Grilled Lamb Sausage with Goat Cheese, Heirloom Tomatoes, Olives and Herbs image

2 tablespoons aged sherry vinegar
1 tablespoon freshly squeezed lemon juice
1 tablespoon finely diced shallot
2 teaspoons Dijon mustard
1 teaspoon California clover honey
Kosher salt and freshly ground black pepper
1/3 cup California extra-virgin oil
1 pound fresh lamb sausages, such as Northern California lamb sausages
Canola oil, for brushing
4 medium heirloom tomatoes, cut into wedges
1/2 cup assorted black olives, pitted and halved
1/4 cup fresh parsley leaves, roughly chopped
1/4 cup whole toasted pistachios, chopped
8 ounces California soft goat cheese, cut into pieces
6 ounces baby mixed organic greens
1/2 small red onion, thinly sliced
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh tarragon

Steps:

  • For the vinaigrette: Whisk the vinegar, lemon juice, shallots, mustard and honey in a bowl. Sprinkle with salt and pepper. Slowly stir in the olive oil. Taste and season with salt and pepper.
  • For the salad: Heat the grill for direct grilling. Brush the sausages with canola oil and sprinkle with salt and pepper. Grill the sausages until golden brown on both sides and just cooked through, about 10 minutes. Remove and set aside for 5 minutes. Toss the tomatoes, olives, parsley, pistachios, cheese, greens, onions, basil and tarragon. Sprinkle with salt and pepper and some of the vinaigrette. Serve with the sausages.

Grilled Lamb Chops with Mustard Molasses Glaze image

1 cup molasses
1/4 cup Dijon mustard
1/4 cup balsamic vinegar
1 teaspoon ancho chile powder
2 cloves garlic, finely chopped
Eight lamb chops, (8 ounces each, 3/4 inch thick)
Olive oil
Salt and freshly ground black pepper

Steps:

  • For Mustard-Molasses Glaze: Mix together until combined.
  • For the lamb chops: Preheat the grill to medium heat. Brush each lamb chop on both sides with olive oil and season with salt and pepper to taste. Cook the chops on one side for 3 to 4 minutes, or until golden brown. Turn over and cook for 6 to 7 minutes for medium-rare doneness. During the last 2 minutes of cooking, brush the chops with the glaze on both sides.

DH and I made these lamb chops from my Bobby Flay "Boy Meets Grill" cookbook. We liked how fast and easy they were, requiring minimal prep. We used lamb loin chops. DH said next time we will use rib chops as he didn't think the loin chops needed all of the dressing up, though he agreed the glaze was very nice.

1 cup dark molasses
3 tablespoons Dijon mustard
2 tablespoons balsamic vinegar
1 tablespoon ancho chile powder
2 cloves garlic, finely chopped
8 rib lamb chops (each about 8 oz, 3/4 inch thick, can also use loin chops)
olive oil, for brushing the chops
kosher salt, to taste
freshly ground pepper, to taste
molasses-mustard glaze

Steps:

  • For the glaze: In a small bowl, mix all of the glaze ingredients together until combined.
  • For the lamb chops: Preheat a gas or charcoal grill to medium.
  • Brush each lamb chop on both sides with olive oil and season with salt and pepper. Cook until golden brown, 3 to 4 minutes. Turn over and cook an additional 3 to 4 minutes for medium rare. During the last 2 minutes of cooking, brush the chops on both sides with the Molasses-Mustard Glaze.

"MEAT COUNTER" MIXED GRILL

1 1/2 pounds hot Italian sausage (6 to 7 links)
4 bone-in chicken breasts, each about 12 ounces, trimmed of excess fat
1 recipe Salsa Verde, recipe follows
2 racks lamb, each about 2 pounds, frenched and trimmed of excess fat
Extra-virgin olive oil
4 lemons, cut in 1/2 crosswise
Freshly ground black pepper
6 to 8 summer squashes, sliced 1/2-inch thick
4 slices (approximately 2 ounces) white bread
2 tablespoons Champagne vinegar
2 bunches Italian parsley, picked and cleaned
16 cornichons
1/4 cup capers, rinsed
4 to 5 anchovies
1 3/4 cups extra-virgin olive oil
Gray salt or course sea salt and freshly ground black pepper

Steps:

