1 cup extra-virgin olive oil
1 large onion, chopped
1 tablespoon minced garlic
Six 12- to 16-ounce lamb shanks
1 cup red wine
1 tablespoon salt
1 tablespoon ground black pepper
1 teaspoon sugar
6 to 7 whole cloves
2 bay leaves
1 to 2 cinnamon sticks
2 fresh tomatoes, peeled and crushed
1 cup tomato puree
1 tablespoon tomato paste

Steps:

  • Heat olive oil in a large saute pan over medium heat. Add the onion and garlic and cook until golden brown, 4 to 5 minutes. Add the lamb shanks and sear until browned, 5 to 7 minutes. Add the red wine, salt and pepper, sugar, cloves, bay leaves and cinnamon sticks. Stir all the ingredients together. Add the fresh tomatoes, tomato puree, tomato paste and 2 cups water. Stir well. Cover and let simmer on medium-low heat until the lamb is tender, 2 to 2 1/2 hours.

These are very tasty, and make for an easy main meal to prepare. Try serving them with mashed potatoes, peas and pumpkin.

3 eggs
3 teaspoons Worcestershire sauce
12 (5.5 ounce) lamb chops
2 cups dry bread crumbs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, combine the eggs and the Worcestershire sauce; stir well. Dip each lamb chop in the sauce and then lightly dredge in the bread crumbs. Then arrange them in a 9x13-inch baking dish.
  • Bake at 375 degrees F (190 degrees C) for 20 minutes, turn chops over, and cook for 20 more minutes, or to desired doneness.

2 lbs leg of lamb
6 feta cubes (1 inch)
12 small onions, peeled
6 pieces kefalotiri (1 inch cubes)
6 small carrots, cut lingthwise
6 stalks celery & leaves
6 medium potatoes, peeled, halved and parboiled
1 lemon, juice of
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Cut lamb in 4 to 5 inch servings. Place each piece on a square of heavy-duty foil. arrange on each piece of lamb on each of 2 onions,cheese, carrots, celery and potatoes.
  • Sprinkle small amount of lemon juice on each serving. Sprinkle with salt and pepper.
  • Foil like a package to seal in all of the flavor.
  • Arrange packages close together in baking pan. Bake for 2 hours and 30 minutes.
  • Serve a foil package to each person.
