- For the lamb: season lamb with salt and pepper. Heat olive oil in a pan and sear meat on both sides.
- For the cheese crust: heat butter in a pan and saute leeks until soft, dust with flour and mix well. Add sour cream and bring to a boil. Remove from heat and add sage, beaten egg white and cheese. Season with salt and pepper to taste.
- For the sauce: saute onion in the meat drippings. Add root vegetables and saute briefly. Dust with flour, deglaze pan with broth and season with salt and pepper, simmer for about 5 minutes. Remove from the heat and add crème fraiche.
- Spread cheese mixture on top of lamb chops and brown lightly under a hot broiler, watching carefully. Serve accompanied by the sauce.

- Preheat oven to 375 degrees F (190 degrees C). Thoroughly grease a covered baking dish.
- Heat a large skillet over medium-high heat. Cook and stir ground lamb in the hot skillet until some of the fat begins to render; add onion, carrots, and garlic. Continue to cook and stir the mixture until the lamb is completely browned and crumbly, 5 to 7 minutes. Stir soup mix into the lamb mixture; remove skillet from heat.
- Melt butter in a saucepan over medium heat. Whisk flour into butter, 1 tablespoon at a time, making sure there are no lumps between additions. Pour milk into the butter mixture while whisking; continue to whisk until the milk thickens and the mixture is smooth.
- Switch heat below saucepan to 'off.' Stir Cheddar cheese and Havarti cheese into the milk mixture until the cheese is melted and the sauce is smooth.
- Spoon a small amount of the cheese sauce into the beaten egg in a bowl; whisk together to temper the egg. Pour the tempered egg into the cheese sauce and stir.
- Arrange sliced potatoes in the bottom of the prepared baking dish, overlapping to make a layer about 1/2-inch deep; season with salt and pepper. Pour about 1/3 of the cheese sauce over the potatoes and spread into an even layer. Spread the lamb mixture evenly atop the cheese sauce layer. Layer remaining potatoes atop the lamb; season again with salt and pepper. Pour remaining cheese over the top. Cover baking dish.
- Bake in preheated oven until the potatoes are tender, about 90 minutes. Remove cover and continue baking until the top browns, about 30 minutes more.

By doing so this will give the chops a nice crust.Before placing lamb chops in hot skillet scrape off some of the herbs, especially the garlic, then gently place lamb chops into hot pan and cook for about 4 minutes then flip and continue cooking chops until internal temperature reaches to around 125 degrees Fahrenheight.Tip: Internal temperatures of meat of 120 degrees Fahrenheight is considered rare, 125 degrees F is medium rare, 130 degrees F is medium and 145 degrees F is well done. It’s best to use an instant read thermometer to get the desired doneness.I will usually remove the lamb chops from the skillet when they become around 125 degrees Fahrenheight and finishing cooking them in the oven. - Making GravyPlace about 1 cup beef broth in a large glass and add flour. Whisk until ingredients are combined and without lumps. Pour mixture into warm skillet adding herbs, salt and pepper to taste and cook over medium heat. The mixture will quickly become thickened so slowly add remaining broth while whisking and cooking over heat until desired gravy thickness is achieved.Serve and enjoy!
