SPICY KOREAN FRIED CHICKEN WITH GOCHUJANG SAUCE

Spicy Korean Fried Chicken with Gochujang Sauce image

It took about two decades for this style of Korean fried chicken to make its way into the American foodie scene. The chicken is deep fried twice to make the exterior extra crispy and to lock moisture in. The gochujang sauce is a hot, honey, spicy mix...and well, it's just fabulous. You'll have the family completely raving!

Categories     World Cuisine Recipes     Asian     Korean

Time 40m

Yield 4

Number Of Ingredients 15

⅓ cup milk
1 egg
1 pound chicken breast tenderloins
¼ cup all-purpose flour
¼ cup potato starch
½ teaspoon salt
¼ teaspoon ground black pepper
vegetable oil for frying
¼ cup honey
¼ cup brown sugar
2 tablespoons soy sauce
2 tablespoons gochujang (Korean hot pepper paste)
1 tablespoon Worcestershire sauce
2 teaspoons red pepper flakes
1 teaspoon ground ginger

Steps:

  • Whisk milk and egg together in a large bowl until thoroughly combined and smooth. Add chicken tenders to egg wash and let marinate in the refrigerator for 15 minutes.
  • Combine flour, potato starch, salt, and pepper in a large mixing bowl. Pour mixture into a large, resealable plastic bag. Drain and discard marinade from chicken tenders. Add chicken to the bag, seal it, and shake until each piece is completely dredged in mixture.
  • Heat oil in a deep-fryer or large saucepan to 325 degrees F (165 degrees C).
  • Add chicken pieces to the hot oil about 5 pieces at a time so as not to drop the temperature of the oil. Fry for 2 minutes. Transfer chicken to a plate lined with paper towels to drain. Continue with remaining chicken pieces.
  • Increase oil heat to 350 degrees F (175 degrees C) until continuously boiling. Carefully add the first batch of cooked chicken and fry again until cooked through and crispy about 2 minutes more. Transfer to a plate lined with paper towels to drain. Repeat with the second batch of chicken pieces. Transfer chicken to a medium-sized serving bowl.
  • Heat a small saucepan over medium-low heat. Add honey, brown sugar, soy sauce, gochujang paste, Worcestershire sauce, red pepper flakes, and ginger. Cook and stir continuously until sugar has melted and sauce is smooth, about 5 minutes. Drizzle sauce over twice-fried chicken tenders and serve.

Time 2h45m

Number Of Ingredients 28

2 pounds chicken wings (about 16 drumettes and wingettes)
1.5 teaspoons salt (use 1 ts if using table salt)
pinch black pepper (or to taste)
1 teaspoon grated ginger
4-5 cups oil for frying (about 2-inch deep (use deep, bottom heavy, medium size pot or pan))
1/2 cup potato starch (or cornstarch)
1/2 cup frying mix (aka tempura mix)
1/4 cup potato starch (or cornstarch)
3/4 cup water
1 tablespoon soy sauce
2 tablespoons rice wine (or mirin) or other cooking wine
1 tablespoon or 1.5 tablespoons gochujang
1 tablespoon or 2 tablespoons hot sauce (sriracha, tabasco, Franks Original, etc.)
2 tablespoons sugar
2 tablespoons honey (or 2.5 tablespoons corn syrup, rice syrup, or oligo syrup)
1 tablespoon minced garlic
1/2 teaspoon honey dijon mustard - optional
4 tablespoons water
2 tablespoons soy sauce
2 tablespoons rice wine (or mirin or other cooking wine)
2 tablespoons sugar
2 tablespoons honey (or 2.5 tablespoons corn syrup, rice syrup, or oligo syrup)
1 tablespoon minced garlic
1 teaspoon vinegar (white, rice, apple cider, etc.)
1 teaspoon or 2 teaspoons oyster sauce - optional
4 tablespoons water
1/2 teaspoon sesame seeds
1 tablespoon chopped scallion

Steps:

  • Wash chicken wings, and drain thoroughly. Mix with the salt, pepper, and ginger. Let it sit in the fridge for 2 hours or longer (overnight to 24 hours).
  • Combine all the sauce ingredients of your choice and stir well. Boil over medium heat until it thickens slightly, about 4 to 5 minutes. Turn the heat off.
  • OPTION 1 Dry batter: If using the starch only, add the potato (or cornstarch) to the chicken, and rub it onto each wing well to coat evenly. Set aside.
  • OPTION 2 Wet batter: Mix the wet batter ingredients in a bowl, and stir well until smooth with no visible lumps.
  • Add the oil to a deep fryer, wok, or large pot. Heat the oil to 320°F (up to 330°F). Drop the chicken in the oil, one piece at a time. If using wet batter, dip each piece in the wet batter with tongs and shake off excess batter before dropping the chicken in the oil. Fry them in two batches. Cook until lightly golden, about 6 minutes, depending on the size of the chicken wings. Remove them with a wire skimmer or a slotted spoon. Drain on a wire rack or in a large mesh strainer set on a bowl.
  • Reheat the oil to 350°F (up to 360°F). Add the chicken (you can do this in one batch for the second frying), and deep fry again, for about 5 minutes, until golden brown. Drain on a wire rack or in a large mesh strainer set on a bowl.
  • You can either toss the fried chicken pieces in the sauce or hand-brush them. Sprinkle with the optional sesame seeds or chopped scallion to serve.

