2 tablespoons olive oil
2 large sweet onions, thinly sliced
3/4 teaspoon salt, divided
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
2 boneless skinless chicken breast halves (6 ounces each)
2 tablespoons lemon juice
1/4 teaspoon pepper
1/4 cup mayonnaise
1/3 cup finely chopped roasted sweet red peppers
8 slices sourdough bread
12 slices Swiss cheese
2 tablespoons butter, softened

Steps:

  • In a large skillet, heat oil over medium heat. Add onions and 1/4 teaspoon salt; cook and stir 6-8 minutes or until softened. Reduce heat to medium-low; cook 30-40 minutes or until deep golden brown, stirring occasionally. Stir in rosemary., Meanwhile, pound chicken with a meat mallet to 1/2-in. thickness. Drizzle with lemon juice; sprinkle with pepper and remaining salt. Grill, covered, over medium heat or broil 4 in. from heat 5-7 minutes on each side or until no longer pink. Cut into strips., In a small bowl, mix mayonnaise and red peppers. Spread half of the mayonnaise mixture over four slices of bread. Layer each with one slice of cheese, chicken, onions and two slices of cheese. Spread remaining mayonnaise mixture over remaining bread; place over top. Spread outsides of sandwiches with butter., Grill sandwiches, covered, over medium heat or broil 4 in. from heat until golden brown and cheese is melted, 2-3 minutes on each side.

Grilled cheese is a near-perfect food on its own, but adding bacon, kimchi or, in this case, heaps of caramelized onions really makes it special. Caramelizing onions takes a good half-hour, so save this recipe for when you have a little extra time and company (this recipe serves two). If time permits, you could even prep them ahead in a slow cooker. Rather than layer the grated Gruyère and the warm caramelized onions in the sandwich, you should stir them together before assembling, which guarantees that the cheese will melt evenly throughout and that each bite will contain the perfect ratio of fragrant cheese to jammy onions. A splash of sherry, red-wine or white-wine vinegar added to the onions balances out the buttery flavors, but a side salad dressed with a tangy mustard vinaigrette would do the trick, too.

1 pound yellow or Vidalia onions, peeled, halved and thinly sliced
Kosher salt and black pepper
2 teaspoons sherry, red-wine or white-wine vinegar (optional)
4 ounces Gruyère cheese, grated
4 slices bread, cut no wider than 1/2-inch thick

Steps:

  • In a large skillet over medium-high heat, melt 2 tablespoons butter. Add the onions and season with salt and pepper. Cover and cook, stirring once or twice, until the onions are softened, 3 to 5 minutes. Uncover, reduce the heat to medium-low, and cook, stirring occasionally, until deep golden brown, 20 to 25 minutes. If the onions look dry or like they might burn, add a few tablespoons of water at a time, scraping up any browned bits that are stuck to the bottom of the skillet. If desired, once the onions are done, deglaze the skillet with vinegar and cook until the liquid has evaporated, about 1 minute. Transfer the onions to a medium bowl and season to taste with salt and pepper. Wipe out the skillet, or wash it, if necessary.
  • Add the cheese to the onions and stir to combine. Put down two slices of bread, and scoop half of the cheese-onion mixture onto each one. Top with the remaining slices of bread, and press down gently.
  • In the skillet, melt 1 tablespoon butter over medium heat. Add the sandwiches and cook until the bottoms turn golden brown, 3 to 4 minutes, reducing the heat to prevent toast from darkening too quickly, if needed. Add the remaining 1 tablespoon butter, flip the sandwiches, press down and cook until the cheese has fully melted and the bottoms turn golden brown, 3 to 4 minutes. Serve immediately.

2 slices bread, your choice
2 -3 slices sweet onions, very thin slices (walla walla type, more if you wish)
2 -3 ounces of aged sharp cheddar cheese, sliced
butter or margarine, to spread
fresh ground pepper

Steps:

  • Toast bread slices fairly crisp.
  • Butter toast on both sides, lay cheese slices on toast, add onion slices over cheese, grind pepper over onions.
  • Lay more cheese slices over onion.
  • Place second piece of toast on top and squish down.
  • Place on a cookie sheet under oven broiler, about 5 or 6 inches from heat.
  • Turn over when that side is golden and the cheese has started to melt.
  • Leave under broiler until the second side is golden and the cheese is ooozing out of sides.
  • Place on a luncheon plate, cut in two and enjoy!

About a week ago I found a really good quality imported "extra mature farmhouse cheddar" cheese from the UK and decided to test it in this recipe which was recently featured on thekitchn.com. Use the best ingredients you can if at all possible: homemade bread and mayonnaise, etc. Q: I don't intend to step on any toes (especially British ones) but don't you think bacon/rashers would be delicious in this sandwich? A. yes. The bacon is optional of course. The husband discovered my secret stash of the farmhouse cheddar cheese and now most of it is gone! :/ Serving suggestion that we enjoyed with our sandwiches: Recipe #272915, hard boiled eggs and fresh fruit. I believe this is my first English recipe posted here but the fine English people have no cause for concern.

I've tried it with regular and the flavor just isn't the same. Hope you like it. Note: The cheese slices are based on the approximate size as the Kraft slices.

  • Put your onions in a medium/large skillet pan over medium heat. Cover and cook, only stirring occasionally, about 15 minutes. Add the oil and a pinch of salt and reduce the heat to medium low. Continue to cook, stirring occasionally, until the onions are caramelized to your liking. It can take 5 minutes or another 45 minutes, depending on how deeply caramelized you like them.
  • (Tip: if you like caramelized onions a lot, double or triple this batch so you have some extra to keep in the refrigerator. They taste great on everything!)
  • When your onions are ready, you are ready to make your sandwich. Start by buttering the outside of your bread pieces and adding a little butter to a skillet over medium heat. Add enough cheese to cover your bread slice, then add enough tomato slices to also cover the area of the bread. Top with half of the caramelized onions and the final piece of bread.
  • Place the sandwiches in the skillet and cook for about 2-3 minutes on one side. Carefully flip the sandwich and cook another 2-3 minutes. If your cheese is not melted (sometimes I slice my cheese a little too thick…) add about a tablespoon of water to the skillet, not too close to the sandwich so it gets your bread wet, and cover the skillet. The cheese should melt quickly. Enjoy!
