We like to prepare a lot of this Korean beef marinade because it also makes a delicious dipping sauce for so many dishes.

1/2 cup/120 mL soy sauce
1/4 cup/60 mL green onion (cut into pieces)
2 tablespoons/30 mL brown sugar
2 tablespoons/30 mL vinegar (red wine)
2 tablespoons/30 mL vegetable oil
1 tablespoon/15 mL sesame oil
1 to 2 cloves garlic (minced)
1 teaspoon/5 mL black pepper

Steps:

  • Combine all ingredients and mix until sugar is completely dissolved.
  • Use this marinade for two to eight hours depending on the thickness of the meat.

5 pounds Korean style beef short ribs*
1 cup brown sugar, packed
1 cup soy sauce
1/2 cup water
1/4 cup mirin (rice wine)
1 small onion, peeled and finely grated
1 small Asian pear, peeled and finely grated
4 tablespoons minced garlic
2 tablespoons dark sesame oil
1/4 teaspoon black pepper
2 green onions, thinly sliced (optional)

Steps:

  • Preparation: Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight.
  • Heat gas or charcoal grill to medium-hot. Drain excess marinade off beef. Grill short ribs, turning once, to desired doneness, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired. Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble.

1 cup soy sauce
3 tablespoons rice vinegar
2 tablespoons honey
1 heaping tablespoon Korean chili paste (recommended: gochujang)
2 tablespoons grated fresh ginger
6 cloves garlic, chopped
1 green onion, thinly sliced
2 teaspoons toasted sesame oil
Freshly ground black pepper
1 1/2 teaspoons toasted sesame seeds
1 (3-pound) chicken, butterflied, cut into parts
4 (6-inch) flour tortillas, warmed

Steps:

  • Whisk together the soy, vinegar, honey, chili paste, ginger and garlic in a bowl and divide the mixture in half. Add 1 half to a large baking dish, then add the chicken, turning to coat. Cover and let the meat marinate in the refrigerator for at least 4 hours or up to 8 hours. Add the green onions, sesame oil, black pepper and sesame seeds to the remaining half of the mixture. Reserve it as a dipping sauce for the finished chicken.
  • Light a grill, making sure to include a zone of indirect heat.
  • Remove the chicken from the marinade and put it over the charcoal, skin side down. Grill until the skin is golden brown and crisp, about 10 minutes. Relocate the chicken to the indirect heat zone, lower the cover and grill until cooked through. Remove the chicken from the grill to a cutting board and carve. Arrange the chicken on a serving platter and serve wrapped in tortillas, if desired, with dipping sauce on the side.

There should be enough marinade for about 2-1/2 pounds of beef or chicken you may double the marinade ingredients but keep the fresh garlic and green onion at the same amount --- the meat needs to come down to almost room temperature before grilling so plan well ahead, also there is a marinating time of 8-24 hours, you may omit the cayenne completely if desired or adjust to suit heat level.

1/4 cup soy sauce
1 tablespoon sugar
2 teaspoons Asian sesame oil
1 bunch scallions (white and pale green parts separated from greens), minced (1/2 cup)
1 tablespoon minced garlic
1 tablespoon minced peeled fresh ginger
3 tablespoons sesame seeds, toasted
1 lb flank steak, cut across the grain into very thin slices (no more than 1/8 inch thick)
1 tablespoon vegetable oil
Accompaniments: butter lettuce or other soft-leaf lettuce; thinly sliced garlic; packaged kimchi*; steamed white rice

Steps:

  • Stir together soy sauce, sugar, sesame oil, white and pale green scallions, garlic, ginger, and 2 tablespoons sesame seeds in a bowl until sugar is dissolved. Add steak and toss to coat, then marinate 15 minutes.

Steps:

  • Combine marinade ingredients in a bowl.

  • After marinating, place ribs on baking dish. Reserve the marinade for later.
  • Bake ribs at 325°F (160°C) for two and a half to three hours.
  • Pour the leftover marinade into a saucepan, add the honey, and bring to a boil to form a glaze. Set aside.
  • After two and half to three hours, remove the ribs from the oven. Pour the glaze over the ribs and broil for 5 to 10 minutes.
  • Cut up the ribs, sprinkle sesame seeds over, and garnish with scallions.

  • In a small pan, toast the sesame seeds for a couple of minutes over medium heat. Make sure to keep the seeds moving while the seeds are toasting, so they toast evenly and don’t burn. The seeds are done when they’ve browned a little and have a nice toasted smell to them.
  • In a small bowl combine the soy sauce, ginger, garlic, brown sugar, sesame seeds, and green onions, along with a pinch of black pepper.
  • If you have the time, let the marinade sit for 15 minutes or so to let the flavors come together, before using it. Marinate whatever you’re cooking in the sauce for at least an hour before cooking. This marinade can be made ahead of time and is fantastic when it’s allowed to work it’s magic overnight.
