Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 15

2 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 large wide loaf French bread (not baguette), halved lengthwise and quartered into 8 small slices
8 slices Swiss cheese
4 to 6 slices deli-style ham
5 to 6 ounces thinly sliced pork (roast, chop or pulled)
Quick Garlic Pickles, recipe follows
4 tablespoons butter, softened
1 large cucumber, peeled and sliced thinly
1/4 cup white vinegar
3 tablespoons chopped onion
1 tablespoon salt
1 tablespoon sugar
1 teaspoon red pepper flakes
3 cloves garlic, minced

Steps:

  • Mix the mayonnaise and mustard in a small bowl and spread evenly on the inside of the bread slices. Layer on half of the cheese, the ham, pork, Quick Garlic Pickles and the remaining cheese. Cover with another slice of bread and butter the outside (top and bottom) of the sandwich.
  • Heat a cast-iron skillet to medium-high heat and place the sandwiches in the pan. Top with a second cast-iron skillet to weigh the sandwiches down. After 2 minutes, turn down the heat to medium low, flip the sandwiches and weigh down again with the second skillet. Check the sandwiches after 1 more minute, and remove when golden brown and the cheese has melted.
  • Ingredients and Directions
  • Place the cucumber slices in a medium bowl. Heat 3/4 cup water in a small saucepan with the vinegar, onions, salt, sugar, red pepper flakes and garlic, and bring to a boil over medium-high heat. CUBAN BREAD AUTHENTIC PAN CUBANO RECIPE

Cuban Bread Authentic Pan Cubano Recipe image

Anyone who has ever been to the South Florida-Miami area may be familiar with the classic Cuban Sandwich. These sandwiches, piled high with cold cuts and cheeses, can only be made authentically with the use of Cuban Bread. Whether you want to make a Cuban Sandwich or you just need a delicious loaf of bread to accompany your dinner, this recipe for Cuban Bread will hit the spot.

Provided by April Freeman

Time 12h25m

Number Of Ingredients 11

1/2 cup Warm Water
1/2 teaspoon Yeast
1/2 cup Flour
3/4 cup Warm Water
1 tbsp Sugar
1 package Instant Yeast
1 tbsp Salt
3 tbsp Lard
2 1/4 cups Flour
1 tbsp Cornmeal
1 pc Water (in a spray bottle)

Steps:

  • To create the starter, combine the warm water and the yeast.
  • Set it aside for about 15 minutes and then check the bowl.
  • The mixture should be foamy and bubbly. If it's not, your yeast is not fresh, so try again with fresh yeast.
  • If the yeast is alive, stir in the flour. Cover it loosely with plastic wrap and set it aside overnight.
  • The next morning, the starter should be bubbly and slightly risen. Set it aside while you prep the rest of the ingredients.
  • Use the remainder of the package of yeast and combine it in a clean bowl with the sugar.
  • Stir in the warm water and let it sit for about 15 minutes to check the yeast for freshness. When the time has passed, the yeast mixture should be bubbly and foamy.
  • Melt the lard and add it to the bowl, along with the salt and one cup of the flour.
  • Mix it well to form a sticky, wet dough.
  • Add the starter from last night along with another cup and a half of the flour.
  • Stir well. The dough should start to form a ball. You should have about a half cup of flour left for kneading.
  • Turn the dough out onto a lightly floured surface and knead in some of the remaining flour.
  • You should knead this dough for at least 20 minutes to get the texture right. If you don't want to knead by hand, feel free to use a stand mixer with a dough hook.
  • When you are done kneading, the dough should be a ball that is smooth, shiny, and elastic.
  • Coat a large mixing bowl with cooking oil and place the dough ball in the bowl, turning it to coat.
  • Cover the dough ball with a clean dish towel and allow the dough to rise in a warm place for at least two hours or until it is doubled in size.
  • Grease a large baking sheet with a rim and sprinkle cornmeal all over it.
  • Punch down the dough and transfer it to a lightly floured surface.
  • Divide the dough in half.
  • Shape each half into a long rectangular loaf that is about a half-inch thick and twelve to eighteen inches long.
  • You can use a rolling pin if you like. Roll the dough from the long side to form a very skinny, rolled loaf.
  • Place the loaf on one of the prepared pans and repeat with the remaining piece of dough.
  • Cover the loaves with clean dish towels and allow them to rise for about 60 to 90 minutes.
  • Preheat the oven to 400 degrees.
  • Cut a slit in the top of the loaves by running a sharp knife or razor blade lengthwise down the loaf of bread.
  • Lightly spray the loaves of bread with water.
  • Place the loaves in the oven and bake for about 20 to 25 minutes, misting every 10 minutes with water.
  • Remove from the oven and allow the bread loaves to cool for about twenty minutes before slicing.
  • Cuban bread dries out very quickly. If you can't eat it all within a day, freeze the bread, tightly wrapped in aluminum foil, for up to a month.

KUBBE

Kubbe image

This is a traditional Middle Eastern appetizer. It is torpedo-shaped, crispy on the outside, and has a meat and onion filling. Time-consuming, but delicious. Can be frozen raw, and fried straight from the freezer for a delicious treat, dipped in Tahini. This recipe has been in the family for ages.

