Seasoning: flour, salt, pepper, mustard powder and brown sugar
1 onion
1/2 pint/ 1 cup apple juice
1 cup chicken stock
2 TBS dijon mustard
1/4 cup white wine
2 TBS calvados (optional)
1/2 cup cream or sour cream
1 apple peeled and sliced
Steps:
Toss the pork in the seasoning and brown in olive oil, place in oven dish with apple juice, stock, wine and mustard (and calvados if desired). Saute onion and apple, add to pork. Cook for 40 minutes on 350 degrees F. Remove from oven, add cream and return to oven for 10 minutes or a little longer if too thin. Serve over rice

NOTE - my mom cooks the pork on the stove in a pot. After salt/peppering the pork, I think she browns all sides of the loin and then turns down to low and cooks for 2-3 hours - with a little water or broth in the bottom of the pan.
