OKTOBERFEST KRAUT, SAUSAGE/SPARERIBS AND POTATOES



Oktoberfest Kraut, Sausage/Spareribs and Potatoes image

My dear husband has evolved this recipe over the years. He almost always makes it, but the other day he wrote it down since he was going to be home late and we had guests coming for dinner to have this very dish. I decided it needed to be shared since we have so many requests for it and after all, it's amost Oktoberfest time. We eat it at least twice monthly, and simply vary it a bit with the meat. This can also be made in the crockpot and cooked at least 4 hours on high and 4 hours on low. You may have to experiment since crockpots are different.

1 tablespoon olive oil
1 lb sausage, of your choice or 1 lb spareribs
1 lb high quality beef hot dogs or 1 lb hot dog
1 quart sauerkraut
1 large sweet onion, coarsely diced
1 (12 ounce) can beer (not light)
2 tablespoons brown sugar
1 (4 ounce) container apples, cauce diced or 1 small apple, diced
2 large russet potatoes, peeled and chunked
pepper
caraway seed (optional)
1 teaspoon minced garlic (optional)

Steps:

  • In a 5-6 quart heavy Dutch oven, add 1 tablespoon olive oil.
  • Brown sausages or ribs.
  • While they are browning, drain and rinse kraut at least twice to remove the excess salt.
  • Chop onion.
  • When sausages/ribs are browned, place them aside on Dutch oven lid.
  • FILL POT: Handful of kraut, add wieners, fil in with onions, add more kraut, add sausages, fill with remaining onion, and add last of kraut, all in layers.
  • Add contents of beer and 2 tablespoons brown sugar. The alcohol cooks away so don't worry, it does add a great deal to this recipe.
  • Add applesauce.
  • Add water to surface of kraut.
  • Liberally apply black pepper.
  • Add potatoes.
  • Bring to boil, cover tightly and simmer 3-4 hours (don't shorten the time, this is critical), checking periodically so it doesn't dry out.
  • Serve with sour cream or plain yogurt and a high quality mustard. I prefer Country Dijon or German, my DH prefers yellow. Either way, enjoy, my friends!

A great and super fast German dish with a sweet and sour flavor. Serve piping hot with your choice of sides.

1 (12 ounce) package pork sausage, halved and cut into 4-inch pieces
2 tablespoons vegetable oil butter spread
1 (32 ounce) jar sauerkraut, drained
1 teaspoon dried celery flakes
1 tablespoon dried minced onion
1 teaspoon caraway seeds
2 tablespoons brown sugar
ground black pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Grill the sausages on the preheated grill until browned, about 3 minutes on each side. Cut the cooked sausage into 1/2-inch slices.
  • While the sausage is grilling, melt the butter spread in a large skillet over medium-high heat. Stir in the sauerkraut, celery flakes, onion, caraway seeds, brown sugar, and pepper. Cook and stir until the sauerkraut begins to brown, about 10 minutes. Stir in the sausage slices. Serve hot.

This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

2 tablespoons canola oil
1 small onion, halved and sliced
1 pound smoked sausage, cut into 1/4-inch pieces

3 slices thick-cut bacon (4 1/2 ounces), cut into bite-size pieces
1/2 head green cabbage, cored and thinly sliced (6 cups)
4 medium carrots, peeled and coarsely grated (1 1/2 cups)
1 large onion, halved and thinly sliced (1 1/2 cups)
3/4 teaspoon caraway seeds
Coarse salt and freshly ground pepper
1/3 cup apple-cider vinegar
8 cooked sausages, such as bratwursts, knockwursts, and frankfurters
1/2 cup ketchup
1 tablespoon red curry paste
Mustard, such as whole-grain, for serving

Steps:

  • Cook bacon in a large straight-sided skillet over medium, stirring occasionally, until golden brown and fat is rendered, about 5 minutes. Add cabbage, carrots, onion, and caraway seeds; season with salt and pepper. Cover and cook, stirring occasionally, until vegetables are wilted and crisp-tender, about 15 minutes.
  • Stir in vinegar. Pierce each sausage a few times with a fork and nestle into cabbage mixture. Cover and cook until sausages are warmed through, about 5 minutes. Stir together ketchup and curry paste in a small bowl. Serve sausages and kraut with curry ketchup and mustard.

1 1-pound bag sauerkraut, rinsed
8 small fingerling or red-skinned potatoes, halved if large
1 tablespoon vegetable oil
12 ounces turkey kielbasa or chicken sausage, cut into 2-inch pieces
1 6-ounce boneless smoked pork chop, trimmed and sliced
1 large onion, chopped
2 cloves garlic, smashed
1 teaspoon coriander seeds, crushed
1 teaspoon juniper berries (available in the spice aisle), crushed
Kosher salt and freshly ground pepper
1 apple, grated
1 cup dry white wine
2 tablespoons chopped fresh parsley
Whole-grain mustard, for serving

Steps:

  • Soak the sauerkraut in a bowl of warm water. Cover the potatoes with water in a small saucepan and simmer over medium heat until tender, about 10 minutes. Drain and keep warm.
  • Meanwhile, heat the vegetable oil in a large pot over medium-high heat. Prick the sausages with a fork and add to the pot along with the pork; cook until browned on one side, about 4 minutes. Turn the meats and add the onion, garlic, coriander, juniper berries, and salt and pepper to taste. Cook until the onion is golden brown, about 6 minutes. Add the apple and cook 2 more minutes.
  • Drain the sauerkraut, then add to the pot along with the wine and 1 cup water. Cover and simmer 10 minutes, then uncover and cook until thickened, about 5 more minutes. Transfer the sauerkraut, meats and potatoes to a platter. Top with the parsley and serve with mustard.