Provided by Cindy

Categories     Appetizers and Snacks     Meat and Poultry     Beef

Time 1h30m

Yield 25

Number Of Ingredients 15

3 cups fine bulgur
2 cups all-purpose flour
6 tablespoons vegetable oil
1 tablespoon crushed red pepper flakes, or to taste
2 tablespoons coarse kosher salt, or to taste
1 tablespoon ground cumin, or to taste
1 cup water, or as needed
3 tablespoons vegetable oil
2 large onions, finely chopped
1 ½ pounds ground beef
½ teaspoon ground allspice
½ teaspoon coarse salt
½ teaspoon ground cinnamon
½ cup pine nuts
3 cups oil for frying, or as needed

Steps:

  • Place bulgur in a large bowl. Stir in the flour, 6 tablespoons of vegetable oil, red pepper flakes, salt, and cumin. Gradually mix in the cup of water to make a stiff but not crumbly dough. Knead for a few minutes to fully bind the ingredients. If it is too mushy, let it sit for a while, and the bulgur will absorb some of the water.
  • For the filling: Heat 3 tablespoons of oil in a large skillet over medium-high heat. Add onions and cook until browned. Remove from the skillet. Crumble the ground beef into the skillet, and cook until evenly browned, stirring frequently. Drain excess grease. Season with allspice, salt, and cinnamon, and stir in the cooked onions and pine nuts. Allow to cool enough to handle.
  • Form the dough into walnut-sized balls. Press your thumb into the ball while it is enclosed in your other hand to form a tube. The cylinder should be about 2 inches long, and the thinner the walls are, the better they will cook. Fill the cavity with as much of the meat mixture as you can, then seal the end to form a torpedo shape. Repeat with remaining dough and filling. At this point, the kubbe may be frozen. Freeze on baking sheets, then transfer to freezer bags when solid.
  • Heat oil in a deep fryer or heavy saucepan to 375 degrees F (190 degrees C). If the oil is not hot enough, the kubbe will fall apart. Carefully place the kubbe into the hot oil, and fry until nicely browned, about 1 minute. Remove with tongs to paper towels to drain. Serve with tahini.

  • Arroz con Pollo (Spanish kenken and Rice): A traditional dish if there ever was one, this one-pot delicacy combines the incredible flavors of saffron and cumin to give the rice that golden hue.
  • Cuban Sandwich: This classic 'wich requires five key ingredients: ham, roasted pork, Swiss cheese, pickles and mustard. And, of course, Cuban bread. When you're pressed for time, go for a deli-style honey ham like in this easy recipe, which takes just 10 minutes to make.
  • Fried Sweet Plantains: These can (and should!) be served as a side dish with virtually any and every Cuban dish. All you need are ripe plantains and some fearlessness when it comes to frying them up.
  • Picadillo (Cuban-Style): The next time you see a ground beef sale at the supermarket, grab some to make this dish filled with extras like potatoes, raisins, olives and tomatoes.
  • Yuca con Mojo (Cuban Style Yuca): This side is often served around the holidays and is great for BBQs. Prep ahead of time and bring extra mojo sauce for dipping — or coating on your favorite ready-for-the-grill meat.
  • Lechon Asado (Cuban Mojo Marinated Pork): Make extras of this delectable pork dish to serve in your Cuban sandwich or to add to your quinoa salad for an easy lunch later in the week.
  • Sofrito Salsa & Tostones: Made with green plantains instead of yellow, these double fried tostones topped with a fresh salsa make perfect appetizers.
  • Cuban Pumpkin Flan: Dessert doesn’t get any better than this creamy and delicious concoction full of traditional fall flavors. It’s much easier to make than you ever imagined, and you won’t be able to resist the DIY caramel after trying your hand at this recipe.
  • Fricasé de Pollo (Cuban-Style Chicken Stew): This dish is perfect for make-ahead meals. Although it’s traditionally prepared with russet potatoes, try using a seasonal starch like sweet potato or summer squash for an added boost of flavor.
  • Papas Rellenas (Cuban Potato Balls): Snack time has never been happier than with these potato balls that are — surprise! — stuffed with a picadillo-like meat mixture.

  • Picadillo. Picadillo is a rich and flavorful ground beef Cuban dish perfect for when you're in the mood for something hearty. This Cuban recipe starts by browning beef with cumin, onion, garlic, bay leaf and oregano.
  • Ropa Vieja. We can't talk Cuban food without mentioning the national dish, ropa vieja. Spanish for "old clothes", this Cuban recipe tastes like anything but seconds.
  • Papas Rellenas. What's tastier to snack on than meat-filled potato balls?! The balls are stuffed with picadillo and are deep-fried to create a crispy and crunchy coating.
  • Cubanos. This isn't just a ham and cheese sandwich, it's a Cuban sandwich. Like all things Cuban, even their sandwiches are bursting with flavor. To make one right, do what this recipe does and spread butter on a soft baguette then grill it.
  • Arroz Con Pollo. Even a typical Cuban recipe with chicken and rice is bursting with flavor. And, it can all be made in one pot! With a list of ingredients a mile long, it may be intimidating to make this recipe at first.
  • Frijoles Negros (Black Beans) In Cuba, you'll find black beans often accompany every dish and this is the recipe that does it right. To start, black beans are cooked with bay leaves until they reach a tender consistency.
  • Cuban Mojo Shrimp. Mojo criollo is a traditional Cuban marinade that can be used on a variety of meats, but tastes especially fresh when paired with succulent shrimp.
  • Yuca con Mojo. Another Cuban mojo favorite is smothering it on yuca. Not to be confused with yucca, yuca is the root of the cassava plant. Its flavor is similar to that of a potato and a staple side dish in Cuban cooking.
  • Croquetas de jamon (Ham Croquettes) Flavorful bite-size bechamel fritters which are loaded with ham are perfect appetizers! Get the recipe here.
  • Maduros (Fried Sweet Plantains) Breakfast, lunch, dinner or dessert, fried plantains are a Cuban recipe staple. They make a great side dish alongside black beans and rice and are tasty when sprinkled with some sugar.
