CROATIAN POTATO "RESTANI KRUMPIR"



Croatian Potato

This is side dish we eat with sarma or stuffed green peppers or paprikas, goulash, or any dish during winter times where you have some kind of sauce. It is also very good with sauerkraut and sausages, blood sausages, sour turnip or similar food.

500 g potatoes
100 g onions (or one medium onion)
15 g lard (or oil but not olive oil or butter)
salt

Steps:

  • Do not peel potato, just wash the dirt and put it in cold water and cook until soft (about 1 hour).
  • In the meantime sauté sliced onion until soft or almost brownish. Peel cooked potato (carefully because it is hot) and slice it.
  • Add salt and into onion and lard and fry it just until potato starts to hold of the pot (up to 5 min). Serve hot.

NORTH CROATIAN GOULASH SOUP ("GULAS JUHA")



North Croatian Goulash Soup (

This meal can be served as a complete lunch meal, it is so nutritious. This is my grandmother's recipe, so it is from the beginning of 20th century.

200 g beef
30 g lard (or oil)
100 g onions
30 g carrots
30 g kohlrabi
30 g flour (all purpose)
1 tablespoon paprika (red, dry, sweet)
1/4 teaspoon paprika (red, dry, hot)
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon thyme
100 g potatoes
2 liters water

Steps:

  • Melt lard and sauté finely minced onion until become soft and transparent. Cut kohlrabi and carrot into small cubes and saute until slightely softens.
  • Slice beef into small (1 cm in diameter) pieces and add into the pot. Sauté beef in its own juices and after 5 to 10 minutes add red paprika (hot and sweet) salt and pepper. Stir well and add flour.
  • Sauté everything until flour starts to brown and add water (it is on you to decide to use all water or not). Add thyme.
  • Peel potato and cut into small pieces (1 cm in diameter) and add into the soup. Cook until potato and meat are soft or 90 minutes.

CROATIAN ZAGORJE POTATO SOUP



Croatian Zagorje Potato Soup image

This is soup of the poor peasants from Zagorje in Northern Croatia. This was the whole daily meal for families. Now, it becomes "a special gourmet soup" in restaurants all around Zagoje.

400 g potatoes
150 g pork ribs (dried, smoked)
50 g wild mushrooms
10 g lard
10 g flour
4 g red paprika (dried)
2 liters water
1 bay leaf
100 g sour cream
2 tablespoons dill (fresh, minced)

Steps:

  • Melt lard in a pot and add flour. Fry until become brownish and add paprika.
  • Pour cold water and make it creamy. Make soup removing eventual small flour clods.
  • Cut potato into small cubes and add into soup.
  • Chop mushrooms into leaves and add into soup.
  • Cut dried smoked pork ribs into small pieces and add into soup. You can also use smoked bacon if you do not have pork ribs.
  • Add bay leaf and season the soup.
  • Cook for 1,5 to 2 hours. When potato become soft just squash it a bit to make it more creamy.
  • At the end, before serving, add sour cream and dill.

CROATIAN FLOUR SOUP ("PREZGANA JUHA")



Croatian Flour Soup (

This is the simplest soup ever. I used to eat this soup during digestive problems as a diet soup. This is probably the soup prisoners used to eat, or soldiers, or just poor people. This is the recipe I use.

1 tablespoon flour
15 g lard (or oil)
4 g red paprika (dried)
5 g caraway seeds
salt
pepper
1 egg white (optional)
1 liter water
150 g bread (or 2-3 slices)
5 g lard

Steps:

  • Melt lard in a pot and put flour to fry. Wait until brownish, add paprika and water and make creamy liquid. Slowly add water mixing all the time.
  • Add caraway seeds, salt pepper and cook 30 minutes.
  • If you like you can put egg white into just before soup is done and mix well.
  • In the meantime cut bread slices into small cubes and fry it on lard until dry and crispy.
  • When serving, put bread in a plate with soup and eat it.