KOREAN FRIED CHICKEN SAUCE

Korean Fried Chicken Sauce image

This is my take on the classic Korean fried chicken sauce. I like to add lots of green onion and garlic, and not cook this quite as long. The result is a sauce with those ingredients a little more in the flavor profile's forefront. Try to find Korean chili flakes and/or paste if you can. I've used them before and the flavor is great (and obviously more authentic), but if you can't, any hot chili flakes or paste will work.

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes

Time 45m

Yield 6

Number Of Ingredients 10

½ cup ketchup
2 green onions, minced
4 cloves garlic, minced
1 lemon, juiced, or more to taste
2 tablespoons honey
1 tablespoon chile-garlic sauce (such as sambal), or to taste
1 teaspoon red pepper flakes, or to taste
½ teaspoon freshly ground black pepper, or to taste
¼ cup water, or as needed
1 pinch salt, or to taste

Steps:

  • Whisk ketchup, green onion, garlic, lemon juice, honey, chile-garlic sauce, red pepper flakes, and black pepper together in a saucepan over medium-high heat; add enough water to reach desired sauce consistency. Bring sauce to a simmer; reduce heat to medium-low, and simmer until thick and flavors blend, about 5 minutes. Cool to room temperature and season with salt.

KOREAN CHICKEN

Korean Chicken image

One of my favorite fried chicken recipes by Mom.

Provided by Amy Fujimoto

Number Of Ingredients 12

3½ lbs chicken thighs (Boneless.)
¾ c all-purpose flour
2 tsp roasted sesame seeds (Optional.)
⅔ c shoyu (Aloha Shoyu recommended.)
¼ c apple cider vinegar
¼ c brown sugar
¼ c Stevia (Use all sugar or your favorite sweetener.)
3 tbsp chili garlic sauce (Or your favorite hot sauce.)
2 tbsp honey
⅓ c green onions
1 tbsp sesame seed oil
Vegetable oil

Steps:

  • Cut chicken thighs to bite-sized pieces (about 4 pieces per thigh). You don't really need the skin here as this will be deep-fried and dipped in the shoyu sauce. We removed the skin and large fatty pieces.
  • Cover the chicken everywhere with flour. Cover with saran wrap and put the flour-covered chicken into the fridge for at least one hour. The chicken color will change from white to a pale pink after an hour because the flour will have bonded with the wetness around the chicken.Note: if you do not give the flour enough time to bond to the chicken, the flour will fall right off when it cooks.
  • Combine the roasted sesame seeds (optional), shoyu, apple cider vinegar, brown sugar, Stevia, chili garlic sauce, honey, green onions, and sesame seed oil into a large bowl.
  • Fill up a pan with vegetable oil (about a ½-inch high) and adjust the temperature to high. Reduce to medium high as you begin cooking. Add in the chicken one by one and separate as you fry so that they don't stick together.About 1 minute in, you'll see a slight crust begin to form. Flip and make room so that you can add more chicken into the pan.
  • Mom cooked each side about 5 - 6 minutes. Once the chicken looks like it's ready to take out, adjust the temperature to high so that the outside of the chicken has a nice brown crust.
  • Remove the chicken from the pan and dip it into the shoyu sauce. Plate with a couple of paper towel sheets underneath to collect the drippings so that the chicken stays crispy as the sauce soaks into the chicken.Note: you can dip the chicken one by one in the shoyu sauce, but you can also be like my Mom and dipped a bunch of them together. Either way, it will come out great.

