KOREAN SPICY CHICKEN WINGS - RESTAURANT RECIPE!

Korean Spicy Chicken Wings - Restaurant Recipe! image

This is a fantastic recipe I came across whilst roaming the 'net! It comes from the owner of a popular Korean restaurant where these chicken wings were the most popular of all his special order dishes. Time to make doesn't include chilling time.

Provided by Um Safia

Categories     Chicken

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 16

1 lb chicken wings (sectioned)
1/3 cup potatoes or 1/3 cup cornstarch
1/2 cup milk
1 teaspoon salt
1 tablespoon ground black pepper
vegetable oil (for deep frying)
2 tablespoons fine ground red chili pepper
2 tablespoons soy sauce
2 tablespoons sugar (or honey, or corn syrup)
1 tablespoon rice vinegar (or wine)
4 cloves peeled garlic
1/2 inch peeled fresh gingerroot
2 tablespoons korean red pepper paste (gochujang)
water, as needed to obtain a thin paste
1 spring onion
1 tablespoon toasted sesame seeds

Steps:

  • Rinse the wings in cold water, then lightly salt and pepper them. Let stand about 10 to 15 minutes. Place wings in a large bowl and pour the milk over them, then place in refrigerator for about one hour, turning three to four times.
  • For the Stir Fry Sauce: Place the ginger and garlic into a blender with just enough water to liquefy the mix. Pour into a small mixing bowl and add all other sauce ingredient & mix well. Finely chop the green/spring onion and set aside.
  • Chicken Wings: Discard the milk and let wing section drain until just damp. Heat oil in a large cooking pot. (350ºF or use the bread test) Roll wings in starch and deep fry until golden brown then drain.
  • Transfer the chicken to a large stir fry pan or wok over medium to medium high heat, add the sauce, and stir fry until all liquid is gone.
  • Place onto a serving tray and garnish with the green onion and sesame seed. Serve as an appetizer or with sticky rice and ban chan for a meal.

KOREAN CHICKEN WINGS WITH SPICY GOCHUJANG SAUCE

Korean Chicken Wings with Spicy Gochujang Sauce image

Flavorful Korean chicken wings with a flavorful Gochujang Sauce. Crispy and Spicy and full of flavor!

Provided by Sylvia Fountaine

Categories     Appetizer

Time 50m

Number Of Ingredients 19

3 pounds chicken wings
2 teaspoons salt
1 Tablespoon oil (like peanut)
1 Tablespoon chopped ginger
3 Tablespoons chopped garlic
¼ cup mirin, or rice wine or Chinese wine ( not vinegar)
¼ cup soy sauce
¼ cup orange juice ( juice from half an orange-make sure to zest it first!)
3 tablespoons Gochujang (Korean red chile paste)
1-2 tablespoons red chili paste (like Sambal Oelek or sriracha), more to taste.
3 tablespoons brown sugar or honey
2 tablespoons rice wine vinegar, more to taste
1 tablespoon sesame oil
zest of one orange
1/2 Cup flour
1/2 Cup corn starch
1 ⅓ cups water
½ teaspoon salt
Add 1 inch of peanut or canola oil to a large, tall sided skillet or dutch oven.

Steps:

  • Preheat oven to 375 F
  • Toss chicken wings with salt in a medium bowl, coating all sides well and set aside.
  • Make the batter, whisking all ingredients together until smooth in a medium bowl.
  • Set a wire rack over a foil-lined sheet pan near the stove.
  • Make the sauce ( to save time, you can do this at the same time as frying the wings). Sauté the garlic and ginger in the oil over medium heat until fragrant and golden. Add the mirin, simmer for 2 minutes, stir in the remaining ingredients- soy sauce, orange juice, Gochujang, red chili paste brown sugar, vinegar, sesame oil and orange zest - and bring to a simmer again. Taste for heat, adding more if you like. Turn heat off.
  • Heat one inch of oil, in an extra-large skillet or dutch oven, over medium-high heat until oil is hot, 350F - or until heat sizzles loudly when you test it by dropping a drop of batter in.
  • Working in batches, coat the chicken in the batter, using tongs, and place gently in hot oil, careful not to splatter. Be careful not to overcrowd. Fry 7-9 minutes or until golden, being patient, then gently turn over and fry 3 more minutes. They should be golden and crispy.
  • Place on the wire rack (set over over a sheet pan) and keep them in the oven while you fry all the remaining chicken. Once all the chicken wings are fried, keep them in the oven for 15 more minutes or until the last batch is cooked through. Double-check by cutting into one- juices should run clear, there should be no red or pink.
  • Reheat the sauce, then toss the crispy chicken wings in the sauce and garnish with sesame seeds and scallions.
  • Serve immediately so they stay crispy.

KOREAN FRIED CHICKEN (YANGNYEOM CHICKEN)

