These Norwegian Klubb Dumplings are so tasty, filling, and a great way to celebrate Scandinavia. Whether it is a holiday tradition or a weeknight meal, these dumplings are worth the effort.

4 potatoes, peeled and shredded
3 cups flour
1 teaspoon salt
1 egg
Approximately 4 ounces ham or other cooked pork cut into 8-12 cubes
5 Tablespoons melted butter
Salt and pepper to taste

Steps:

  • Bring large pot of salted water to hard simmer
  • While water is warming, grate potatoes and put in big bowl
  • Add flour, egg, and salt to the bowl
  • Mix and knead until firm. Add more flour if necessary to bring to stiff bread dough consistency
  • Wrap dough around one cube of ham. Each dumpling should be the size of a large meatball and you should get 8-12 dumplings.
  • Drop dumpling into simmering water and allow to cook for 45 minutes, making sure dumpling does not stick to the bottom of the pot.
  • remove with a slotted spoon and serve with butter, salt, and pepper

This is a traditional Norwegian main dish. My grandmother always served it with fresh peas. As good as the potato klubb are the first day, they're even better the second day sliced and fried in butter until golden brown. We like to have them for breakfast with fried eggs.

2 cups all-purpose flour
½ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon ground black pepper
4 cups potatoes, peeled and grated
2 tablespoons grated onion
8 ounces cooked ham, cut into 1 inch cubes
2 teaspoons salt
1 cup melted butter

Steps:

  • Mix the flour, 1/2 teaspoon salt, baking powder, and pepper together in a bowl. Place the potatoes and onion in a large bowl, and stir in the flour mixture until thoroughly blended. Use floured hands to knead the potato mixture in the bowl until it takes on the quality of stiff bread dough. Add additional flour if the dough is too sticky.
  • Pinch off a tennis ball-sized piece of dough and shape it around a cube of ham, completely covering the ham, to form a ball. Repeat with remaining dough and ham cubes. Set aside any extra ham.
  • Fill a large pot with water, add 2 teaspoons salt and any extra ham, and bring to a boil over medium-high heat. Carefully slide the balls into the boiling water, a few at a time. Loosen any sticking to the bottom of the pot. Simmer for 45 minutes to 1 hour. Remove with a slotted spoon, and drain on a plate. Serve hot with melted butter.

A Norwegian potato dumpling. This was a recipe my Grandfather used to make on family gatherings. I still enjoy making it for my own family. It's comfort food to me. I use a chunk of ham about the size of a grapefruit, I'm not sure of the exact weight. This is a great use for leftover Ham.

1 beef bones or 1 turkey wings
3/4 lb beef or 3/4 lb turkey
1 tablespoon salt
4 cups grated potatoes, approximately
1 tablespoon salt
4 -5 cups flour

Steps:

  • Prepare stock by boiling ham bone with 1 Tbs salt in large stock pot of water.
  • Peel and grate potatoes.
  • Add salt to grated potatoes and mix in flour with hands until no more can be added. Usually a little more than 4 cups.
  • Form balls the size of fist and push a small piece of ham into the center.
  • Remove Ham bone from stock.
  • Add balls to boiling stock being careful not to let balls stick to bottom of pot.
  • Boil softly for at least 1 hour.
  • Serve with salt, butter/margarine, or sour cream. Use leftovers for breakfast and serve with syrup or jam.

1 (5 pound) unsmoked bone-in ham
1 teaspoon salt, or to taste
5 pounds russet potatoes, peeled and shredded
4 cups all-purpose flour
1 ½ cups stone ground whole wheat flour
1 teaspoon baking powder
1 teaspoon salt, or to taste
3 slices bacon, cut into 1-inch square pieces
1 pinch salt and black pepper to taste

Steps:

  • Place the ham in a large soup pot (at least 10 quart size), and pour in 16 to 20 cups of water to cover. Bring the water to a boil, reduce heat, and simmer the ham to make a rich stock, about 2 hours. Remove the ham, and skim any foam off the broth. Stir in 1 teaspoon salt (or to taste) to broth, if necessary.
  • Place the potatoes in a large bowl, and use very wet hands to mix in the all-purpose flour, whole wheat flour, baking powder, and 1 teaspoon salt to make a sticky dough.
  • Bring the ham stock to a full, rolling boil. Place a bowl of water near the stove. With very wet hands, pinch off about 2/3 cup of dough, and press a piece of bacon into the center of the dough. Roll the dough into a ball about 2 1/2 inches across, and slip the kumla into the boiling broth along the side of the pot. Don't drop them into the middle of the broth to avoid splashing the hot broth. Repeat with the remaining dough, using the bowl of water to keep your hands very wet, until all the dumplings have been added to the broth.
  • Cover and simmer over low heat for about 15 minutes, then use a slotted spoon or spatula to gently lift any stuck dumplings from the bottom of the pot. Cover the pot again, and simmer the dumplings for about 1 hour. They will float to the top of the broth as they cook.
  • Gently lift the kumla from the broth with a slotted spoon, and stack them in a bowl for serving. Sprinkle with salt and pepper before serving.

Potato kneidlach are light, fluffy potato dumplings for Passover that are a wonderful gluten-free substitute for matzo balls. I have loved these ever since I first made them for a gluten-free friend in 2005. I based this recipe off of one from The Passover Gourmet by Nira Rousso. My dad e-mailed me Rousso's recipe for potato dumplings a few years ago and I used that as the basis for these. Leftover batter can also be fried into chewy potato pancakes, as well.

2 medium russet potatoes, peeled
2 tablespoons vegetable oil
2 eggs, beaten
1/3 cup potato starch, plus
1 tablespoon potato starch
1/2 teaspoon salt
1/4 teaspoon white pepper
1 tablespoon fresh dill, minced

Steps:

  • Cut potatoes into large chunks and boil in water until soft. Drain and allow to cool. Once cool, mash with oil, eggs, salt, pepper and dill.
  • Stir in potato starch until thoroughly combined, and refrigerate the mixture for 1 hour.
  • Bring soup or a pot of lightly salted water to a boil. Use your hands to gently form rough ball shapes from one tablespoon of batter at a time, and submerge dumplings in the soup or water - If you prefer, you may use a soup spoon or ice cream scoop to move free-form spoonfuls of batter into the pot. Boil for approximately 5-6 minutes - The dumplings will float up to the surface quickly but will need several additional minutes to cook all the way through.
  • Serve in soup, or as a side dish with butter or margarine and fried onions.

1 picnic ham
10 lb potatoes
1 large yellow onion
1 Tbsp salt
1 Tbsp baking powder
flour
butter

Steps:

  • 1. Cook picnic ham in water for 2 to 2 1/2 hours in large soup pot. Remove and place on a cutting board to cool. Keep ham broth in pot on stove to boil.
  • 2. Peel potatoes and grind in a meat grinder. Also grind the onion. Combine potatoes, onion, salt and baking powder. Add flour until the consistency is firm. Drop a small ball into the boiling broth. If it doesn't come apart you've added enough flour.
  • 3. Dice cooled ham into small bits. Stir into potato mixture.
  • 4. Roll generous tablespoons of potato mixture into balls. Drop into boiling ham broth. Boil for 20 minutes.
  • 5. Serve with butter.

  • Prepare mixture: Place grated potatoes in a large mixing bowl. Add eggs and mix with your hands (I find this is the easiest way given the thick, heavy batter). Add 1 cup of flour - and then keep adding flour until the potato mixture sticks together. This was about 2 cups when I made it.
  • Form into balls: Take about 1/2 cup of the potato mixture. Place piece of pork chop in the middle and form into a ball. Repeat until all of the potatoes have been used.
  • Cook dumplings: Bring a large pot of water to a boil. Add potato dumplings one at a time. Cook for 30 minutes in simmering water. At 30 minutes, take one dumpling out and test to see if the meat inside is cooked. If not, cook for a little longer. My batch took 30 minutes.
  • Serving: Serve hot, topped with melted butter, salt and pepper, and parsley and/or chopped green onion.
