GREEK MINT AND LAMB BURGERS WITH CUCUMBER YOGURT SAUCE

Greek Mint and Lamb Burgers with Cucumber Yogurt Sauce image

These simple and juicy Lamb Burgers are flavor packed with Greek spices, and have delicious flavors of mint making them perfect way to enjoy summer grilled Greek dinner at home! I served lamb burgers with layers of cucumber and Greek Yogurt Sauce, sweet roasted red peppers, peppery arugula with brioche burgers buns... for a lamb lover, these flavors are mouthwatering experience!Specially when flavor-packed Greek burgers are cooking on the grill, as far as the aroma of grilling goes... people can tell someone is cooking authentic Greek-style food at home!I can tell you, these will be the BEST Greek Lamb Burgers you have ever cooked at home! Not just a simply, scrumptious, and 25 minutes recipe.... I'm also sharing a secret to make lamb patties extra-moist and juicy. Do you always think, only cooking at right temperature keeps meat moist?! In my honest opinion, ingredients paired with meat also play an important role in keeping meat moist and juicy while cooking.Ingredients for these burgers are still easy to find in any spice-lover's pantry. In fact, you will be surprised that you always had moist-juicy-lamb-secret-ingredient sitting in the pantry! So let's talk lamb burgers today!I hope you enjoyed long weekend? I had a nice long break and even missed Monday's recipe on blog. Or I should say, I wanted you to enjoy Mango Cheesecake a little longer. :)For us, past weekend was all about cooking-at-home. And lamb was on the menu, twice. I mostly cook chicken or fish for summer dinner and meats are generally in weekend menu. Often Vishal is in-charge of grill and he loves simple black pepper and salt seasoned lamb patties for Sunday lunch/dinner. Whenever it is more than salt-pepper, we switch roles and I'm the in-charge. :) I had this recipe in mind for quite sometime.. So, on weekend I told Vishal, "I'm cooking Lamb Burgers today!"Flavor and spices used for Greek Lamb Burgers are very close to Indian flavors. Like cumin, garlic, onion, and mint are very often used in Indian ground lamb kababs and so are in Mediterranean cuisine. If you are fan of either of these two cuisines, you should invest in keeping some cumin, coriander and oregano in your pantry. When we were shopping to cook lamb burgers for lunch... Vishal shared with butcher about our plans of grilling Greek-style burgers. Where he was impressed with my combination of flavors: lamb burgers with mint, roasted peppers and brioche buns..... He suggested us to add one more ingredient in lamb patties to help in binding, keeping meat extra moist and juicy. That ingredient is Milk Powder. I was really surprised but I did try it in these burgers. I must say, I'm so impressed with the results. Ground lamb meat, even though I bought 85-15 instead of regular 80-20 , came out super moist, tender and there was no sweetness of milk any where. score!Milk Powder?! Really? I bet you will have some in your pantry?! Add some to lamb burgers, friends!!Other than assembling ingredients, these lamb burgers come together super fast and with just 10 minutes prep, these are even easy to serve for dinner. You enjoy Lamb burgers and now, I get up to make something delicious for you for Wednesday!!Have a great day! -Savita

Time 25m

Number Of Ingredients 22

1.5 lbs Lamb, ground, 85-15
1-2 Shallot Onions, small onions, small chopped
3 tbsp Powdered Milk
2 Garlic, cloves, minced
1 tsp Oregano
1/2 tsp Chili Flakes
1 tsp Cumin Powder
1/2 tsp Garlic Powder
1 tsp Salt
4 tbsp Mint, handful of fresh leaves, chopped
3 tbsp Parsley, fresh leaves, chopped
1 Cup Yogurt, greek, thick yogurt
1 Cucumber, seedless such hothouse or english cucumber, small chopped
1 Lime, zest and juice of lime, adjust to taste
2 tbsp Mint, fresh leaves, chopped
2 tbsp Parsley, fresh leaves, chopped
1/2 tsp Cumin Powder
Salt and Black Pepper, to taste
3-4 Red Bell Pepper, roasted, thin sliced
Arugula
Red Onion
Burger Bun, prefer sweet hawaiian or brioche, for serving

Steps:

  • Cucumber Yogurt Sauce for lamb burgers: To make yogurt sauce, in a medium bowl combine, yogurt, cucumber, cumin powder, lime juice, mint, and parsley. Refrigerate until ready to use. Just before using, taste and adjust salt and black pepper.
  • Set the grill to preheat. Heat 1 tbsp oil in a small sauce pan. Add onion and fresh chopped garlic. Sweat until onions are soft. (2-3 minutes). For lamb burgers, in a wide bowl, add ground lamb, softened onions, all spices with mint, parsley and salt. Mix to combine and distribute all ingredients.

SPICED MIDDLE EASTERN LAMB PATTIES WITH PITA AND YOGURT

Spiced Middle Eastern Lamb Patties with Pita and Yogurt image

Whether you spell it kefta or köfte or kufte or some other variation, you can find versions of these lamb or beef meatballs throughout the Middle East. The seasoning mixture here is simple, with spices you should already have on your shelf and you can play around, adding fresh or dried mint, grated onion, or a pinch of cinnamon. And if you like a garlicky yogurt sauce, by all means, add a minced clove.

