Found this recipe as in interesting contribution for my group to the Asian region cookbook during World Tour 4!

Number Of Ingredients 11

2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 cup whole milk
2 eggs, beaten
6 large bananas, ripe, peeled
1 pinch salt
2 tablespoons granulated sugar
1/4 cup powdered sugar (more or less)
1 lemon, juice of
2 tablespoons vegetable oil (more or less)

Steps:

  • In large bowl, whisk together flour, cinnamon & baking powder.
  • Make well in center & add HALF the milk & HALF the eggs, beating until batter is smooth. Then add remaining milk & eggs, stirring thoroughly.
  • In separate bowl, mash bananas with salt & sugar.
  • Stir banana mixture into batter.
  • Sprinkle waxed or parchment paper with powdered sugar & set aside.
  • Heat some oil in skillet over high heat, then drain off any excess oil & drop in enough batter to make a pancake 5-7 inches in diameter.
  • Cook on each side until golden, working in batches if needed.
  • When a pancake is done, place on sugared parchment paper & sprinkle with extra cinnamon & powdered sugar. Add a little lemon juice to each pancake, then fold into quarters & serve hot.

500 ml milk
500 g flour
30 g sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla
3 eggs

Steps:

  • In a medium mixing bowl, stir together flour, sugar, baking powder, salt, and cinnamon. Make a well in the centre of the dry mixture and set aside.
  • In a second medium mixing bowl, combine the eggs and milk. Add egg mixture all at once to the dry mixture. Stir until just moistened. (Batter should be lumpy).
  • For standard-size pancakes, pour about 60ml (1/4 cup) of batter onto a hot, lightly greased griddle or non-stick pan. Cook over medium heat about 2 minutes on each side, or until pancakes brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.
  • Serve immediately with fresh fruit, maple syrup, and a knob of butter!

1 1/3 cups all-purpose flour
4 1/2 teaspoons brown sugar
1 1/4 teaspoons baking powder
1 teaspoon ground cinnamon
2 eggs
1 cup milk
2 tablespoons butter

Steps:

  • Combine flour, brown sugar, baking powder and cinnamon.
  • Combine eggs, milk and butter, stir into dry ingredients just until combined.
  • Pour batter by 1/3 cupfuls onto a lightly greased hot griddle.
  • Sprinkle with additional cinnamon (if desired).
  • Turn when bubbles form on top of pancakes.

I always love these after a good Chinese... never tried making them myself, but now I definitely will!

4 bananas, cut into big pieces
2 eggs, whisked
10 g flour
6 g cornflour
10 g custard powder
20 g oil (for frying)
500 g caster sugar
15 g sesame seeds

Steps:

  • Prepare a batter by mixing together egg, flour, cornflour, custard powder and a little water (to make a runny batter).
  • Heat oil in a wok, dip the banana pieces in the batter and deep fry.
  • Remove, drain excess oil and keep aside.
  • In a separate pot, cook the castor sugar along with water and oil till it turns golden in colour.
  • Dip the friend banana pieces in the sugar syrup to coat evenly.
  • Remove drain excess syrup and keep aside.
  • Sprinkle sesame sees on top and dip in ice water for a few minutes.
  • Remove and serve.
