Steps:
- Preheat oven to 475 degrees F (245 degrees C).
- In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
- Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.

- Preheat oven to 450 degrees F (230 degrees C).
- In a large plastic bag, combine the soup mix, red potatoes and olive oil. Close bag, and shake until potatoes are fully covered.
- Pour potatoes into a medium baking dish; bake 40 minutes in the preheated oven, stirring occasionally.

DUTCH OVEN POTATOES

- Preheat the oven to 300 degrees F. Use a 8 by 8-inch baking dish or one of similar size, and butter the bottom and sides with 1 tablespoon butter. Wash potatoes and thinly slice them, using a mandolin, to approximately 1/16-inch thick. Layer 1/5 of the sliced potatoes into the baking dish, making 2 thin layers of potatoes overlapping. Sprinkle with 2 teaspoons of the Parmesan cheese. Top with 1/2-cup fruit, salt, pepper and 1/2 cup cream. Repeat this step 4 more times, ending with the potatoes. Top the potatoes with the remaining cream and the 3 tablespoons of the butter cut into small pieces. Sprinkle with the rest of the cheese.
- Cover the pan with foil and bake for 2 hours. Uncover the pan and bake for an additional 15 minutes until lightly browned the top. For a darker brown place the potatoes under the broiler for a few minutes. Remove the potatoes from the oven and let them sit for 15 minutes before serving. Cut into squares with a sharp knife.

- Pre-heat oven to 400°F.
- Peel cooked potatoes and dice into 1-inch cubes.
- Place in a oblong baking dish coated with non-stick cooking spray. Sprinkle with green onion, Italian herbs, salt and pepper. Mix gently with fork to distribute ingredients.
- Pour broth over potatoes and sprinkle with paprika.
- Bake on upper shelf of oven. Stir every 15 minutes until browned, about 45 minutes. NOTE: Add more broth if potatoes start to dry out too fast. (but don't get them TOO wet).
- Place under broiler to complete browning. Garnish with parsley or basil and serve.

- Preheat the oven to 475ºF. Place the olive oil, garlic and rosemary in a large microwave safe bowl and cover with a large heavy plate or plastic wrap. Place in the microwave and cook on high for 1 minute. While the oil is heating up, peel the potatoes and cut them into 10 wedges each.
- Once the potatoes are cut and the oil is heated, take bowl out of the microwave and carefully spoon about 5 tablespoons of the oil onto a rimmed baking sheet, leaving as much garlic and rosemary in the bowl (don’t worry if some gets onto the baking sheet). Tilt the pan left and right to spread the oil all over the bottom of the pan.
- Place the potato wedges in the bowl with the remaining oil, garlic and rosemary. Toss gently to coat, then cover again with the large plate. Cook in the microwave for 3 minutes, gently stir and toss potatoes, and return to the microwave to cook for an additional 2-3 minutes, or until the edges of the potato wedges start looking a little translucent.
- Once the potatoes are done, sprinkle the cornstarch, salt and pepper over the potatoes and gently stir to coat.
