Forget plain steaks, chicken or ribs at your summer barbecue! Instead, enjoy Big Island flavor by coating meats with this easy coffee rub from the Four Seasons Resort in Hualalai.

2/3 cup kona coffee beans
1/2 cup packed brown sugar
2 tablespoons coarse salt salt

Steps:

  • In food processor, combine all ingredients; process until coarsely ground. Store in airtight container.
  • To season steak: Coat both sides of 2-1/2-3-lb. boneless sirloin steak (about 1-inch thick) with 1/2 cup coffee mixture. Let stand at room temperature 30 minutes before grilling or pan-frying to desired doneness.

Keawe Grilled Baby Back Ribs with Kona Coffee Bbq Grilling and Dipping Sauce image

Number Of Ingredients 7

5 tablespoons Paniolo Rounemup seasoning (or use 2 tablespoons paprika, 2 tablespoons ground cumin, 1 tablespoon salt, 1 1/2 teaspoons ground black pepper)
2 1/2 tablespoons Kona coffee, finely ground
1 teaspoon salt
8 baby back ribs
30 ounces water
10 ounces Worcestershire sauce
2 (12-ounce) bottles Kona Coffee BBQ grilling and dipping sauce

Steps:

  • Preheat oven to 400 degrees F.
  • Grind the Paniolo spice together with the coffee and salt (or the coffee with paprika, cumin, salt and pepper). Rub spice mixture over all the ribs. Place ribs in a heavy roasting pan and cook uncovered for 12 minutes, drain off excess fat.
  • Lower the oven temperature to 375 degrees F.
  • Mix together water and Worcestershire sauce and pour around ribs. Cover pan tightly with foil and bake until tender, about 1 hour 45 minutes. Ribs may be prepared to this point a few days in advance.
  • To prepare barbecue, light the Keawe wood and allow it to burn until coals are medium hot and spread out. Cook ribs 3 minutes on each side and dip or brush ribs in the sauce and cook slowly for another 5 to 6 minutes. Be careful not to burn the ribs.
  • Warm a little Kona Coffee BBQ sauce to serve on the side. Serve with grilled corn and campfire potato salad or your favorite sides.

2 onions, roughly chopped
1 tablespoon minced ginger
2 tablespoons minced garlic
2 jalepenos, de-stemmed, roughly chopped
2 cups roma tomatoes, strained
2 cups strongly brewed Kona coffee
Pink salt and black pepper, to taste
1 pound baking potatoes, like russets, peeled and quartered
2 cups heavy cream
6 cloves garlic
1/4 cup chopped chives
4 (1/2 pound) pieces ahi tuna, cut into square cubes
1 cup all purpose flour
3 eggs, beaten with 1 tablespoon water
1 cup macadamia nuts, coarsely ground
1/2 pound salad greens, preferably Hawaiian
1 lime, juiced

Steps:

  • In a sauce pan coated lightly with canola oil, caramelize the onions, ginger, garlic and jalepenos. Add tomatoes and coffee and bring to a simmer. Using a hand blender, buzz until smooth and check for seasoning, adjust with pink salt and black pepper, to taste.
  • For the potato puree, boil the potatoes until fork tender. In a sauce pan, reduce the cream with the garlic cloves by 1/3. Hand mash with the potatoes and check and adjust seasoning. Fold in the chives.
  • Season the tuna well. Dredge the tuna in flour, then eggs, then nuts. Shallow fry in canola oil on all sides. Keep the tuna rare.
  • Slice the tuna on the bias. On a large plate, sauce the plate with the BBQ sauce. Place a small mound greens down and drizzle with lime juice. Top with mashed potatoes, then top with tuna.

2 tablespoons roasted garlic
1 onion, yellow, diced and caramelized
1 cup brown sugar, packed
2 cups coffee, strong Kona coffee
1 cup cider vinegar
2 cups ketchup
1 cup Worcestershire sauce
1 tablespoon celery salt
2 tablespoons dried chipotle powder
2 tablespoons Dijon mustard
1/2 cup honey

Steps:

  • Combine all ingredients in saucepan and bring to boil.
  • Reduce heat to simmer, and reduce by 1/2.
  • Using stick blender, blend until smooth.
  • Cool and use as needed.
