An easy to make oatmeal lactation cookie recipe.

1/2 cup coconut oil
3/4 cup brown sugar
1 egg
1 tsp vanilla
2 tbsp milled flaxseed
3 tbsp water
1 cup whole wheat flour
2 tbsp brewer's yeast
1 tsp cinnamon
1/2 tsp salt
1 1/2 cups oats
1/2 cup raisins
2 tbsp whole flaxseed (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit
  • In a mixing bowl, mix the coconut oil and sugar until soft. Add the egg and vanilla and mix.
  • Combine the milled flaxseed and water in a separate bowl and then add to the mixing bowl.
  • Add the flour, brewer's yeast, cinnamon and salt to the mixing bowl and mix again.
  • By hand, mix in the oats, raisins and whole flaxseed.
  • Scoop out the batter onto a baking tray lined with parchment paper. Flatten the cookies slightly. Recipe will make 12 cookies.
  • Bake for 12 minutes.

2 tablespoons flax meal
1/4 cup coconut milk1
2 cups all-purpose flour
1/4 cup Brewer's Yeast
1/3 cup collagen peptides2
2 1/2 cups old fashioned oatmeal3
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup unsalted butter (room temperature)
1/2 cup coconut oil
1/2 cup granulated sugar
1 cup light brown sugar
3 large egg yolks4
1 teaspoon vanilla extract
1 cup shredded coconut5
1 1/2 cups chocolate chips

Steps:

  • In a small bowl, combine the flax meal and coconut milk and allow to sit for 5 minutes while you prep the other ingredients.
  • In a large bowl, mix together the flour, Brewer's yeast, collagen peptides, oatmeal, baking soda, baking powder, and salt. Set aside.
  • In a separate large bowl or stand mixer fitted with a paddle attachment, cream together the butter, coconut oil, and sugars until light and fluffy, about 3 minutes.
  • Add the flax meal and coconut milk to the butter mixture and mix until combined, scraping down the sides as needed.
  • Add the egg yolks and vanilla to the butter mixture and beat just until incorporated.
  • Add the dry ingredients in two separate additions, mixing the dough after each addition and scraping down the sides if needed.
  • Fold in the coconut and chocolate chips.
  • Measure the cookie dough out into 1/4 cup portions and rolls the dough between your palms to make balls.
  • Place the balls in an airtight container and chill the dough for at least 2 hours before baking for best consistency.
  • When you're ready to bake the cookies lace the balls of chilled dough at least 3 inches apart on the cookies sheet.
  • Preheat the oven to 350°F and bake for 13 to 16 minutes, the edges should be golden brown and the tops should be lightly golden. Remove from oven and allow the cookies to cool on the pan for a few minutes before transferring to a cooling rack to finish cooling.
  • Bake off the remaining dough or store in an airtight container in the fridge or freezer. See notes regarding extra dough.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix flaxseed with water in small bowl and let soak for 5 minutes.
  • Beat butter, white sugar, and brown sugar together in a large mixing bowl until creamy. Add egg yolks and vanilla extract; beat to incorporate. Stir flax seed mixture into the butter mixture.
  • Mix flour, brewer's yeast, wheat germ, baking soda, salt, and cream of tartar in a separate bowl; add to butter mixture and stir until just combined. Fold oats and chocolate chips into the dough.
  • Roll dough into walnut-sized balls and place 2 inches apart onto a baking sheet.
  • Bake in the preheated oven until the edges are golden, 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

3 tablespoons flax seed meal
1/3 cup water
1 cup butter, room temperature (or coconut oil in it's solid state)
1 cup light brown sugar
1/2 cup granulated sugar
3 egg yolks
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon kosher salt
1/4 cup Brewer's Yeast or Nutritional Yeast
2 cups unbleached all purpose flour
2 1/2 cups Old Fashioned Oats
1 1/2 cups chocolate chips
1/2 cups chopped walnuts
1/2 cup unsweetened flaked coconut
3/4 cup raisins

