KOREAN WONTONS

Steps:
- In a wok or large skillet, stir-fry cabbage, bean sprouts and carrot in 1 1/2 tsp oil until tender; set aside.
- In a small skillet, brown ground beef until cooked through; drain and add to vegetable mixture.
- Stir in the green onions, sesame seeds, ginger, garlic, sesame oil, salt and pepper.
- Place about 1 tbsp of filling in the center of each wonton wrapper.
- Combine egg and water.
- Moisten edges of wonton wrappers with egg mixture; fold opposite corners creating a triangle and press edges together to seal.
- Heat remaining vegetable oil (2 tbsp) in a large skillet.
- Cook wontons in batches for 1-2 minutes on each side or until golden brown.
- Add additional oil if needed.

- In a large cast-iron or other heavy skillet, stir-fry cabbage, bean sprouts and carrots in 1-1/2 teaspoons oil until tender; set aside. , In a small skillet, cook beef over medium heat until no longer pink, crumbling the meat; drain. Add to the vegetable mixture. Stir in the onions, sesame seeds, ginger, garlic, sesame oil, salt and pepper., Place about 1 tablespoon of filling in the center of each wonton wrapper. Combine egg and water. Moisten wonton edges with egg mixture; fold opposite corners over filling and press to seal. , Heat remaining oil in a large cast-iron skillet. Cook wontons in batches until golden brown, 1-2 minutes on each side, adding more oil if needed.

GIANT WON TONS
This is a favorite of the men at parties. The first time I made them they were gone in a matter of minutes. These can be kept frozen in baggies until you are ready to serve them. When it is party time, take them out of the freezer, thaw for about one hour, then pop them in an oven for about 20 minutes until they are warm. Serve with BBQ sauce, honey mustard, and salsa for dipping.

- In a large frying pan, brown the beef in 2 tablespoons vegetable oil over medium heat. Mix in water chestnuts, onion, celery, and Worcestershire sauce until combined; there is no need to cook the vegetables. Season to taste with salt and pepper.
- Place one tablespoon of the beef mixture into the center of each wonton wrapper. Fold the sides of the wrapper over the filling, and then roll the wrapper up around the filling egg roll style.
- In an electric deep fryer or a heavy saucepan, heat oil to 375 degrees F (190 degrees C). Deep fry rolls until their wrappers are golden brown; fry in batches to maintain an even temperature. Once cooked, place the rolls on paper towels to drain. Serve warm.

KONA K'S GROUND BEEF WONTONS
These wontons are much healthier and lower in fat than those made with ground pork (especially if you use extra lean ground beef). They freeze really well, so you can make a bunch and freeze them for later use (just steam them straight out of the freezer).

Steps:
- Combine ground beef, napa cabbage, garlic, ginger and green onions in large bowl. Using your (clean) hands, combine all ingredients well.
- In another small bowl, mix the sesame oil, soy sauce, and salt and pepper.
- Pour the sesame oil mixture into the ground beef mixture, and mix well.
- Place a small amount of beef mixture (around 1 TB) in middle of wonton wrapper. Dip your finger into water, and trace around half the edge of the wonton wrapper. Fold the wrapper in half and use your fingers to crimp the edge shut. Make sure you don't put in too much mixture, or the wontons will explode.
- To cook -- if the wontons are fresh, steam for approximately 5-10 minutes (or until the inside is cooked thoroughly). If they are frozen, they will need to steam for about 5 minutes longer.
