SPICY KOREAN RIBS

Spicy Korean Ribs image

These spicy Korean ribs are a family favorite recipe, picked it from the local paper. Best if left in the fridge overnight, the flavors are a lot stronger. The more sauce, the better! Serve with Asian sesame coleslaw.

Time 7h32m

Yield 8

Number Of Ingredients 13

4 racks baby back pork ribs
salt and ground black pepper to taste
1 small onion, sliced
1 cup kochujang (Korean hot sauce)
¼ cup white vinegar
¼ cup minced garlic
3 tablespoons sesame oil
2 tablespoons soy sauce
1 (1 1/2 inch) piece fresh ginger root, minced, or to taste
1 (1 1/2 inch) piece fresh ginger root, sliced, or to taste
1 (12 fluid ounce) bottle pilsner-style lager
1 ½ teaspoons toasted white sesame seeds
1 ½ teaspoons toasted black sesame seeds

Steps:

  • Remove membrane from back of ribs or score with a sharp knife. Place ribs in a shallow dish and season with salt and pepper.
  • Puree onion in a blender or food processor. Add kochujang, vinegar, garlic, sesame oil, soy sauce, and minced ginger; puree into a sauce. Rub 1/3 generously over ribs, reserving the rest of the sauce. Cover ribs with plastic wrap and refrigerate 5 hours to overnight.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Scatter sliced ginger root over the bottom of a roasting pan. Place ribs meat-side down on top of ginger slices and pour lager over ribs. Cover with a lid or aluminum foil.
  • Bake in the preheated oven until meat is loosened from the ribs but not yet falling off the bone, 2 to 2 1/2 hours. Let cool, 5 to 10 minutes.
  • Preheat an outdoor grill to 400 degrees F (200 degrees C) and lightly oil the grate. Place ribs on the grill and cook until browned, about 6 minutes per side. Coat with 1/2 the reserved sauce during the last 2 minutes of cooking each side. Garnish with white and black sesame seeds.

Korean-Style Braised (Slow Cooker) Baby Back Ribs image

Slow cooker ribs inspired by my favorite Korean chef in the LA area, Roy Choi, whose cooking will oversaturate your taste buds. Flavor profile of this recipe 12/10. These remind me of your typical pot roast prep that your mom may have made growing up...if your mom happened to be a Korean man who went on to create the first fusion taco truck. Enjoy over a bed of steamed rice and your favorite banchan!

KOREAN BBQ BABY BACK RIBS

Korean BBQ Baby Back Ribs image

When you live-and cook-in Kentucky, you need to know your ribs. Chef Edward Lee starts his baby back rib recipe with a classic dry rub, then cooks the racks low and slow in a sauce spiked with spicy gochujang, a nod to his Korean roots. (Note: Ribs need to chill overnight in the fridge, so plan ahead!)

Provided by Edward Lee

Categories     main-dish

Time 3h30m

Yield 8 servings

Number Of Ingredients 15

3/4 cup ketchup
1 stick unsalted butter
1 cup brown sugar
1/4 cup soy sauce
1/4 cup worcestershire sauce
1 teaspoon freshly ground black pepper
3 cups gochujang, Korean fermented chili paste, available at Asian markets or online
1 cup cider vinegar
4 cloves garlic, minced or grated
1/4 cup kosher salt
1/4 cup brown sugar
1 tablespoon paprika, sweet or smoked
1 tablespoon garlic powder
1 tablespoon Freshly ground black pepper
2 racks baby back ribs, about 3½?4 pounds

Steps:

  • BBQ sauce: In a saucepan, bring all ingredients to a simmer over low heat. Cook uncovered, 1-2 hours. (Note: Sauce can also be made while the ribs are baking during the first hour, Step 3.)
  • Ribs: Combine dry ingredients in a mixing bowl. Place ribs on a rimmed baking sheet lined with parchment paper. Sprinkle rub all over the ribs, using more on the meaty side. Massage the rub into the meat (tip: wear non-latex gloves for easy cleanup). Cover with foil and chill in the refrigerator at least 4 hours, preferably overnight.
  • Preheat oven to 250 degrees F. Remove ribs from refrigerator and wrap each rack tightly in foil. Place them in a roasting pan side by side and bake 1 hour. (Alternatively, you can smoke the ribs, uncovered, in a smoker at 220 degrees F for 1 hour.)
  • Take the ribs from the oven and remove the foil. Return the ribs to roasting pan; pour any liquid in the foil over the ribs. Pour the BBQ sauce over the ribs. Loosely cover pan with foil and bake 1 hour 15 minutes to 1 hour 45 minutes, basting halfway through.
  • Assembly: Remove ribs from oven and place on a cutting board. Cut into two-rib portions and serve stacked on a platter, with extra sauce from the pan on the side.

