HAMBURGER CHOP SUEY



Hamburger Chop Suey image

This easy chop suey-style recipe is made with ground beef and vegetables and served over rice. Great way to make a quick meal!

Number Of Ingredients 12

1 large onion, sliced
1 1/2 pound ground beef
3 tablespoons cornstarch
1/2 cup cold water
2 beef bouillon cubes
1 1/2 tablespoon hot water
5 stalks celery, thinly sliced
1/2 teaspoon brown sugar
3 teaspoons soy sauce
1/2 teaspoon black pepper
1 can (12 ounce size) bean sprouts, drained
cooked rice or chinese noodles, optional

Steps:

  • Heat a large skillet over medium-high heat. Add the onion and ground beef. Cook, stirring frequently, until browned. Drain off any excess grease. In a small bowl, combine the cornstarch and cold water and stir until smooth. Set aside. Combine the bouillon cubes and hot water in a small bowl and mix until dissolved. Add the mixture to the skillet along with the celery and pepper. Mix well, cover the skillet, reduce the heat to a simmer and let cook for 10 minutes. Add the brown sugar, soy sauce, and cornstarch mixture to the skillet. Cook, stirring frequently, until the sauce thickens. Stir in the bean sprouts. Cook, stirring gently, for 1-2 minutes or until the bean sprouts are heated through. Serve hot with white rice or chinese noodles, if desired.

This is a simple dish from the La Choy Simple Classics - Best Recipes #23 cookbook. My husband and I both enjoy it with either white or brown rice.

3 tablespoons reduced sodium soy sauce
1 tablespoon cornstarch
1 lb lean top sirloin steak, sliced across the grain into thin strips
1/2 cup peanut oil
1 tablespoon fresh gingerroot, grated
1 tablespoon minced garlic clove
4 cups broccoli florets
3 tablespoons oyster sauce
1 tablespoon dry sherry
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon sesame oil
1 (8 ounce) can la choy water chestnuts, drained

Steps:

  • In large bowl, mix together soy sauce and cornstarch. Add meat and toss to coat. Let meat marinate for 30 minutes.
  • In a large wok (or dutch oven), brown meat quickly in 1/4 cup Peanut oil until it loses its red color. Remove from pan; set aside; and discard extra oil.
  • Add remaining 1/4 cup of oil and saute ginger root and garlic over high heat. Add broccoli to pan (stirring constantly) and cook until just tender. Blend in oyster sauce, sherry, red pepper and sesame oil and cook 1-2 minutes longer.
  • Add water chestnuts and reserved meat; mix so that everything is blended.
  • Serve immediately.

1 lb round steak, 1 inch thick, cut across grain into thin strips
1 small onion, sliced
2 tablespoons peanut oil
1/2 cup beef broth
8 ounces fresh mushrooms, sliced (canned may be substituted)
1 tablespoon cornstarch
1/4 cup reduced sodium soy sauce
1 tablespoon cold water
1 (8 ounce) can bamboo shoots, drained
1 (8 ounce) can sliced water chestnuts, drained
1 (11 ounce) can mandarin oranges, drained (or 1 16-oz can sliced peaches, drained)
2 (5 ounce) cans chow mein noodles

Steps:

  • In wok or skillet, cook beef and onion in oil until meat browns; about 5 minutes.
  • Add beef broth and mushrooms, cooking 5 minutes more.
  • Combine cornstarch, soy sauce and water. Stir into meat mixture. Cook, stirring constantly, until thickened.
  • Stir in vegetables and fruit. Heat until hot.
  • Serve immediately with chow mein noodles.

This is the fast and easy chop suey recipe that my mother always made, and we love it 'as is', but you could substitute a can of Chinese mixed vegetables for the bean sprouts if you like more color and texture. Serve over hot rice, topped with chow mein noodles and soy sauce, if desired.

¼ cup shortening
1 ½ cups diced pork loin
1 cup diced onion
1 cup diced celery
1 cup hot water
1 teaspoon salt
⅛ teaspoon ground black pepper
1 (14.5 ounce) can bean sprouts, drained and rinsed
⅓ cup cold water
2 tablespoons cornstarch
2 teaspoons soy sauce
1 teaspoon white sugar

Steps:

  • Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.
  • In a small bowl combine the cold water, cornstarch, soy sauce and sugar. Mix together and add to skillet mixture. Cook for 5 minutes, or until thickened to taste.