  • In a large saucepan of barely boiling salted water, cook the sausages for 3 minutes. Remove the pan from the heat and let the sausages cool in the liquid. Refrigerate.
  • Marinate the chicken. Spoon enough salsa verde over the chicken to coat evenly.
  • Marinate the lamb in the same fashion as the chicken. Let both meats marinate chilled in separate containers for about 8 hours.
  • Before grilling let the sausages, chicken, and lamb sit at room temperature for 20 to 30 minutes.
  • Preheat the grill to high. Clean the grate with a brass-bristle brush. Reduce the heat to medium.
  • Lightly coat the sausages with oil. Season the chicken on all sides with 2 teaspoons salt, pressing it into the meat. Season the racks of lamb on all sides with 2 teaspoons salt, pressing it into the meat. Season the cut side of the lemons with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Grill the chicken and lamb racks over direct medium heat until well browned on all sides, 6 to 8 minutes, turning occasionally. Move the chicken and lamb to indirect heat and continue to cook for 10 more minutes. Leaving the chicken and lamb rack to continue cooking over indirect heat, grill the sausages over direct medium heat for about 6 to 8 minutes. Move the sausages to indirect heat to finish cooking for 4 to 6 minutes. Season the summer squash with olive oil, salt and pepper, and grill over direct heat until caramelized and fully cooked. During the last few minutes of grilling, grill the lemons cut side down over direct medium heat until well browned, about 2 minutes.
  • Remove everything from the grill and let the rest at room temperature for 5 to 10 minutes. Cut the meats into serving-size pieces. Arrange on a large platter and garnish with the lemons and salsa verde.
  • Soak the slices of bread in 2 tablespoons vinegar for 1 minute. Using a food processor blend all ingredients together, taste for seasoning and adjust consistency if need be.

I always tell people that I want Bar Americain to feel French but taste American. This is a classic bistro or brasserie dish that you would find in Europe, and by making it my own, perhaps with a California Zinfandel wine and vinegar, I think we manage to do just that-feel French, taste American. This is an incredibly comforting dish capable of warming your whole being on a cold fall or winter's day. I like the spicy heat of merguez sausage in this dish, but you could certainly use another variety of lamb or even pork sausage if you so choose.

Number Of Ingredients 18

1/2 pound (1 1/2 cups) dried white beans, such as Great Northern or cannellini, or 2 (15 1/2-ounce) cans white beans
Kosher salt and freshly ground black pepper
8 links merguez sausage (about 1 pound)
4 tablespoons canola oil
3 shallots, finely diced
2 cloves garlic, finely chopped
2 red bell peppers, roasted, peeled, seeded, and diced (see page 250)
1/4 cup Zinfandel vinegar or other red wine vinegar
1/4 cup extra virgin olive oil
1/4 cup plus 1 tablespoon chopped fresh flat-leaf parsley
3 tablespoons chopped fresh mint leaves
2 teaspoons honey
Zinfandel Glaze (recipe follows)
1 (750-ml) bottle red Zinfandel
2 tablespoons honey
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
(makes about 3/4 cup)

Steps:

  • If using dried beans, cover them by at least 2 inches with cold water and let soak for at least 8 hours or overnight. Drain the beans, put them in a medium pot, and cover by 2 inches with cold water. Bring to a boil over high heat. Add 1 tablespoon salt, lower the heat to medium, cover the pot, and cook until tender, about 1 hour. Drain well if needed.
  • If using canned beans, drain them, rinse well in cold water, and drain again.
  • Heat a grill pan or sauté pan over high heat. Brush the sausage with 2 tablespoons of the canola oil and grill or sauté until golden brown on both sides and just cooked through, about 3 minutes per side. Transfer to a plate lined with paper towels.
  • Heat the remaining 2 tablespoons canola oil in a large sauté pan over medium heat, add the shallots and garlic, and cook until soft, about 3 minutes. Add the red pepper and cook for 1 minute.
  • Put the beans in a large bowl and add the shallot mixture, vinegar, olive oil, 1/4 cup of the parsley, 2 tablespoons of the mint, and the honey. Season with salt and pepper and stir gently to combine.
  • Divide the beans among 4 large dinner plates and top with the sausages. Drizzle with some of the Zinfandel glaze and garnish with the remaining 1 tablespoon chopped parsley and 1 tablespoon chopped mint
  • Put the wine in a medium nonreactive saucepan over high heat, bring to a boil, and cook, stirring occasionally, until thickened and reduced to about 1/2 cup, about 30 minutes.
  • Remove from the heat, stir in the honey, and let cool slightly. Whisk in the oil and season with salt and pepper. Keep warm.