KOREAN FRIED CHICKEN

Korean Fried Chicken image

Provided by Dan Toombs

Time 40m

Number Of Ingredients 19

900g (2 lbs) chicken breast, cut into bite sized pieces
4 tsp fine sea salt
4 tsp ground black pepper
2 tbsp garlic powder
2 tbsp rice wine or dry sherry
260g (2 cups) cornflour (corn starch)
FOR THE SAUCE
2 ½ tbsp gochujang
1 tbsp dried red chilli flakes (optional)
2 tbsp cider vinegar
2 tbsp brown sugar
2 tbsp honey
3 tbsp soy sauce
4 tbsp rice wine or sherry
3 tbsp garlic, minced
2 tbsp sesame oil
TO GARNISH
4 spring onions (scallions), thinly sliced
2 tbsp toasted sesame seeds

Steps:

  • Whisk half of the salt, pepper and garlic powder together with the Chinese rice wine to make the marinade. Add the chicken and mix well with your hands ensuring the chicken pieces are evenly coated with the marinade.
  • Allow to marinate while you prepare the rest of the dish or overnight. The longer the chicken rests in the marinade the better.
  • When ready to fry, heat a large wok about one third full with rapeseed (canola) or peanut oil and bring to 175c/350f over medium high heat. If you don't have a thermometer, you can check that the oil is hot enough by placing a chopstick or wooden skewer in the oil. If bubbles form around the chopstick instantly, your oil is hot enough.
  • Meanwhile, pour the flour onto a plate and add the remaining salt, pepper and garlic powder. Then dust each piece of chicken with the flour mixture.
  • Be sure to shake off any excess flour. Cooking in small batches, place a fewpieces of the chicken in the hot oil and fry for about 4 to 5 minutes. Transfer each batch of fried chicken to a rack to soak up any excess oil. Repeat with the remaining chicken.
  • With all the chicken fried, it's time to make the sauce. Discard or strain the cooking oil into a container for future frying and wipe the wok clean. Stir in the sauce ingredients. It is easiest mix the sauce ingredients in a mixing bowl beforehand but these can be added directly to the wok if it's more convenient for you.
  • Bring the sauce to a simmer and then add the fried chicken. I usually add the chicken to the sauce in batches too as it is easier to ensure that it is all equally coated. Ensure that they chicken is heated through and then add the toasted sesame seeds and chopped spring onions(scallions) to serve.
  • I like to serve Korean fried chicken with plain white rice.

  • In a bowl, place the chicken, rice wine, ginger, salt and black pepper. Combine them well. Then evenly coat the chicken with the starch and set side. (To get the effect like the picture, dip the individual chicken pieces into the bowl of starch, roll the chicken around a bit then take them out and set aside.)
  • In a deep saucepan (or frier) add a generous amount of oil and heat it until the oil temperature reaches 175 C / 347 F (or boiling). Start adding the battered chicken carefully and fry them until they cook (between 3 to 5 mins, depending on the size of chicken). Do not overcrowd the pan. (It might be useful to use a grease splatter screen if you have one. It’s super handy! It minimises oil splatter.) Take out the done chicken and place them onto some kitchen paper while frying the remaining chicken pieces. Once the first set of deep frying is completed, quickly scoop out any floating debris from the oil using a skimmer. Then deep fry the chicken again when the oil temperature reaches 175 C / 347 F (or boiling). Fry them until the batter is golden and crisp. (The second time frying is shorter than the first time, 2 to 3 mins) Set aside.
  • In a separate saucepan, add in the Korean fried chicken sauce ingredients (listed above). Heat the sauce over low medium heat and stir well. Once it starts bubbling, remove the pan from the heat. Place double fried chicken into a large mixing bowl then pour the fried chicken sauce over the chicken to coat. Mix them lightly and thoroughly. Alternatively, serve the fried chicken and the sauce separately and use the sauce as a dipping sauce.Once all the chicken is coated with the sauce, serve it hot immediately. Leftover chicken can be refrigerated for a day or two and eaten cold. But it won’t be as crunchy.

  • Simmer the sauce on low for about 30 minutes until reduced by half. Make sure to whisk occasionally to prevent burning.
  • While the sauce is simmering, fry the chicken. If using medium sized chicken breasts, slice in half length wise so you have 4 thin sliced chicken breasts. If you need to, pound them to make them equal in thickness.

  • Preheat the oven to a low heat (to keep cooked chicken warm). Heat a large pan of vegetable oil (or preheat your deep fat fryer) until hot (you can test by dropping a small cube of bread in there, if it rises immediately to the top and starts to bubble rapidly, it’s hot enough). You’ll need at least 1 litre (4 cup) of oil.

  • Stir the sauce occasionally and wait for it to come to a rolling boil with lots of bubbling. The sugar content in this sauce allows it to easily burn so keep an eye on it. This should take about 2 minutes.
  • Once the sauce comes to a boil, test that it is properly reduced and thickened up. Drizzle a small amount onto a plate and let it cool. If it's too thin, let it boil more. If it's too thick, add a teaspoon more water at a time and turn off the heat. Once cooled taste the sauce and adjust for seasoning if needed. Makes slightly over 1 cup of sauce.