Korean Fried Chicken (Yangnyeom Chicken) image

Provided by Hyosun

Categories     Main

Time 2h45m

Number Of Ingredients 28

2 pounds chicken wings (about 16 drumettes and wingettes)
1.5 teaspoons salt (use 1 ts if using table salt)
pinch black pepper (or to taste)
1 teaspoon grated ginger
4-5 cups oil for frying (about 2-inch deep (use deep, bottom heavy, medium size pot or pan))
1/2 cup potato starch (or cornstarch)
1/2 cup frying mix (aka tempura mix)
1/4 cup potato starch (or cornstarch)
3/4 cup water
1 tablespoon soy sauce
2 tablespoons rice wine (or mirin) or other cooking wine
1 tablespoon or 1.5 tablespoons gochujang
1 tablespoon or 2 tablespoons hot sauce (sriracha, tabasco, Franks Original, etc.)
2 tablespoons sugar
2 tablespoons honey (or 2.5 tablespoons corn syrup, rice syrup, or oligo syrup)
1 tablespoon minced garlic
1/2 teaspoon honey dijon mustard - optional
4 tablespoons water
2 tablespoons soy sauce
2 tablespoons rice wine (or mirin or other cooking wine)
2 tablespoons sugar
2 tablespoons honey (or 2.5 tablespoons corn syrup, rice syrup, or oligo syrup)
1 tablespoon minced garlic
1 teaspoon vinegar (white, rice, apple cider, etc.)
1 teaspoon or 2 teaspoons oyster sauce - optional
4 tablespoons water
1/2 teaspoon sesame seeds
1 tablespoon chopped scallion

Steps:

  • Wash chicken wings, and drain thoroughly. Mix with the salt, pepper, and ginger. Let it sit in the fridge for 2 hours or longer (overnight to 24 hours).
  • Combine all the sauce ingredients of your choice and stir well. Boil over medium heat until it thickens slightly, about 4 to 5 minutes. Turn the heat off.
  • OPTION 1 Dry batter: If using the starch only, add the potato (or cornstarch) to the chicken, and rub it onto each wing well to coat evenly. Set aside.
  • OPTION 2 Wet batter: Mix the wet batter ingredients in a bowl, and stir well until smooth with no visible lumps.
  • Add the oil to a deep fryer, wok, or large pot. Heat the oil to 320°F (up to 330°F). Drop the chicken in the oil, one piece at a time. If using wet batter, dip each piece in the wet batter with tongs and shake off excess batter before dropping the chicken in the oil. Fry them in two batches. Cook until lightly golden, about 6 minutes, depending on the size of the chicken wings. Remove them with a wire skimmer or a slotted spoon. Drain on a wire rack or in a large mesh strainer set on a bowl.
  • Reheat the oil to 350°F (up to 360°F). Add the chicken (you can do this in one batch for the second frying), and deep fry again, for about 5 minutes, until golden brown. Drain on a wire rack or in a large mesh strainer set on a bowl.
  • You can either toss the fried chicken pieces in the sauce or hand-brush them. Sprinkle with the optional sesame seeds or chopped scallion to serve.

  • Rinse the chicken wings and drain the water. Mix all the ingredients for each marinade together.
  • Combine the marinade with the chicken wings and coat all the pieces well. Cover and refrigerate for 2 to 4 hours (overnight for best results). Let them sit at room temperature for 30 minutes before cooking. Preheat the oven to 425°F (218°C).
  • Line a baking sheet with aluminum foil. Place the chicken wings in a single layer and bake for 20 to 25 minutes until the skin is crisp and golden. Flip them over halfway through and baste/spoon the remaining marinade over each wing. Alternatively: Bake them at 400°F (204°C) for 15 minutes, flip them over, bake for another 15 minutes. Then, increase the oven temperature to 425°F, baste, and bake for another 10 minutes. This worked really well too.
  • Turn them over halfway during baking and baste with the leftover marinade. Reduce the heat level if the wings are browning too quickly. (See notes.)

  • In a bowl, place the chicken, rice wine, ginger, salt and black pepper. Combine them well. Then evenly coat the chicken with the starch and set side. (To get the effect like the picture, dip the individual chicken pieces into the bowl of starch, roll the chicken around a bit then take them out and set aside.)
  • In a deep saucepan (or frier) add a generous amount of oil and heat it until the oil temperature reaches 175 C / 347 F (or boiling). Start adding the battered chicken carefully and fry them until they cook (between 3 to 5 mins, depending on the size of chicken). Do not overcrowd the pan. (It might be useful to use a grease splatter screen if you have one. It’s super handy! It minimises oil splatter.) Take out the done chicken and place them onto some kitchen paper while frying the remaining chicken pieces. Once the first set of deep frying is completed, quickly scoop out any floating debris from the oil using a skimmer. Then deep fry the chicken again when the oil temperature reaches 175 C / 347 F (or boiling). Fry them until the batter is golden and crisp. (The second time frying is shorter than the first time, 2 to 3 mins) Set aside.
  • In a separate saucepan, add in the Korean fried chicken sauce ingredients (listed above). Heat the sauce over low medium heat and stir well. Once it starts bubbling, remove the pan from the heat. Place double fried chicken into a large mixing bowl then pour the fried chicken sauce over the chicken to coat. Mix them lightly and thoroughly. Alternatively, serve the fried chicken and the sauce separately and use the sauce as a dipping sauce.Once all the chicken is coated with the sauce, serve it hot immediately. Leftover chicken can be refrigerated for a day or two and eaten cold. But it won’t be as crunchy.

  • To bake super crispy wings in the oven, you need to start with the secret ingredient. That magic thing is baking powder. By coating your wings in a light sprinkling of seasoned baking powder, you are guaranteed that crunchy crispy chicken skin that makes the perfect wings.
  • Start by combining baking powder, salt and onion powder in a small bowl. Pat your naked chicken wings with paper towels to remove as much moisture as possible and then add them to a separate mixing bowl, one large enough to toss your wings around without them flying out.
  • Sprinkle half of your baking powder mixture on your wings and toss to coat. Sprinkle the remaining mixture and toss again until your wings are evenly coated.
  • Preheat oven to 450 degrees and line a large baking sheet tray with foil and then add an oven safe wire rack on top of your foil. Lightly spray your rack with non-stick spray.