Yield Makes 4 to 6 pita sandwiches

Number Of Ingredients 14

Yogurt sauce:
1 cup plain full-fat or low-fat yogurt
2 tablespoons fresh lemon juice
2 tablespoons finely chopped herbs, such as mint, dill or cilantro, plus herb sprigs, for serving
Kosher salt
Patties and pita:
1 1/2 pounds ground lamb or beef
1 tablespoon minced garlic (about 1 large clove)
1 tablespoon coriander
2 teaspoons ground cumin
1 1/2 teaspoons hot paprika
11/2 teaspoons kosher salt
1 1/2 tablespoons extra-virgin olive oil
4 to 6 pita bread rounds

Steps:

  • For the sauce:
  • In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
  • For the patties and pita:
  • In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
  • Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
  • Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
  • Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
  • Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.

LAMB PATTIES WITH FRIED ONIONS AND TAHINI-YOGURT SAUCE

Lamb Patties With Fried Onions And Tahini-Yogurt Sauce image

Ground lamb makes a great alternative to a traditional burger, even when sprinkled with only salt and pepper or a little chopped parsley and garlic. These well-seasoned, simple-to-make patties are inspired by kofta, and are spiced with a fragrant mixture. You can season the meat up to a day ahead, which cuts down on kitchen time. Folded into warm pita bread, doused with tahini sauce and topped with fried onions, these burgers may not be standard cookout fare, but everyone loves them.

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 19

2 pounds ground lamb
Kosher salt and black pepper
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1/4 teaspoon ground cinnamon
1/4 cup finely chopped scallions, white and green parts
1/4 cup chopped cilantro
2 tablespoons chopped mint
1/2 teaspoon minced garlic (from 2 garlic cloves)
3 tablespoons extra-virgin olive oil, plus more if needed
1 large onion, sliced into 1/4-inch half-moons
Pita or other flatbread, for serving (optional)
3 tablespoons tahini
3 tablespoons lemon juice (from 1 medium lemon)
2 large garlic cloves, finely grated
Pinch of ground cayenne
1 1/2 cups plain whole-milk yogurt
Kosher salt

Steps:

  • Put lamb in a medium bowl. Add 1 teaspoon salt, some black pepper, the cumin, coriander, oregano, cinnamon, scallions, cilantro, mint and garlic. Mix well with wet hands, kneading the mixture to distribute seasoning. Cover and refrigerate for at least 1 hour so the seasoning penetrates. (Alternatively, season meat and refrigerate overnight.)
  • Make the sauce: In a small bowl, put tahini, lemon juice, garlic and cayenne. Stir well to dissolve the tahini. Then stir in yogurt, and mix well. Taste and add salt, to taste.
  • Heat olive oil in a wide skillet over medium-high. When oil is wavy, add onions and cook, stirring frequently, until they are crisp and well browned, edging toward burned, about 10 to 12 minutes. Lower heat if browning too quickly. Add a little more oil, if pan looks dry. Season lightly with salt. Transfer to a plate lined with paper towels.
  • Light a charcoal grill for a medium hot bed of coals. (Alternatively, use a medium-hot gas or electric grill, a cast-iron pan or griddle, or a broiler.)
  • With wet hands, knead lamb mixture once more, then form into 4 (8-ounce) oval patties (or 6 5-ounce patties), about 1-inch thick. Set aside until the fire is ready. Place the grill about 1 inch from the coals.
  • Cook patties about 4 minutes per side for medium-rare, 130 degrees. After flipping, cook until red juices appear on the top of the patties. For medium, 140 degrees, cook longer, about 5 minutes per side. In either case, let them rest on a warm plate for 5 minutes before serving, to keep in juices. They will continue cooking a bit as they rest.
  • Top each burger with fried onions. Serve with tahini-yogurt sauce and warm pita, if desired.

GRILLED LAMB BURGERS WITH YOGURT-FETA SAUCE

Grilled Lamb Burgers with Yogurt-Feta Sauce image

Parsley can be so much more than a garnish! Here, it adds fresh flavor to each component of these Greek-inspired lamb burgers: the patties, the yogurt-feta sauce, and the chopped tomato salad.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Lamb Recipes

Time 40m

Number Of Ingredients 9

1 bunch flat-leaf parsley
1 1/4 pounds ground lamb
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil, plus more for brushing
4 ounces feta, drained and crumbled (3/4 cup)
7 ounces plain Greek yogurt (3/4 cup)
1 tomato (about 7 ounces), cored and coarsely chopped
4 brioche buns, preferably seeded, split
Rosemary Shoestring Fries, for serving

Steps:

  • Preheat grill to medium-high. Pluck parsley leaves and tender upper stems, discarding tough lower stems. Chop half of parsley (you should have about 1/2 cup packed). Gently fold half of chopped parsley into lamb just until evenly combined (do not overmix, or patties will be tough). Form into 4 patties slightly wider than buns, each about 1/2 inch thick. Season generously with salt and pepper; brush with oil.
  • Stir together cheese, yogurt, and remaining 1/4 cup chopped parsley; season with salt and pepper. In another bowl, stir together tomato, whole parsley leaves and tender stems, and oil; season with salt.
  • Brush grates with oil and grill patties, flipping once, until charred in places and cooked to desired doneness, 5 to 7 minutes for medium-rare; 9 to 11 minutes for medium. Transfer to a plate and let stand a few minutes. Meanwhile, grill split sides of buns just until charred in places, about 30 seconds.
  • Divide patties, yogurt-feta sauce, and tomato salad evenly among buns. Serve immediately, with fries.