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • Mix flax seed meal with water in a small bowl and let stand for 5 minutes. Mixture will get thick and gelatinous.
  • In the bowl of your stand mixer fitted with the paddle attachment mix the butter, brown sugar, and granulated sugar for 2 minutes on medium speed. Add in the flax mixture, egg yolks, vanilla, baking soda, salt, and yeast. Mix until combined and smooth, scraping the sides of the bowl as necessary.
  • Turn the mixer to low and add in the flour, mixing until just incorporated. With mixer still on low add in the oats until just combined.
  • Stir in the chocolate chips, walnuts, coconut, and raisins until evenly distributed.
  • Using a medium (2- tablespoon) sized cookie scoop, portion the dough out and place on prepared cookie sheet 2- inches apart.
  • Bake for 9-10 minutes, or until the edges are golden.
  • Transfer to a wire rack to cool completely.

¼ cup flaxseed meal
½ cup water
1 cup coconut sugar
1/3 cup coconut oil, melted and cooled
1 teaspoon vanilla extract
1 2/3 cups oat flour, gluten free if desired*
¾ cup old fashioned rolled oats, gluten free if desired
¼ cup brewer's yeast** (get the debittered kind if possible)
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
2/3 cup dark chocolate chips, dairy free if desired
Maldon sea salt, for sprinkling the tops of the cookies

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a medium bowl, mix together flaxseed meal and water; let it sit for 5 minutes while you get all your other ingredients ready.
  • After 5 minutes the 'flaxegg' will be ready and you can add in the coconut sugar, melted and cooled coconut oil, and vanilla extract to the bowl; whisk together until smooth and well combined.
  • Next add in the oat flour, rolled oats, brewer's yeast, baking soda, cinnamon and salt. Mix until well combined. Fold in chocolate chips.
  • Use a medium cookie scoop and place dough on a prepared baking sheet, about 2 inches apart. You should get about 20 cookies. If you want thicker cookies, leave as is. If you want slightly thinner cookies, very gently push ONLY the top of the cookie down a bit. Don't over flatten.
  • Bake cookies for 10-13 minutes until edges are just slightly golden brown around the edges. Once cookies come out of the oven, sprinkle the tops with fancy sea salt.
  • Allow cookies to cool on the baking sheet for 10-15 minutes before removing and transferring to a wire rack to finish cooling. Leaving them on the baking sheet will help them settle up, harden and hold together. Makes 20 cookies.

3 cups quick-cooking oats
1 cup chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat sugar, butter, and shortening together in a bowl using an electric mixer until creamy. Add water, egg, and vanilla extract and mix well. Add flour, flaxseed meal, cocoa powder, yeast, salt, and baking soda. Mix well. Fold oats, chocolate chips, and walnuts into the dough.
  • Drop dough by rounded teaspoonfuls about 2 inches apart on ungreased baking sheets.
  • Bake in the preheated oven until edges are golden, about 12 minutes. Let cool for 5 minutes; transfer to a wire rack to cool completely.

  • In a large bowl, whisk together the oats, flour, yeast, flaxseed, baking powder, soda, cinnamon and salt.
  • In the bowl of your electric mixer, beat the butter and coconut oil on medium speed until creamy. Add in the sugar and beat on medium to high speed until fluffy, about 4 to 5 minutes, scraping down the sides of the bowl if needed. Add in the egg and egg yolk, beating until combined, about 2 to 3 minutes. Add in the vanilla extract and beat until combined again. Gradually add in the dry ingredients, beating on low speed until just combined and mixed. Stir in the chocolate chips with a spatula until they are evenly dispersed.
  • Scoop the dough into 1-inch rounds (I use an ice cream scoop so they are fairly uniform in size) and place on a baking sheet about 2 inches apart. Bake for 10 to 14 minutes, or until the bottoms are just golden. Let cool completely before storing in a sealed container.
