2 cups steamed jasmine rice
1 lb top sirloin steak, cut into 1/16 th in. strips
1 tablespoon brown sugar
3 tablespoons soy sauce
1 tablespoon mirin (rice wine)
1 teaspoon bottled minced ginger
1 teaspoon dark sesame oil
3 garlic cloves, minced
cooking spray

Steps:

  • To cut beef at 1/16th of an inch, it is easier if the meat is partially frozen.
  • Combine brown sugar through garlic in a large zip-lock bag and stir.
  • Add the beef slices and marinate in refrigerator for 1 hour.
  • Heat a large non-stick skillet coated with cooking spray over medium heat and add beef, discarding remaining marinade.
  • Cook approximately 8 minutes turning frequently, or until desired degree of doneness.
  • If you prefer to grill, place a wire grilling basket coated with cooking spray on grill rack, and grill 8 minutes, turning frequently.
  • Serve over jasmine rice.

5 cloves garlic (finely minced)
1 c apple sauce or Asian pear pureé
1 small onion (finely diced)
½ c soy sauce
¼ c water
¼ c mirin
¼ c honey
¼ c scallions (finely chopped)
2 tbsp toasted sesame seeds
1 tsp sesame oil
1 Tbsp Black pepper
2 LB short rib beef cut across about 1/2 " thick or flank steak (skirt steak, or London Broil)

Steps:

  • In a large bowl, combine the garlic, fruit pureé, onions, soy sauce, water, mirin, honey, chopped scallions, sesame seeds, sesame oil, and black pepper. Mix well.
  • Add the short ribs and coat them well and marinate at least 1 hour or overnight.
  • Heat the BBQ grill until hot. Grill each ribs pieces until the outside is brown but not burnt. Serve with lettuce and doenjang - Korean miso paste.

1 ½ lb ribeye steak, or any other well-marbled, tender cut
1 onion, 1/2 roughly chopped and 1/2 thinly sliced
3 cloves garlic cloves
½ pear, peeled and roughly chopped
3 spring onions, 1 cut into pieces and 2 sliced into 1/4-inch rounds
3 tablespoons brown sugar
1 teaspoon black pepper
⅓ cup soy sauce
3 tablespoons sesame oil
1 tablespoon canola oil
1 teaspoon sesame seed, for serving
2 cups cooked rice, for serving
Banchan (Korean side dishes), for serving (optional)

Steps:

  • Slice the beef as thinly as you can, then set aside in a large bowl. Using frozen or cold beef will make the slicing easier.
  • In a blender or food processor, blend the onion chunks, garlic, pear, green onion pieces, brown sugar, pepper, soy sauce, and sesame oil until smooth.
  • Pour the marinade over the beef, add the thinly sliced onion, then mix to coat evenly. Cover with plastic wrap and marinate in the fridge for at least 30 minutes, or overnight.
  • Heat the canola oil in a large skillet over high heat. Pat the meat dry.
  • Being careful not to crowd the pan, sear the marinated beef and onions until browned. Sprinkle with the sliced green onions and sesame seeds.
  • Serve with rice and side dishes.

¾ cup soy sauce
¾ cup brown sugar
¾ cup water
1 garlic clove, minced
2 green onions, chopped
1 tablespoon Asian (toasted) sesame oil
2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • In a bowl, stir together the soy sauce, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
  • Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.

5 pounds beef short ribs, cut flanken style
5 cloves garlic
1 onion, coarsely chopped
1 Asian pear, cored and cubed
1 cup soy sauce (such as Kikkoman®)
1 cup brown sugar

Steps:

  • Place the ribs in a large stockpot and cover with cold water. Soak ribs, refrigerated, for 1 hour to pull out any blood. Drain.

An iconic and popular Korean BBQ beef dish. Note - be sure to add 30 minutes marinade time to the prep and cooking time. As an option, you can add sliced onions, mushrooms, bell pepper and/or carrots. The traditional method is to use a charcoal grill, using a fine mesh grate or basket to keep the meat from falling through, but you can also pan fry or use a broiler.

1 lb sirloin, thinly sliced
3 tablespoons soy sauce
2 tablespoons light brown sugar (white sugar ok)
1 tablespoon honey (2 t sugar is also ok )
2 tablespoons rice wine (mirin or red wine works too)
1 tablespoon sesame oil
2 tablespoons garlic, minced
1 teaspoon ground black pepper
2 teaspoons toasted sesame seeds
1 tablespoon green onion, chopped
2 tablespoons pears, puree (Asian pear if available, or 1 Tbs grated kiwi or 3 Tbs onion puree work as well)

Steps:

  • Mix all of the marinade ingredients together except for the beef and any optional vegetables as mentioned in the description.
  • Add the beef (and any optional vegetables) to the marinade prepared above - in a large bowl or zip bag. Make sure the marinade is well mixed with the beef. You will need to use your hands here and just massage everything together.
  • While the beef is in the marinade, heat the charcoal until the coals are grey. Add the meat slices and any vegetables to the mesh tray or basket. Turn the beef slices (and vegetables if using) a time or two while cooking. They will only take a few minutes, but you want to make sure they are cooked through and slightly charred for the best flavor.
  • If pan-frying, pan should be hot enough so that the meat sizzles as it touches the pan. Also, if you put too much meat into the pan and/or the heat is too low, you will end up with a lot of the meat juice leaking out of the bulgogi and you end up with Bulgogi stew.
  • Serve with rice, or wrapped in lettuce leaves, or make a bulgogi bowl with rice on the bottom and beef and vegetables placed on top.

  • Marinate your boneless short ribs. In a plastic bag or plastic container add short ribs, kiwi, tamari (soy) sauce, sesame oil, garlic, onion, sesame seeds and white pepper mix and seal bag or container. Place your short ribs in the refrigerator overnight to marinade or at least 4 hours. The longer the marinade time the more tender the beef.
  • Step 2) Make your quick pickles. (optional) In a medium bowl, add your sliced cucumbers, chili peppers, rice vinegar, sesame oil, salt, sugar or sugar alternative of choice and white pepper. Stir until well mixed and set aside at room temperature for 15 minutes and then they are ready to eat. Consume within 24 hours.
  • Make your Gochuang Dipping Sauce. (optional) In a small bowl, add gochuang sauce, tamari (soy) sauce and sesame oil and mix well. Set aside.
  • Grill Korean Beef BBQ Kalbi. Take your marinated beef out of the refrigerator and allow to come up to room temperature about 20 minutes. Pre-heat and prepare your outdoor grill or indoor grill pan with a little olive oil or spray oil to prevent sticking. Grill boneless short ribs for about 1-2 minutes on each side over a medium hot grill. (Do not overcook, just get quick grill marks on each side) Sprinkle your tender and delicious Korean Beef BBQ Kalbi with a little toasted sesame seeds, if desired.
