KOREAN BBQ CHICKEN MARINADE



Korean BBQ Chicken Marinade image

This sauce is from the very popular 'chicken bowls' in my hometown. It's very tasty! Use it as a marinade for chicken, or to baste chicken while grilling. Increase the hot chile paste as desired. Four tablespoons is usually as much as anyone can take!

1 cup white sugar
1 cup soy sauce
1 cup water
1 teaspoon onion powder
1 teaspoon ground ginger
1 tablespoon lemon juice
4 teaspoons hot chile paste

Steps:

  • In a medium saucepan over high heat, whisk together the sugar, soy sauce, water, onion powder, and ground ginger. Bring to a boil. Reduce heat to low, and simmer 5 minutes.
  • Remove the mixture from heat, cool, and whisk in lemon juice and hot chile paste. Place chicken in the mixture. Cover, and marinate in the refrigerator at least 4 hours before preparing chicken as desired.

1/2 cup reduced-sodium soy sauce
2 tablespoons water
1 1/2 tablespoons raw or turbinado sugar
1 tablepsoon minced garlic
1 teaspoon Asian sesame oil
1 teaspoon grated peeled fresh ginger
1/2 teaspoon freshly ground black pepper
1/2 cup chopped scallions

Steps:

  • Whisk 1/2 cup reduced-sodium soy sauce, 2 tablespoons water, 1 1/2 tablespoons raw or turbinado sugar, 1 tablespoon minced garlic, 1 teaspoon Asian sesame oil, 1 teaspoon grated peeled fresh ginger, and 1/2 teaspoon freshly ground black pepper in a medium bowl. Stir in 1/2 cup chopped scallions. DO AHEAD: Cover and chill up to 1 day.

¼ cup rice wine vinegar
2 tablespoons soy sauce
½ cup gochujang (Korean hot pepper paste)
3 tablespoons minced garlic
3 tablespoons minced fresh ginger root
2 tablespoons red pepper flakes
½ teaspoon black pepper
3 tablespoons white sugar
3 green onions, cut into 2 inch pieces
½ yellow onion, cut into 1/4-inch thick rings
1 (2 pound) pork loin, cut into 1/4 inch slices
¼ cup canola oil

Steps:

  • Stir together the vinegar, soy sauce, hot pepper paste, garlic, ginger, red pepper flakes, black pepper, sugar, green onions, and yellow onion in a large bowl. Mix in the pork slices, mixing well until completely coated. Place into a resealable plastic bag, squeeze out any excess air, seal, and marinate in the refrigerator at least 3 hours.
  • Heat the canola oil in a large skillet over medium-high heat. Add the pork slices in batches, and cook until no longer pink in the center, and lightly browned on the outside, about 5 minutes per batch. Be careful when cooking the meat, the spicy fumes will hurt your nose!

1/4 cup/60 mL green onion (cut into pieces)
2 tablespoons/30 mL brown sugar
2 tablespoons/30 mL vinegar (red wine)
2 tablespoons/30 mL vegetable oil
1 tablespoon/15 mL sesame oil
1 to 2 cloves garlic (minced)
1 teaspoon/5 mL black pepper

Steps:

  • Combine all ingredients and mix until sugar is completely dissolved.
  • Use this marinade for two to eight hours depending on the thickness of the meat.

Fantastic Korean-Style Marinade for Beef Pork or Chicken image

There should be enough marinade for about 2-1/2 pounds of beef or chicken you may double the marinade ingredients but keep the fresh garlic and green onion at the same amount --- the meat needs to come down to almost room temperature before grilling so plan well ahead, also there is a marinating time of 8-24 hours, you may omit the cayenne completely if desired or adjust to suit heat level.

3/4 cup soy sauce
3/4 cup water
3 tablespoons white vinegar
1/4 cup brown sugar
2 tablespoons honey (or use white sugar)
2 tablespoons sesame oil
3 -4 tablespoons minced fresh garlic
2 green onions, chopped
1/2 teaspoon coarsley ground black pepper
1 pinch cayenne pepper (or to taste adjust to suit heat level)

Steps:

  • In a bowl whisk together all marinade ingredients together until the sugar granules are completely dissolved.
  • Pour the marinade over the meat and turn to coat.
  • Cover with plastic wrap and refrigerate for 8-24 hours.
  • Remove the meat and shake off excess marinade.
  • Place the meat in a pan and allow to come down to room temperature (this will take a few hours).
  • Grill as desired.

  • In a small pan, toast the sesame seeds for a couple of minutes over medium heat. Make sure to keep the seeds moving while the seeds are toasting, so they toast evenly and don’t burn. The seeds are done when they’ve browned a little and have a nice toasted smell to them.
  • In a small bowl combine the soy sauce, ginger, garlic, brown sugar, sesame seeds, and green onions, along with a pinch of black pepper.
  • If you have the time, let the marinade sit for 15 minutes or so to let the flavors come together, before using it.
