1 (7 ounce) can refrigerated bread dough
cooking spray
3/4 cup grated gruyere cheese
8 ounces lump crabmeat, shell pieces removed and drained
1/2 cup chopped onion
4 cups coarsely chopped spinach
dried tarragon
1/8 teaspoon Old Bay Seasoning
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1 cup evaporated skim milk
1/2 cup egg substitute
cherry tomatoes, quartered (optional)

Steps:

  • Unroll dough, separating into strips.
  • Working on a flat surface, coil one strip of dough around itself in a spiral pattern.
  • Add second strip of dough to the end of the first strip, pinching ends together to seal; continue coiling dough.
  • Repeat procedure with remaining dough strips.
  • Cover dough with a towel; let rest 20 minutes.
  • Roll dough into a 13-inch circle; fit into a 9-inch pie plate coated with cooking spray.
  • Fold edges under; flute.
  • Sprinkle cheese over bottom of crust.
  • Top with crabmeat; set aside.
  • Preheat oven to 375 degrees F.
  • Coat a large nonstick skillet with cooking spray; place over medium-high heat.
  • Add onion; saute 4 minutes.
  • Add spinach and next 4 ingredients (spinach through pepper); cook 2 minutes or until spinach wilts.
  • Arrange spinach mixture over crabmeat.
  • Combine milk and egg substitute; stir well with a whisk.
  • Pour over spinach mixture.
  • Bake at 375 degrees F for 45 minutes or until a knife inserted in center comes out clean; let stand 10 minutes.
  • Garnish with cherry tomatoes, if desired.

1 9-inch frozen deep dish pie shell (thawed, unbaked)
5 large eggs
1 1/2 cups half and half cream (10% b.f.)
2 Tablespoons finely chopped fresh chives (plus whole chives for topping, or 1/2 tsp dried)
2 Tablespoons finely chopped fresh parsley (or 1/2 tsp dried)
2 Tablespoons finely chopped fresh cilantro (or 1/2 tsp dried, or omit and use more parsley)
1/4 teaspoon Old Bay seasoning (or substitute a pinch of celery salt and a pinch of paprika)
1/2 teaspoon fine salt
1/4 teaspoon black pepper
1/8 teaspoon nutmeg
1 cup Gruyere cheese (grated, or substitute Swiss or Emmental)
1/2 lb. lump crabmeat (canned or thawed if frozen, and picked over)

Steps:

  • Preheat oven to 375F. (not fan assisted) with rack in the centre of the oven.
  • In a large bowl, whisk together the eggs, cream, herbs and seasoning. Stir in grated cheese and crabmeat.
  • Pour the egg mixture into thawed, unbaked pie crust (you may have a tiny bit of filling that won't fit). Use a fork to gently distribute the crab and herbs evenly in the pan. Lay several whole chives across the top.
  • Bake quiche until filling puffs and is no longer wobbly in centre when quiche is gently shaken, about 40-45 minutes. Let cool 10 minutes before serving.

1 (9 inch) unbaked pie shell
1 (10 ounce) package frozen chopped spinach
1 (8 ounce) package Swiss cheese, diced
2 tablespoons all-purpose flour
1 cup nonfat milk
3 medium eggs
½ teaspoon salt
⅛ teaspoon ground black pepper
1 pinch ground nutmeg

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Prick pie shell with a fork.
  • Bake in the preheated oven until lightly golden, 6 to 8 minutes. Remove and let cool. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Bring a small pot of water to a boil. Add spinach and cook until heated through and dark green, about 5 minutes. Drain well and let cool.
  • Combine Swiss cheese and flour in a bag. Seal and shake until cheese is coated.
  • Whisk milk, eggs, salt, pepper, and nutmeg together in a large bowl. Stir in spinach and flour-coated Swiss cheese. Pour into the cooled pie shell.
  • Bake in the preheated oven until middle is set, 50 to 60 minutes. Cool slightly before slicing and serving.

1 recipe Traditional Pastry Piecrust dough for a 9-inch single-crust pie (page 5)
1/4 cup heavy cream (to glaze the crimped pie edges)
Filling
1/2 pound fresh lobster meat (if purchasing whole lobsters, about three 1-pound lobsters yield 1/2 pound of lobster meat)
1 cup shredded smoked gouda cheese
1/4 cup chopped scallions
3 large eggs
1/2 cup half-and-half
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425°F.
  • To prepare the pie shell, on a clean, lightly floured work surface, roll out half a ball of dough with a rolling pin until it forms a 10-inch circle. Wrap the remaining half of the dough tightly in plastic wrap and reserve it in the refrigerator for future use for up to 5 days. Fold the circle in half, place it in a 9-inch pie plate so that the edges of the circle drop over the rim, and unfold the dough to completely cover the pie plate. Brush the edges of the pie shell with heavy cream to create a perfect, golden brown finish. Keep the pie shell close by, as you will add ingredients one at a time.
  • To prepare the filling, sprinkle the fresh lobster meat evenly across the bottom of the pie shell. Evenly distribute the smoked gouda and scallions over the lobster meat.
  • In a medium bowl, using an electric mixer on medium speed, combine the eggs, half-and-half, salt, and pepper. Pour the egg mixture into the pie shell, covering the lobster, gouda, and scallions.
  • To bake, place the pie plate on a baking sheet and bake for 15 minutes. Reduce the heat to 350°F and continue baking for 40 minutes, or until the quiche is firm in the middle. Transfer the pie plate to a wire cooling rack and allow the quiche to cool and set for 15 minutes before serving.
  • Cooked Lobster Quiche can be stored in the refrigerator for up to 3 days. An uncooked quiche can be stored in the freezer for up to 2 months. To optimally keep quiche, put it in the freezer uncovered and let it freeze on a flat surface. Once the quiche has frozen, wrap it tightly in plastic wrap and return it to the freezer.
