MY KOREAN DIPPING SAUCE



My Korean Dipping Sauce image

This is my own version of dipping sauce. The best version is my mom's, but since she never measures and is too swift in the kitchen to get down the exact proportions (she always gives me amounts like it should be THIS much in your palm) what am I supposed to do with that kind of measuring system? This is the next best thing and second best is just as good, right? ;-)

Number Of Ingredients 9

6 tablespoons soy sauce (I use Kikkoman)
3 tablespoons water
1 tablespoon rice vinegar or 1 tablespoon cider vinegar
1 tablespoon sesame oil
1 tablespoon granulated sugar
1/4 teaspoon ground black pepper
1 garlic clove, crushed
1 bunch green onion, chopped
1 tablespoon korean red pepper paste (Gochujang) (optional) or 1/2 jalapeno pepper, sliced (optional)

Steps:

  • Mix all ingredients together and let sit for at least 2 hours in the refrigerator before serving to let the flavors blend.
  • This will be heavy in the green onion department, so if you don't want as much, cut it down a little, but we love them and the green onions are what all of us go for first.
  • This is great with any kind of steamed or fried dumpling (like Chinese dumplings or Korean mandu).

1 ½ lb ribeye steak, or any other well-marbled, tender cut
1 onion, 1/2 roughly chopped and 1/2 thinly sliced
3 cloves garlic cloves
½ pear, peeled and roughly chopped
3 spring onions, 1 cut into pieces and 2 sliced into 1/4-inch rounds
3 tablespoons brown sugar
1 teaspoon black pepper
⅓ cup soy sauce
3 tablespoons sesame oil
1 tablespoon canola oil
1 teaspoon sesame seed, for serving
2 cups cooked rice, for serving
Banchan (Korean side dishes), for serving (optional)

Steps:

  • Slice the beef as thinly as you can, then set aside in a large bowl. Using frozen or cold beef will make the slicing easier.
  • In a blender or food processor, blend the onion chunks, garlic, pear, green onion pieces, brown sugar, pepper, soy sauce, and sesame oil until smooth.
  • Pour the marinade over the beef, add the thinly sliced onion, then mix to coat evenly. Cover with plastic wrap and marinate in the fridge for at least 30 minutes, or overnight.
  • Heat the canola oil in a large skillet over high heat. Pat the meat dry.
  • Being careful not to crowd the pan, sear the marinated beef and onions until browned. Sprinkle with the sliced green onions and sesame seeds.
  • Serve with rice and side dishes.

1.5 tbsp gochujang*
2 tbsp rice vinegar

1/4 cup water
1 tbsp corn starch + 1 tbsp water, mixed

Steps:

  • Add all ingredients into a blender except corn starch + water slurry until smooth.
  • Add the mixture into a sauce pan over medium high heat and allow it to come to a boil.
  • Once it begins to boil, reduce the temperature down to medium low and add in the corn starch slurry. Whisk quickly until it thickens.
  • Remove from heat and allow the sauce to cool. Transfer into an airtight jar and store in the fridge for up to 10 days.

2 tablespoons Ketchup
½ teaspoon Cumin
½ teaspoon Garlic powder
1 teaspoon Paprika
½ teaspoon Ginger powder
1 tablespoon Rice Wine Vinegar
1 tablespoon Honey
2 tablespoons Light Brown Sugar
2 teaspoons Sriracha
⅓ cup Chicken broth
1 tablespoon Cornstarch
2 tablespoons Sesame oil
2 pounds boneless skinless Chicken Breasts (cut into 1-inch pieces)
sesame seeds (optional garnish)
sliced green onion/scallions (optional garnish)

Steps:

  • Combine the sauce ingredients in a small bowl: soy sauce, ketchup, cumin, garlic powder, paprika, ginger powder, rice vinegar, honey, brown sugar and sriracha. Whisk to mix together.
  • Combine the chicken broth and cornstarch; whisk to fully combine and dissolve the cornstarch.
  • Heat the oil in a large skillet (preferably non-stick) over medium heat. Add the chicken and cook 4 minutes, until white on the outside. The chicken should not be fully cooked at this point.TIP: allow the chicken to sit for about 20 seconds before stirring to cook on another side (vs stirring constantly).
  • Add the sauce to the skillet. Stir to coat the chicken. Cook for 3 minutes.
  • Pour the broth and cornstarch mixture over the chicken. Continue cooking for 4-6 minutes or until the chicken is cooked thoroughly and the sauce has thickened.
  • Serve over rice with a sprinkle of sesame seeds and sliced scallions!

2 Tbsp Korean soybean paste ((DoenJang))
1 1/2 tsp Korean chilli paste ((Gochujang))
1 Tbsp sesame oil
3/8 tsp minced garlic
3/8 tsp minced onion
3/4 tsp toasted sesame seeds
3/4 tsp maple syrup
1 Tbsp coarsely chopped pistachio nuts ((about 15 to 18 shelled pistachio nuts. You can use other nuts instead if you prefer))
1 tsp sesame oil
A pinch fine sea salt
A pinch ground black pepper
1 Tbsp soy sauce
1 Tbsp water
2 tsp white sugar
1 tsp white vinegar
A thin slice of onion (to be added in a serving plate)
A dab of wasabi paste ((from a tube) - to be pasted on the side of a serving plate)

Steps:

  • Mix the above ingredients in a bowl together. Distribute out to individual dip serving plates as needed.
  • Add the above ingredients in a serving plate directly. If you need to serve for more people, make them individually in a separate dip serving plate. (This is how my mum used to do it at her restaurant. You don't mix a big batch in a bowl.)
  • Mix the first four ingredients from above in a bowl. Stir until the sugar dissolves.
  • Distribute the sauce using a spoon (1 Tbsp measuring spoon works well) to an individual dip serving plate as needed.
  • Add the sliced onion in the sauce and wasabi paste on the side of the plate.

3/4 cup dark brown sugar
3/4 cup low-sodium tamari (or sub with low-sodium soy sauce)
1/4 cup water
1½ tablespoons chili paste (like Sambal Oelek)
1 tablespoon rice wine vinegar
1½ teaspoons toasted sesame oil
1/2 teaspoon freshly ground black pepper
1 teaspoon grated fresh ginger
5 cloves fresh garlic (or about 1 tablespoon, finely grated or squeezed through a garlic press)
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • In a saucepan combine the brown sugar, tamari, water, chili paste, rice wine vinegar, sesame oil, black pepper, ginger and garlic. Heat on high and bring to a boil.
  • Meanwhile, combine the cornstarch and water until smooth.
  • When the sauce is at a boil, whisk in the cornstarch slurry and reduce the heat to simmer until thick.
  • Once thick, let cool slightly before pouring into a clean jar. You could also add immediately to any stir-fry, or let it completely cool and brush on grilled chicken, shrimp skewers or salmon in the last few minutes of cooking.
  • Store in an airtight container for two to three weeks.

  • Remove octopus from the liquid. With a damp paper towel, wipe away skin and peel away the gelatinous, fatty layer from the meat. Chill meat until ready to use (the octopus can be prepped up to 3 days ahead).
