LAMB STEW WITH GREEN BEANS
This recipe is great made with either fresh or frozen green beans. If you use frozen use the French style beans. This is Greek stew that my mom always made while I was growing up and has now been handed down to my children. Enjoy!

Steps:
- Heat oil in a large pot over medium heat. Saute onion and celery until golden. Stir in lamb, and cook until evenly brown. Stir in tomato sauce and water. Reduce heat, and simmer for about 1 hour.
- Stir in green beans. Season with parsley, mint, dill, cinnamon, sugar, salt and pepper. Continue cooking until beans are tender.

RAGOUT OF LAMB AND SPRING VEGETABLES WITH FARRO
This elegant stew can be made up to the point that the farro goes in; cool, then cover and chill up to 2 days.

Steps:
- Tie together oregano, thyme, rosemary, and bay leaves with kitchen twine.
- Heat 1/4 cup oil in a large heavy pot over medium-high. Season lamb with salt and pepper. Working in batches, cook, turning occasionally, until browned, 12-15 minutes per batch. Transfer to a plate as you go.
- Add onions to pot and stir to coat. Season with salt and pepper and cook until starting to brown, about 4 minutes. Stir in garlic; cook 30 seconds before adding vinegar. Cook, scraping up browned bits, until syrupy, about 1 minute.
- Add wine, bring to a boil, and cook until reduced by about one-fourth, about 4 minutes. Add broth, lamb, and herb bundle. Bring to a boil, reduce heat, and simmer gently, partially covered, until lamb is tender, 75-85 minutes.
- Stir in farro and cook until nearly al dente, 15-20 minutes. Remove herb bundle; add turnips. Cook until farro is cooked through, turnips are tender, and lamb is almost falling apart, 30-40 minutes. Mix in asparagus and peas; cook until crisp-tender, 2 minutes. Add greens and stir to wilt. Season with salt and pepper. Serve drizzled with oil.
KALE, WHITE BEAN, AND FARRO STEW
This recipe is a spin on a classic Italian farro and bean soup, but heartier and with more vegetables! You can use chicken stock if you prefer. Garnish with Parmesan cheese.

Steps:
- Blend contents of 1 can cannellini beans with its liquid in a blender until pureed.
- Heat olive oil in a large pot over medium heat. Cook and stir celery, carrots, Spanish onion, and leek in hot oil until the onion is translucent, about 5 minutes; add garlic and continue cooking until fragrant, 1 to 2 minutes more.
- Stir farro into the vegetable mixture; add water, pureed cannellini beans, the drained cannellini beans, diced tomatoes, vegetable broth, zucchini, tomato paste, thyme, and red pepper flakes. Stir the mixture well and bring to a boil; reduce heat to medium-low, place a cover on the pot, and simmer until the farro is tender, 45 minutes to 1 hour.
- Stir kale, salt, and pepper into the stew. Add more water to the stew if needed to keep everything covered in liquid and continue cooking until the kale is bright green and fully tender, about 30 minutes more.

GREEN BEAN STEW (ARABIC RECIPE)
This recipe is delicious and very tasty. This dish is best served hot with plain rice. Green beans has plenty of nutrients, a good source of Vitamin A, also an excellent source of Vitamin C, Vitamin K and Manganese.

- Wash green beans and trim off stems. Cut in half and rinse in cold water.
- Saute lamb meat stew, onions, garlic, salt and spices in olive oil or vegetable oil(stirring occasionally) until meat is brown.
- Add 2 cups of water, green beans, chopped tomatoes or 28 oz. can of diced tomatoes. and cook on medium heat for about 10 minutes. cover and simmer on low heat for around 45 minutes or until green beans are tender.
- This meal is best when served hot with plain rice.
LEBANESE LAMB AND BEAN STEW

- Cover beans with cold water by 3 inches in a bowl and soak at room temperature at least 8 hours. Drain well in a colander.
- Bring lamb, baharat, and water (9 cups) to a boil in a 6- to 8-quart heavy pot, then vigorously simmer mixture, covered, until meat is almost tender, 1 1/4 to 1 1/2 hours. Add beans and cook, uncovered, until beans are tender, about 1 hour more. Meanwhile, heat oil over moderate heat in a 12-inch heavy skillet until hot but not smoking, then cook onions, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper, stirring, until onions are pale golden and tender, 8 to 10 minutes. Stir in tomato paste and cook, stirring, 2 minutes. When beans are tender, stir in tomato-onion mixture and simmer until just heated through, about 5 minutes. Stir in remaining 1 1/2 teaspoons salt and 1/2 teaspoon black pepper.

ARNI ME FASSOLAKIA: GREEK LAMB STEW WITH GREEN BEANS
Steps:
- Gather the ingredients.
- In a large Dutch oven or soup pot, heat the olive oil over medium heat; sauté the lamb pieces and chopped onion until well browned.
- Add the water, tomatoes, tomato sauce, and 1 teaspoon of salt.
- Bring to a boil, cover, and simmer for 45 minutes, until the meat is tender.
- Add the beans, potatoes, mint , dill, parsley, cinnamon, and the remaining teaspoon of salt.
- Return to a boil, cover, and simmer for 30 minutes. Add more water during cooking if the stew looks dry.
- Remove from the heat and let the stew sit, covered, for 10 to 15 minutes before serving.

LAMB AND GREEN BEAN STEW WITH SPELT (FARRO)
This is a "Cooking Light" recipe that uses spelt (also called farro). While I haven't tried this one yet, I'm currently on a search for good recipes that use old grains and this one sounds good!

Steps:
- Heat a large pan with cooking spray over medium high heat.
- Put the lamb in and cook for 5 minutes making sure to brown it on all sides.
- Add the onion and garlic and saute for 8 minutes, stirring frequently.
- Add the wine and scrape the pan to loosen the browned bits.
- Add the water and all the rest of the ingredients except the basil.
- Bring it all to a boil.
- Reduce the heat and simmer for 1.
- 5 hours or until the lamb is tender.
- Discard the bay leaf and put the stew into bowls.
- Sprinkle each serving with basil.

- Wash and sort the beans, picking out any off looking ones. Place them in a large pot, cover with 48 ounces of water, bring to a boil for three minutes, remove from the heat and let them sit for at least an hour. Drain the water and set the beans aside.
- While the beans are resting, finely dice the carrots, celery, and onion. Mince the garlic, rosemary, and thyme.
- Make the seasoned flour by mixing the coriander, a 1/2 tsp of salt, a 1/2 tsp of pepper and the flour together. Make sure the stew meat is cut into bite sized pieces.
- Place the lamb in a large colander in the sink, dump in the seasoned flour, and stir the lamb until all the pieces are evenly coated with flour. Notice how all the extra flour is sitting in the sink, pretty nice huh.
