1 cup light corn syrup
1 cup sugar
1 cup peanut butter
6 cups Kellogg's® Rice Krispies® cereal or Kellogg's® Cocoa Krispies™ cereal
1 cup semi-sweet chocolate morsels
1 cup butterscotch chips

Steps:

  • Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add Kellogg's® Rice Krispies® cereal. Stir until well coated. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.
  • Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm. Cut into 2 x 1-inch bars when cool.

1 cup light corn syrup
1 cup white sugar
1 ½ cups peanut butter
6 cups crisp rice cereal
½ cup semisweet chocolate chips
½ cup butterscotch chips

Steps:

  • Generously butter a 9x13 inch baking pan. Set aside.
  • In a large pot, mix together corn syrup, sugar, and peanut butter. Cook over medium heat, stirring until peanut butter melts. Bring mixture to a boil. Remove from heat, and stir in crisp rice cereal.
  • Transfer mixture into a well buttered 9x13 inch pan. With your hands well buttered, pat it down into pan.
  • In a medium saucepan, over medium low heat, melt chocolate chips and butterscotch chips until smooth. Spread over top of bars and let bars cool. Cut into squares.

Rice Krispies Scotcheroos are a no bake, 2 layered treat that is a favorite of all families. The bottom bar layer is a cookie made with sugar, corn syrup, peanut butter and Rice Krispies while the top layer is a combination of melted chocolate and butterscotch chips. With the help of the microwave, this entire recipe can be completed in 10 minutes or less!

1 cup white corn syrup
1 cup sugar
1 cup peanut butter
6 cups Rice Krispies
1 cup chocolate chips
1 cup butterscotch chips

Steps:

  • In a microwave-safe bowl, cook corn syrup, sugar and peanut butter for 5 minutes, stirring twice, around the 2 minute and 4 minute marks.
  • Stir in Rice Krispies; spread into a 9 x 13 inch pan that has been sprayed with nonstick cooking spray, and press down with your hands to distribute into an even layer.
  • In a second microwave-safe bowl, melt chocolate and butterscotch chips. Be sure to stir every 30 seconds to prevent the chips from burning. Once the chips begin to melt, stir until smooth.
  • Pour over Rice Krispies layer and spread into an even layer. Let sit until the chocolate hardens. Cut into bite-sized pieces.

6 tablespoons butter, softened
6 tablespoons butter-flavored shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
4 cups crisp rice cereal, divided
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butterscotch chips
TOPPING:
1/2 cup sugar
1/2 cup packed brown sugar

Steps:

  • In a large bowl, cream the butter, shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Crush 2 cups of cereal; add flour, baking soda and baking powder. Gradually add to the creamed mixture and mix well. Stir in butterscotch chips and remaining cereal. Combine topping ingredients in a small bowl. , Roll dough into 1-1/4-in. balls, then roll in topping. Place 2 in. apart on ungreased baking sheets; flatten slightly with glass. , Bake at 350° for 10-12 minutes or until golden brown. Cool for 1 minute before removing to wire racks.

1 cup sugar
1 cup light corn syrup
1 cup peanut butter
6 cups Rice Krispies
1/2 cup chocolate chips
1 1/2 cups butterscotch chips
butter (for greasing pan)

Steps:

  • In a large saucepan, combine sugar and corn syrup. Heat just until bubbly (Do not boil or the bars become a little hard).
  • Remove from heat and stir in peanut butter. Stir until well blended, then gently stir in cereal.
  • Press mixture lightly into buttered 9 x 13 pan.
  • Combine chocolate and butterscotch chips and melt in microwave or double boiler.
  • Immediately spread over bars in pan.
  • Refrigerate just until chocolate sets and hardens slightly.
  • Cut in squares. Makes 3 to 4 dozen bars.
