POTATO KUGEL
Take a healthy hashbrown, plump it up with more potatoes and a few eggs, and slowly bake it for a couple hours and you'll get this potato kugel. Its crunchy top gives way to a super-soft, almost mashed-potato center, and the soft aroma of onion will fill your kitchen.

- Heat the oven to 350, with a heavy 9-by-9-inch baking pan or 10-inch cast-iron skillet inside.
- Peel the potatoes, and place them in a bowl of water. In a large mixing bowl, beat the eggs with the salt and pepper until well combined.
- Using a food processor fitted with the grating plate, grate the onion. Drain the potatoes, then grate them. Quickly add the potatoes and onions to the eggs, and add the oil, flour and baking powder. Mix well. (You can also grate by hand; if you do so, grate the potatoes directly into the eggs and oil, and stir them frequently to coat. This helps slow their browning while you keep grating.)
- Remove the pan from the oven, and slick it with oil. Carefully but quickly add the potato mixture, smoothing it out so that it is as even as possible. Bake for 2 hours, or until the kugel is creamy in the center and the whole top is a rich, crunchy brown.

This is a Lithuanian Ethnic dish. The main ingredient is potatoes. The recipe comes from my fathers grandmother and has been a family favorite for more than 75 years. Serve hot as a main dish with either sour cream or applesauce.

- Preheat oven to 450 degrees F (230 degrees C). Oil a 12x15 inch pan with olive oil.
- Place salt pork in a large, deep skillet over medium heat. Cook until evenly brown, stirring occasionally. Stir in 1 chopped onion, and continue cooking until onion is tender and lightly browned; set aside.
- Meanwhile, in a large bowl, combine potatoes and remaining chopped onions. Fill the bowl of a food processor with the mixture, and 1 egg. Process until smooth, then transfer to a large bowl. Repeat until all has been processed. Season with pepper. Stir in the salt pork mixture. Blend in flour gradually to absorb some moisture, but err on the side of less flour.
- Bake in the preheated oven for 25 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking for 1 hour, or until top is evenly browned.

LITHUANIAN KUGELA (POTATO, ONION AND BACON CASSEROLE)
Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Grease a 9x13 inch baking dish.
- In a large skillet over medium heat, fry bacon pieces until crisp; remove to paper towels.
- Reserve half of bacon drippings, and set aside.
- Return skillet to stove; stir onions, and cook until soft and translucent.
- In a large bowl, stir together reserved drippings, bacon, onion, and potatoes.
- Mix in flour, evaporated milk, and eggs.
- Season with salt and pepper to taste.
- Pour into baking dish, and bake in a preheated oven until top is nicely brown, about 1 hour.
- Cut into squares, and serve with sour cream.

- Combine the brown sugar, flour, cinnamon, and salt in a medium bowl. Using your fingers, mix until no lumps of brown sugar remain. Rub in the butter with your fingertips until the mixture has a clumpy, crumbly texture. Refrigerate until ready to use.
- Preheat the oven to 325°F and set an oven rack in the middle position. Butter a 9 x 13-inch baking dish.
- Bring a large pot of unsalted water to a boil. Cook the noodles for 6 to 8 minutes, or according to package instructions, until tender. Drain well.
- In a large bowl, whisk the eggs. Add the sour cream and softened cream cheese and whisk to combine. Add the half & half, sugar, salt, vanilla, and cinnamon, and whisk until completely smooth.
- Spread the cooked noodles evenly in the prepared baking dish. Pour the custard mixture evenly over top. Cover the dish tightly with aluminum foil and bake for 35 minutes. Remove and discard the foil. The custard should be just set. Sprinkle the streusel topping evenly over the top, making sure to cover all the noodles. Bake for 35 to 40 minutes more, until the streusel topping is crisp. Let cool for about 20 minutes, then cut into squares and serve.
- Make Ahead: The kugel and topping can be assembled and stored separately in the fridge up to a day ahead of time, and then baked before serving. (The kugel with the streusel topping may also be fully cooked a day ahead of time and reheated, however the texture will be denser than if baked fresh. To reheat, cover with foil and place in a 325°F oven for 25 minutes; remove and discard the foil, and continue baking for 20 to 25 minutes more, or until warm throughout and crisp on top.)

- Preheat the oven to 350 degrees F. Butter a 10 by 13 by 2 1/4-inch baking dish.
- Drizzle some oil into a large pot of boiling salted water. Cook the noodles for 6 to 8 minutes, until tender. Drain.

- Preheat the oven to 350°F. Butter a 9 by 13-inch baking pan.
- Combine the raisins and the orange juice and set aside to soak. Cook the noodles according to the package directions.
- Whisk together the orange zest, eggs, cottage cheese, sour cream, milk, sugar, cinnamon, vanilla, and salt in a medium-size bowl. Add the plumped raisins and up to 1 tablespoon of any remaining juice.

A dollop of sour cream on top of each piece is a great topping.

- 1. Cook bacon until crispy. Set aside to cool and let the bacon fat cool as well. When bacon is cool, chop finely in food processor.
- 2. Pre-heat oven to 400 degrees. Beat eggs, milk, salt and pepper as well as the reserved bacon fat. Add bacon and mix well.
- 3. Peeled potatoes should be shredded as the last step to keep them from turning color. Shred onion with the potato. Mix potatoes/onion with the egg mixture completely and pour into a greased baking dish. (I used a 10 x 15.)
- 4. Bake and test for doneness at 1 hour. Like a cake, it will pull from the sides of the pan and a knife should come out clean.
- 5. Slice and serve with sour cream on top. This can also be sliced thin and fried with butter as a side with eggs for breakfast.

- 1. Cut bacon into small pieces and fry till almost crisp. Grate potatoes into a bowl, drain off all the liquid into a small bowl. NOW GRANDMAS TIP: Leave the above liquid to sit, then drain off just the clear liquid .Save the thick liquid at the bottom. Return this thick liquid to the bowl of grated potatoes.
- 2. Now add the eggs, and mix well, add the evaporated milk, salt and pepper, 1/2 cup milk and the grated onions. Mix well. Pour into a greased flat pan with sides. The height of potatoes in the pan should not be over 1-1/2 inches high. Bake in a pre-heated 350 oven for 1-1/2 hours.

KUGEL RECIPE
Steps:
- Preheat the oven to 350°F. While you're waiting, soak the raisins in hot water for 10 minutes then drain.
- Fill a big pot ¾ full of cold water and 1 tsp of kosher salt. Bring the water to a boil over high heat and cook noodles for 4 minutes. Drain the noodles well.
- In a large bowl, whisk the eggs and sugar for 2 minutes or until the sugar is dissolved. Add the sour cream, cottage cheese, cinnamon, ⅛ tsp of kosher salt, and vanilla. Whisk to combine. Add the melted butter then whisk again to combine. Add the noodles into the bowl then gently toss to coat.
- Grease a 9x13 inch pan with unsalted butter. Pour the noodle mixture into the pan. Sprinkle the top of the kugel with brown sugar and cinnamon mixture, as needed.
