- Combine the eggs and sugar in a mixing bowl, and mix well. Add the coconut milk, and stir in the flours. Strain the batter and let it rest for an hour. Preheat the KrumKake/Pizzelle maker according to the manufacturer's instructions. Set the color setting to number 3. Scoop 2 Tbsp of batter onto the mold, cover and bake until they are ready or light brown in color. Remove the biscuit and quickly fold in half, and half again and then press down lightly. Cool on the rack and store them in an airtight container.

Steps:
- Mix all the ingredients to make the kuih kapit batter till it's well mixed. Then prepare the kuih kapit moulds by oiling them with some kitchen towel dip in cooking oil. Heat the mould on the stove till it is warm. Then start cooking by pouring the mixed batter in moulds. Cook on low heat till golden brown. Once cooked quickly take them off the heat and fold it quick. I find that the folded version is much easier to handle than the rolled version. For the rolled version just roll it using a chopstick.

- Sift rice and plain flour into a mixing bowl. Add in sugar and slowly add the coconut milk. Stir until smooth then add the eggs and egg yolks. Whisk until well blended. Strain the batter.
- Lightly grease love letter moulds with a piece of muslin cloth dipped in oil. Heat mould over charcoal fire.
- When heated, place the moulds open over a bowl of batter and pour a ladelful of batter onto the mould. Close the mould tightly and bake over charcoal fire for about half a minute on each side.
- When golden in colour, remove and immediately fold into a quarter. Press lightly with a tin cover to level the surface.
