KOREAN BEEF NOODLE BOWLS



Korean Beef Noodle Bowls image

These sweet, spicy, satisfying Korean Beef Noodle Bowls are on the menu at least twice a month at my house!

Provided by kate jones

Number Of Ingredients 16

1 lb. sirloin steak, thinly sliced*
kosher salt and freshly ground black pepper
1 tablespoon olive oil
¼ cup soy sauce
2 tablespoons water
1 teaspoon sriracha sauce
1 teaspoon sesame oil
1 tablespoon brown sugar
1 small white onion, thinly sliced or finely chopped
3-4 cloves garlic, minced
1 teaspoon freshly minced or grated ginger
2 packages ramen noodles (discard seasoning packets or save them for another use)
½ English cucumber or 2 baby cucumbers, thinly sliced (leave the peels on)
1 bunch green onions, chopped
Sesame seeds
Gochujang sauce (see note)

Steps:

  • In a small bowl, whisk together soy sauce, water, sriracha, sesame oil, and brown sugar. Set aside.
  • Season thinly sliced beef with kosher salt and freshly ground black pepper. Set aside.
  • Bring a medium pot of water to a boil. When it comes to a boil, add noodles and cook for 2 ½-3 minutes or until barely cooked through. Drain and rinse immediately in cold water. (You can start the next step while the water is coming to a boil.)
  • While water is heating, heat oil in a large skillet on medium-high heat. When hot, add the beef in a single layer and cook, stirring frequently, until it's about ¾ done. Reduce heat to medium and add chopped/sliced onion, garlic, and ginger and cook until beef is cooked through and the mixture is fragrant. Whisk the sauce mixture one more time and then drizzle over the beef and onions. Turn heat to low and simmer while the noodles cook.
  • When the noodles are cooked and the sauce has been added to the pan, add the drained noodles to the pan and toss gently to combine. Divide the noodles and beef among 4 bowls. Sprinkle with sliced cucumbers, chopped green onions, and sesame seeds and drizzle with a little (or a lot, if you want) Gochujang sauce.

It's hard to eat just one of these Korean Beef Bites, because they're full of so much flavor and texture! They're a great snack or appetizer to serve when entertaining.

1/2 pound flank or sirloin steak
1 tablespoon low-sodium soy sauce or gluten-free tamari
1 teaspoon brown sugar
1/2 teaspoon sesame oil
1 clove garlic (finely minced)
1/2 teaspoon freshly grated ginger
24 rice crackers
1/2 cup prepared kimchi
1 green onion (very thinly sliced on the diagonal)

Steps:

  • Slice the steak as thin as you can into at least 24 pieces. If you are using flank steak, make sure to slice across the grain. In a large bowl, whisk together the soy sauce, brown sugar, sesame oil, garlic, and ginger. Add the steak and mix to coat. Marinate for at least 10 minutes at room temperature or up to 24 hours in the refrigerator.
  • Heat a grill pan over high heat. You'll cook the steak in batches to avoid overcrowding the pan. When the pan is hot, add the steak, and grill 1 to 2 minutes per side, depending on the thickness of your slices.
  • To serve, on each rice cracker layer a slice of steak, the kimchi, and garnish with green onion.

Number Of Ingredients 10

1 pound lean ground beef (90% lean)
3 garlic cloves, minced
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
2 teaspoons sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
2-2/3 cups hot cooked brown rice
3 green onions, thinly sliced

Steps:

  • In a large skillet, cook beef and garlic over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles. Meanwhile, in a small bowl, mix brown sugar, soy sauce, oil and seasonings., Stir sauce into beef; heat through. Serve with rice. Sprinkle with green onions. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

1 ½ lb ribeye steak, or any other well-marbled, tender cut
1 onion, 1/2 roughly chopped and 1/2 thinly sliced
3 cloves garlic cloves
½ pear, peeled and roughly chopped
3 spring onions, 1 cut into pieces and 2 sliced into 1/4-inch rounds
3 tablespoons brown sugar
1 teaspoon black pepper
⅓ cup soy sauce
3 tablespoons sesame oil
1 tablespoon canola oil
1 teaspoon sesame seed, for serving
2 cups cooked rice, for serving
Banchan (Korean side dishes), for serving (optional)

Steps:

  • Slice the beef as thinly as you can, then set aside in a large bowl. Using frozen or cold beef will make the slicing easier.
  • In a blender or food processor, blend the onion chunks, garlic, pear, green onion pieces, brown sugar, pepper, soy sauce, and sesame oil until smooth.
  • Pour the marinade over the beef, add the thinly sliced onion, then mix to coat evenly. Cover with plastic wrap and marinate in the fridge for at least 30 minutes, or overnight.
  • Heat the canola oil in a large skillet over high heat. Pat the meat dry.
  • Being careful not to crowd the pan, sear the marinated beef and onions until browned. Sprinkle with the sliced green onions and sesame seeds.
  • Serve with rice and side dishes.

  • Slice steak against the grain in the thinnest strips possible. Tip: place steak in freezer for 15-20 minutes first to firm it up, it makes it much easier to slice! Set steak aside.
  • In a bowl, combine remaining ingredients and whisk together. Add steak, coat to toss, and marinade for at least 4 hours (I prefer an overnight marinade if you have the time. The flavor is incredible!)
  • When ready to cook, heat a wok, or extra large non-stick skillet to medium-high heat. You want your pan really sizzling. Use tongs to transfer meat to pan, tossing often, until cooked through. It will cook fast! If needed, cook in batches so the pan isn’t to crowded.
  • Serve hot over rice. We love this with an easy vegetable side like green beans, bok choy, or broccoli drizzled with a little sesame oil and soy sauce.
