Vishal shared with butcher about our plans of grilling Greek-style burgers. Where he was impressed with my combination of flavors: lamb burgers with mint, roasted peppers and brioche buns..... He suggested us to add one more ingredient in lamb patties to help in binding, keeping meat extra moist and juicy. That ingredient is Milk Powder. I was really surprised but I did try it in these burgers. I must say, I'm so impressed with the results. Ground lamb meat, even though I bought 85-15 instead of regular 80-20 , came out super moist, tender and there was no sweetness of milk any where. score!Milk Powder?! Really? 1.5 lbs Lamb, ground, 85-15
1-2 Shallot Onions, small onions, small chopped
3 tbsp Powdered Milk
2 Garlic, cloves, minced
1 tsp Oregano
1/2 tsp Chili Flakes
1 tsp Cumin Powder
1/2 tsp Garlic Powder
1 tsp Salt
4 tbsp Mint, handful of fresh leaves, chopped
3 tbsp Parsley, fresh leaves, chopped
1 Cup Yogurt, greek, thick yogurt
1 Cucumber, seedless such hothouse or english cucumber, small chopped
1 Lime, zest and juice of lime, adjust to taste
2 tbsp Mint, fresh leaves, chopped
2 tbsp Parsley, fresh leaves, chopped
1/2 tsp Cumin Powder
Salt and Black Pepper, to taste
3-4 Red Bell Pepper, roasted, thin sliced
Arugula
Red Onion
Burger Bun, prefer sweet hawaiian or brioche, for serving

Steps:

  • Cucumber Yogurt Sauce for lamb burgers: To make yogurt sauce, in a medium bowl combine, yogurt, cucumber, cumin powder, lime juice, mint, and parsley. Refrigerate until ready to use. Just before using, taste and adjust salt and black pepper.
  • Set the grill to preheat. Heat 1 tbsp oil in a small sauce pan. Add onion and fresh chopped garlic. Sweat until onions are soft. (2-3 minutes). For lamb burgers, in a wide bowl, add ground lamb, softened onions, all spices with mint, parsley and salt. Mix to combine and distribute all ingredients.
  • Make 4 large 1/3 pound patties or 6 small 1/4 pound patties as per liking.
  • To cook lamb burgers: Place burger patties on medium hot grill and cook for 5-6 minutes, then flip and cook other side until burgers are done to your taste. Don't flip'em too often, let one side sear well and caramelize before tuning to cook other side. You can also lightly toast brioche buns, if prefer. For best result, after grilling, let cooked lamb rest for 5 minutes.
  • To serve, slather 1-2 tbsp yogurt dressing on bottom half of bun, top with onion slices, lamb patties, roasted peppers,more yogurt dressing and fresh arugula. Serve and enjoy!

3 cups pea sprouts, for serving

Steps:

  • For the burgers: Place the ginger, garlic, lime leaves, shallots and lemongrass in a food processor and pulse until a chunky paste is formed. Place the lamb in large bowl and add the lemongrass paste, curry powder, white pepper, soy sauce, Worcestershire, cilantro, mint and parsley. Mix until combined. Portion into 4-ounce patties.
  • For the yogurt sauce: Combine the yogurt with the lime juice, curry powder, white pepper, salt, mint, cilantro, mint and parsley.
  • Cook the burgers until light pink in the center. Toast the brioche buns. Place the burgers on the buns and top with the yogurt sauce and pea sprouts.

1 teaspoon fresh lemon juice
1 garlic clove, halved lengthwise
1 1/2 lb ground lamb (not lean)
1/3 cup minced fresh parsley
1/4 cup minced onion
3/4 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon ground allspice
4 (1/2-inch-thick) slices country-style bread (from a crusty round loaf; preferably 6 inches in diameter)
2 tablespoons plus 1 teaspoon extra-virgin olive oil
2 oz mesclun (3 cups)

Steps:

  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderately high.
  • While grill heats, whisk together yogurt, minced mint, lemon juice, and salt to taste. Mince 1 half of garlic clove and whisk into yogurt sauce.
  • Mix lamb, parsley, onion, salt, pepper, and allspice with your hands in a bowl until just combined (do not overwork mixture or patties will be tough). Form into 4 (4 1/2-inch) patties (1/2 inch thick).
  • Brush both sides of bread slices with 2 tablespoons oil (total for all slices) and grill, covered only if using a gas grill, turning over once, until golden, 1 to 2 minutes total. Rub 1 side of each toast with cut side of remaining garlic and season with salt.
  • Grill patties on lightly oiled grill rack, covered only if using a gas grill, turning over once, until browned but still slightly pink in center, 5 to 7 minutes total.
  • Toss together mesclun, whole mint leaves, remaining teaspoon oil, and salt and pepper to taste. Divide lamb among toasts on plates, then spoon sauce over and top with greens.

