Sweet pineapple is combined with salty soy sauce in a delicious marinade for these sirloin steak canapés - great for a party buffet

300g sirloin steak , fat removed
2 tbsp soy sauce
2 tbsp golden caster sugar
2 tbsp mirin
thumb-sized piece ginger , peeled and sliced
2 garlic cloves
50g chopped fresh pineapple
1 tsp chilli flakes or Korean chilli powder
1 tbsp sesame oil , plus extra for frying
lettuce leaves, to serve
toasted sesame seeds , to serve
spring onions , thinly sliced, to serve
2 tbsp sriracha or other chilli sauce
2 tbsp kecap manis (Indonesian sweet soy sauce)
juice 1 lime

Steps:

  • Put the steak in the freezer for 30 mins - it will firm up and be much easier to slice thinly. Meanwhile, make a marinade. Put the soy, sugar, mirin, ginger, garlic, pineapple, chilli flakes and oil in a food processor. Blitz until smooth, then pour into a bowl.
  • When the meat is semi-frozen, thinly slice into 25 pieces and add to the marinade. Chill until ready to use, but don't leave for longer than 2 hrs or the pineapple juice will break down the meat too much.
  • Meanwhile, soak small wooden skewers in water for 10 mins. When ready to serve, thread a piece of meat onto each skewer. Heat a griddle pan, or frying pan, and brown skewers for 1-2 mins each side or until grill marks appear. Add a little more oil to the pan if needed.
  • Mix together the dipping sauce ingredients in a small bowl. Serve the skewers with lettuce, sesame seeds, spring onions and dipping sauce.

1 pound chicken breast (cut into bite sized pieces)
3 cloves garlic (grated)
1 inch ginger (grated)
1/2 small onion (grated)
1/2 Asian pear (grated)
1/4 cup soy sauce
1/2 tablespoon sesame oil
1 tablespoon brown sugar
1 green onions (chopped)
1/4 teaspoon pepper

Steps:

  • Mix everything in a freezer bag and marinate for at least an hour.
  • Skewer the chicken on wet skewers and set aside.
  • Strain the solids from the marinade and simmer the marinade until it thickens and becomes saucy, about 5-10 minutes.
  • Grill the chicken until cooked, about 5 minutes per side basting it with the marinade as you go.

1 lb beef, thinly sliced (ask your butcher to slice the beef "bacon thin", or if you must, slice it 1/8-inch thick)
3 cups steamed rice (optional)
3 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon honey
2 tablespoons garlic, chopped
2 tablespoons wine or 2 tablespoons beef broth
1 tablespoon sesame oil
3 tablespoons green onions, chopped
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • Mix the 9 seasonings. Put the sliced beef and mix together thoroughly; marinate 1 to 2 hours.
  • Grill or broil until beef is cooked to your liking (will cook FAST - is very thin).

Lots of flavor, I have made this also using pork tenderloin. Soak the wooden skewers in water for half an hour to prevent them burning. Marinating time not included. Freezing the meat slightly makes it easier to slice it thin.

1 1/2 lbs boneless sirloin beef (or other good beef)
1 tablespoon toasted sesame seeds
1 -2 cloves crushed garlic
1/2 tablespoon grated fresh ginger
3 -4 green onions, finely chopped
1/3 cup soy sauce
2 tablespoons dry sherry
2 tablespoons sesame oil
2 teaspoons sugar
1/2 teaspoon crushed red pepper flakes, to taste

Steps:

  • Toast the sesame seeds in a frying pan over medium heat until brown, let them cool.
  • Cut the beef in thin slices.
  • Mix all marinade ingredients together, add also the sesame seeds, and to this add the beef.
  • Leave to marinate at least 30 minutes, a few hours is preferred.
  • Thread the meat on wooden skewers, grill or barbecue a few minutes on each side, using the remaining marinade for basting.

  • If using wooden skewers, soak 6 skewers in water in a 9x13 baking dish so that they are completely submerged for at least 30 minutes and ideally for 1 1/2 hours.
  • TENDERIZER: in a food processor, combine the ingredients for the tenderizer and pulse until a thick paste forms. Set aside.
  • KOREAN BEEF KABOBS: in a large bowl combine the soy sauce, light brown sugar, and sesame oil and whisk until the sugar dissolves. Add the tenderizer and stir to combine. Add in the scallions along with the diced sirloin steak and stir so the meat is covered with the prepared marinade. Refrigerate for at least 30 minutes and up to 1 1/2 hours.
  • GRILLING: Skewer the bell peppers, onions, pineapple, and cubed sirloin onto the prepared skewers in whichever order you prefer. I used about 3-4 cubes of steak per skewer alternating with the veggies/pineapple. Heat an indoor/outdoor grill for several minutes and grill to desired doneness, or for about 8-10 minutes for medium-well. Sprinkle with sesame seeds and scallions before serving.