Provided by Amy + Jacky

Categories     Dinner     Lunch     Main

Time 45m

Number Of Ingredients 13

1 rack (~2lbs) baby back ribs
1 (370g) Asian pear (, peeled & finely grated)
1 (37g) whole garlic (, minced)
1 (104g) small onion (, minced)
½ teaspoon (1g) ginger (, minced)
1 teaspoon (2.3g) freshly ground black pepper
½ cup (125ml) regular soy sauce
2 tablespoons (42g) honey
2 tablespoons (25g) brown sugar
2 tablespoons (30ml) unseasoned rice vinegar
2 tablespoons (30ml) sesame oil
1-2 stalks green onions (, finely sliced)
Toasted sesame seeds

Steps:

  • Make Kalbi Marinade: Cut 1 (104g) small onion, and 1 (370g) peeled Asian pear into smaller pieces. Process 1 (37g) whole garlic, onion pieces, ½ teaspoon (1g) ginger, and Asian pear pieces in a food processor to a fine paste. Or you can mince these ingredients. In a small mixing bowl, mix ½ cup (125ml) regular soy sauce, 2 tbsp (42g) honey, 1 tsp (2.3g) freshly ground black pepper, 2 tbsp (25g) brown sugar, 2 tbsp (30ml) rice vinegar, 2 tbsp (30ml) sesame oil and the above processed onion paste together.
  • Marinate Baby Back Ribs: Remove the membrane from baby back ribs (See Video). Place ribs and kalbi marinade in a large Ziploc bag. Partially close the bag and squeeze out the air in the bag. Close Ziploc bag, then marinate ribs in the fridge for at least 30 minutes. *Pro Tip: Optimal marinating time for baby back ribs is 6 - 8 hours.
  • Pressure Cook Baby Back Ribs: Pour everything in the Ziploc bag into Instant Pot Pressure Cooker. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure cook at High Pressure for 16 - 25 minutes + Full Natural Release.*Pro Tip: Adjust the cooking timing according to your preference: 16 minutes (Tender with a bit of chew) to 25 minutes (Fall off the bone). After full natural release, release the remaining pressure by turning Venting Knob to Venting Position. When Floating Valve drops, open the lid carefully. Turn off heat.
  • Preheat Oven: While the Instant Pot is naturally releasing pressure. Preheat oven to 450°F.
  • Reduce Kalbi Sauce and Finish in Oven: Reduce sauce over medium heat for roughly 5 minutes (Instant Pot: press "Sauté" button). Taste and season kalbi sauce with more freshly ground black pepper if necessary. Generously brush kalbi sauce on all sides of baby back ribs with a silicone basting brush. Place ribs in the oven for 4 - 8 minutes per side until caramelized.
  • Serve: Remove Instant Pot Korean Ribs from oven. Garnish with finely sliced green onions and toasted sesame seeds. You can serve the remaining sauce as a dipping sauce for extra blast of flavors. Enjoy~ :)

KOREAN BBQ SHORT RIBS (GAL-BI)

Korean BBQ Short Ribs (Gal-Bi) image

This is a easy way to make Korean BBQ. You can also substitute chicken breast or sliced rib-eye for the short ribs. If you use chicken or rib-eye, you must add thinly sliced green onion tops. This can also be broiled in the oven for the same amount of time.

  • Pull off the membrane if it's not been removed (see note 2). Cut each slab of the ribs into two pieces for easier handling. Rinse the ribs and drain. Coat the ribs well with the marinade, and marinate them for a minimum of eight hours (preferably 24 hours to 48 hours). Turn them over once after half of the marinating time has passed. (You can use large zip lock bags for easier handling.)
  • Preheat the oven to 325°F (300°F if using a convection oven). Line a baking sheet with aluminum foil. I used 2 baking dishes. Arrange the ribs, meat side down. If using the mild marinade, pour some marinade into the baking sheet or dish. Cover the baking sheet/dish tightly with aluminum foil. Bake them for 1.5 hour (2 hours if you want fall off the bones tenderness). Remove the foil cover.
  • Option 1: Change the oven setting to broil (500°F) and preheat for a few minutes. Then broil the ribs until the ribs are lightly caramelized and charred, about 5 minutes on each side. Baste the ribs with the sauce a couple of times while broiling.