1 1/4 pounds ground lamb
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil, plus more for brushing
4 ounces feta, drained and crumbled (3/4 cup)
7 ounces plain Greek yogurt (3/4 cup)
1 tomato (about 7 ounces), cored and coarsely chopped
4 brioche buns, preferably seeded, split
Rosemary Shoestring Fries, for serving

Steps:

  • Preheat grill to medium-high. Pluck parsley leaves and tender upper stems, discarding tough lower stems. Chop half of parsley (you should have about 1/2 cup packed). Gently fold half of chopped parsley into lamb just until evenly combined (do not overmix, or patties will be tough). Form into 4 patties slightly wider than buns, each about 1/2 inch thick. Season generously with salt and pepper; brush with oil.
  • Stir together cheese, yogurt, and remaining 1/4 cup chopped parsley; season with salt and pepper. In another bowl, stir together tomato, whole parsley leaves and tender stems, and oil; season with salt.
  • Brush grates with oil and grill patties, flipping once, until charred in places and cooked to desired doneness, 5 to 7 minutes for medium-rare; 9 to 11 minutes for medium. Transfer to a plate and let stand a few minutes. Meanwhile, grill split sides of buns just until charred in places, about 30 seconds.
  • Divide patties, yogurt-feta sauce, and tomato salad evenly among buns. Serve immediately, with fries.

1/4 cup fresh mint (chopped)
1/4 cup fresh dill (chopped)
1/2 cup Kalamata olives (chopped)

1/2 teaspoon pepper
4 burger buns
1 cup baby arugula
1/2 cup tzatziki sauce

Steps:

  • Prepare your grill for cooking over high direct heat.
  • In a medium bowl combine all the lamb burger patties ingredients together and mix everything together until everything is well incorporated. Divide the meat in 4 and form into burger patties.
  • Place the patties on the grill and cook for about 5 minutes per side. DO NOT press on the patties while cooking. 2 Minutes before the patties are done cooking, add the burger buns to the grill and grill them for about 30 seconds.
  • Remove everything from the grill and assemble the burgers. Start with adding some baby arugula to the bottom of the bun, then the burger patty, followed by a couple tbsp of tzatziki sauce, some crumbled feta cheese, tomato slices, cucumber slices and red onion slices. If you prefer you could add more tzatziki sauce to the top bun.
  • Serve immediately.

1 large yellow onion, finely minced (I pulse mine in the food processor several times)
2 tsp turmeric
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp sea salt

2 tbsp chopped parsley
5 hamburger buns
juice, 1/2 lemon
2 tbsp fresh mint, chopped

Steps:

  • Make the Mint-Yogurt Sauce first by combining all ingredients and setting aside to let flavours meld.
  • In a large bowl combine all ingredients for the burgers and using your hands mix until well-combined.

In her recipe she used a medium handful each of cilantro and mint, so I've guessed it about 1/3 of a cup, and a squeeze of lemon juice was estimated at about 3 tbs. since Zaar won't allow handfuls and squeezes as measurements.

1 tablespoon masala mixed spice

  • Preheat broiler. Place lamb patties on broiler rack and broil until cooked through, about 4 minutes per side.

1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano

1/4 cup finely chopped scallions, white and green parts
1/4 cup chopped cilantro
2 tablespoons chopped mint
1/2 teaspoon minced garlic (from 2 garlic cloves)
3 tablespoons extra-virgin olive oil, plus more if needed
1 large onion, sliced into 1/4-inch half-moons
Pita or other flatbread, for serving (optional)
3 tablespoons tahini
3 tablespoons lemon juice (from 1 medium lemon)
2 large garlic cloves, finely grated
Pinch of ground cayenne
1 1/2 cups plain whole-milk yogurt
Kosher salt

Steps:

  • Put lamb in a medium bowl. Add 1 teaspoon salt, some black pepper, the cumin, coriander, oregano, cinnamon, scallions, cilantro, mint and garlic. Mix well with wet hands, kneading the mixture to distribute seasoning. Cover and refrigerate for at least 1 hour so the seasoning penetrates. (Alternatively, season meat and refrigerate overnight.)
  • Make the sauce: In a small bowl, put tahini, lemon juice, garlic and cayenne. Stir well to dissolve the tahini. Then stir in yogurt, and mix well. Taste and add salt, to taste.
  • Heat olive oil in a wide skillet over medium-high. When oil is wavy, add onions and cook, stirring frequently, until they are crisp and well browned, edging toward burned, about 10 to 12 minutes. Lower heat if browning too quickly. Add a little more oil, if pan looks dry. Season lightly with salt. Transfer to a plate lined with paper towels.
  • Light a charcoal grill for a medium hot bed of coals. (Alternatively, use a medium-hot gas or electric grill, a cast-iron pan or griddle, or a broiler.)
  • With wet hands, knead lamb mixture once more, then form into 4 (8-ounce) oval patties (or 6 5-ounce patties), about 1-inch thick. Set aside until the fire is ready. Place the grill about 1 inch from the coals.
  • Cook patties about 4 minutes per side for medium-rare, 130 degrees. After flipping, cook until red juices appear on the top of the patties. For medium, 140 degrees, cook longer, about 5 minutes per side. In either case, let them rest on a warm plate for 5 minutes before serving, to keep in juices. They will continue cooking a bit as they rest.
  • Top each burger with fried onions. Serve with tahini-yogurt sauce and warm pita, if desired.
