BONNIE'S KRISPY CARAMEL CREAM PIE
This is an delicious and easy dessert made from most things that you have in your pantry. We like the Kroger Caramel Delight ice cream with 64% less fat in this pie, but you can use whatever your family likes. Definitely company worthy. Enjoy!

- 1. MAKE THE CRUST FIRST You will need Rice Krispie Cereal, peanut butter (crunchy or smooth) and white Karo syrup.
- 2. Mix the crust ingredients together in a large bowl and stir gently to combine.
- 3. Divide the crust mixture into two pie pans. Dampen your fingers with water, and pat the crust evenly over the bottom of the pie pan and up the sides. Place the two shells in the freezer for about 15 minutes.
- 4. MAKE THE FILLING I use Kroger Caramel Delight ice cream. It is 64% less fat, and it is so delicious and creamy that you would never know it is lower in fat.
- 5. Using a large mixing bowl, add the peanut butter to the ice cream and fold it in. Work fast so the ice cream doesn't melt.
- 6. Spoon the ice cream into the chilled, prepared pie pans. Smooth the top and cover with Press and Seal wrap and place the pies in the freezer until firm, about an hour or two.
- 7. To serve, add a dollop of whipped cream if you wish. Enjoy!
KRISPY CREAM PIE
Great on those hot summer days. Note: When working with crust, dampen hands to prevent sticking. Drizzle with chocolate syrup before serving. Recipe makes two pies.

My great-grandma's ice cream pie includes a Rice Krispies® crust and peanut buttery chocolate topping. This recipe can be changed to accommodate different tastes by changing the flavor of ice cream. My cousin has tried several different ones and loves them all.

- Mix butter, 3 tablespoons corn syrup, and brown sugar together in a saucepan; bring to a boil. Remove from heat and stir in rice cereal. Transfer and press mixture into a 9-inch pie pan. Freeze until firm, 15 to 20 minutes.
- Stir peanut butter, 1/4 cup fudge sauce, and 1 teaspoon corn syrup together in a bowl. Spread half the peanut butter mixture onto the crust. Return to freezer until set, 10 to 15 minutes.
- Pour the remaining half of peanut butter mixture into the fudge sauce jar; stir well. Refrigerate peanut butter fudge sauce until firm, 10 to 15 minutes.
- Spoon and pack ice cream into crust; freeze until firm, 10 to 15 minutes.
- Pour peanut butter chocolate sauce into a microwave-safe bowl; heat in microwave until warm, 30 seconds to 1 minute. Serve alongside pie.

- In a large bowl, add in the Rice Krispies cereal. Set aside momentarily. In a medium saucepan, melt the salted butter and marshmallows together over low heat, stirring constantly, until melted and smooth. Pour the melted marshmallow mixture over the cereal and toss until totally combined. Pour the cereal into the prepared pan and, using a greased glass cup, press the cereal mixture into the pan, forming a base and sides. Put aside to set, about 20 minutes.
- While crust sets, make your filling. In a large bowl of a stand mixer, cream together the cream cheese, sugar and vanilla until smooth, about 1 minute. Beat in the marshmallow creme until smooth. Lastly, fold in the Cool Whip by hand until combined.
- Spread the filling mixture into the crust, smoothing out the top. Garnish with whipped cream piped along the perimeter of the cheesecake and top with stacked prepared & cubed Rice Krispy Treats in the center. Chill for at least 2 hours in the fridge before cutting into slices.
