- Heat a large pot over medium heat. Add 1/4 cup oil, onion, celery, and bacon. Cook and stir until bacon fat renders and onion is translucent, about 5 minutes. Add potatoes and clam juice. Increase heat to medium-high and bring to a boil. Cook until potatoes are fork-tender, 15 to 20 minutes. Add clams and cook for 10 minutes more.
- Meanwhile, combine 1/4 cup oil and flour in a separate saucepan over medium heat. Stir until paste-like and light golden brown, 3 to 5 minutes. Gradually whisk in almond milk; cook and stir until mixture becomes a thick slurry, 6 to 7 minutes more.
- Stir slurry into the chowder to thicken it. Season with salt and pepper. Serve hot.

A delicious corn chowder discovered by accident. I ran out of milk and only had nondairy creamer, which is lactose free.

Steps:
- In a 3 quart pot over high heat, combine the potatoes with enough water to cover. Boil for one hour, adding water to cover potatoes as necessary. Add the celery, leeks and scallions and boil for another hour.
- Reduce heat to low, add the corn and parsley and heat through. Add the non-dairy creamer just before serving. Enjoy!

- Add the olive oil to a large stockpot or dutch oven set over medium heat. When hot, add in the onion and cook for about 2 to 3 minutes, until it starts to soften. Add in the garlic and cook for 30 seconds, until fragrant.

- Place all the ingredients that need cooking into a large stock pot and bring to a boil. Cook with a vented lid for about 15 minutes at a steady, medium boil.
- While that cooks, place all blending ingredients into a blender and blend until totally smooth. Note that if you don't have a high-powered blender, you may end up having a small amount of texture in the cashew cream. It's not bad, just a texture difference worth noting. Your chowder will just have more texture from the nuts.
- When the cooking ingredients are cooked through (the potatoes are totally cooked and soft), remove from heat and stir in the cashew cream.
- Season the chowder with salt and pepper as needed and serve garnished with fresh, sliced, green onions.
