minute.
- Butter a 9-by-13-by-2 inch glass or ceramic baking dish. Spread half of the potatoes in the baking dish and season generously with salt and pepper. Spoon one-third of the onions over the potatoes and arrange the lamb chops on top. Cover with one-third of the onions and then the remaining potatoes; generously season the potatoes with salt and pepper. Top with the remaining onions. Pour the lager over the onions and then pour in the beef stock from the skillet.
- Cover the dish with foil and bake in the upper third of the oven for 1 hour. Uncover the baking dish, increase the oven temperature to 400º and bake for about 30 minutes longer, until the potatoes are tender and the top is browned. Let the dish rest for 15 minutes before serving.
