EASY KOLACKY
This simple Czech cream cheese pastry, pronounced kolotch-key, is a very old holiday favorite. Using Solo®-brand filling found in the baking aisle is a delicious time-saver. The prune flavor is scrumptious!

- Place the cream cheese and butter in a large bowl; beat with electric mixer until smooth and creamy. Beat 1/2 cup of confectioners' sugar into the butter mixture. Slowly beat in the flour; mix well. Cover bowl and refrigerate at least 3 hours, or overnight.
- Preheat an oven to 375 degrees F (190 degrees C).
- On a well floured board, roll out chilled dough to 1/8 inch. Use a pizza wheel to cut dough into 2 1/2 inch squares. Spoon approximately 2 teaspoons of filling in the center of each square; do not overfill. Fold opposite corners of each square into the middle to encase dough, pinching dough together in center. Filling should peek out a little at each end. Transfer cookies to an ungreased baking sheet.
- Bake the kolacky in the preheated oven until set but not brown, about 12 minutes. Remove to racks to cool. Dust cooled kolacky with remaining powdered sugar.

TEXAS SAUSAGE KOLACHES (KLOBASNEKS)
I grew up in Central Texas, where kolaches and sausage kolaches (also called klobasneks) were plentiful. Every donut shop and bakery had them. Then I moved to Seattle, where nobody had heard of them! I couldn't find a decent recipe online. Everything I tried didn't turn out as fluffy, sweet, and heavenly as the kolaches I know and love. I cobbled together this recipe for what I think is the perfect sausage kolache.

- Heat milk in a small saucepan over medium heat until it begins to bubble. Remove from heat immediately. Stir sugar, salt, and 1/4 cup butter into the milk and stir until sugar is dissolved. Set aside to cool to room temperature, about 10 minutes.
- Combine warm water and yeast in the large bowl of a stand mixer and stir until dissolved. Stir in cooled milk mixture, eggs, and 2 cups flour. Beat using the dough hook attachment until smooth. Add remaining flour, mixing as you go, just until dough is elastic and slightly stiff, but not dry.
- Turn dough out onto a floured board and knead until smooth and very elastic, 10 to 15 minutes. Coat dough lightly with butter or oil and place in a bowl. Cover with plastic wrap or a damp towel and let sit in a warm place to double in size, about 1 hour.
- Meanwhile, cut sausages in half and pat dry; this is important. Thinly slice Cheddar cheese block from the short end so that each slice of cheese is about the same length as the halved sausages.
- Preheat the oven to 350 degrees F (175 degrees C). Lightly oil a baking sheet.
- Turn risen dough out onto a very lightly floured board. Roll into a log, cut into 5 equal pieces, and cut each piece into quarters to make 20 equal-sized pieces of dough. Use the palm of your hand to flatten and press 1 piece into a circle or oval. Place the circle on the board and add 1 piece of Cheddar cheese topped with 1 dry halved sausage. Roll dough around fillings and very tightly pinch all seams together to seal. Smooth seams down and place kolache on the prepared baking sheet. Repeat with remaining dough and filling to make 20 kolaches.
- Bake in the preheated oven until golden, 12 to 15 minutes.

BOHEMIAN KOLACHES

- In a small bowl, dissolve yeast and 1 tablespoon sugar in warm milk; let stand 10 minutes. In a large bowl, combine 2 cups flour, remaining sugar, egg yolks, salt, butter and yeast/milk mixture. Mix until smooth. Add enough remaining flour to make a stiff dough. , Turn out onto a floured surface and knead until smooth and elastic, 6-8 minutes. Add additional flour if necessary. Place dough in greased bowl, turning once to grease top. Cover; let rise in a warm place until doubled in bulk, about 1 hour. , Punch dough down and allow to rise again. Roll out on floured surface to 1/2-in. thickness. Cut with large glass or 2-1/2-in. cutter. Place on greased baking sheets; let rise until doubled, about 45 minutes. , Firmly press indentation in center and fill each roll with a heaping tablespoon of filling. Brush dough with egg white. Bake at 350° for 10-15 minutes or until rolls are light golden brown.

Also spelled "kolachkes", these sweet yeast buns have both Polish and Czech roots. They are usually filled with poppy seeds, nuts, jam or a mashed fruit mixture.

- In a large bowl, dissolve yeast in water. Add the sugar, pudding mix, sour cream, oil, salt, eggs and 2 cups flour. Beat until smooth. Stir in enough of the remaining flour to form a soft dough. Cover and refrigerate dough overnight., Punch dough down. Turn onto a lightly floured surface; divide into 24 pieces. Shape each into a ball. Place 2 in. apart on greased baking sheets. BREAKFAST KOLACHES
This is a recipe that my family has created for a portable breakfast. It uses a bread machine for the dough preparation. The filling can be with a variety of things. We like the sausage, cheese, and hash browns for a breakfast meal. I prepare the recipe by filling the kolaches the night before, and keeping them in the refrigerator overnight. In the morning, I set out the kolaches to warm to room temperature while the oven is preheating, and then cook them for a quick, hot breakfast.

- In the order suggested by the manufacturer, place milk, egg, egg yolk, bread flour, salt, butter, sugar and bread machine yeast in bread machine. Select Dough cycle, and press Start.
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
- On a lightly floured surface, punch down dough, and divide into 36 pieces. Roll pieces into balls. Arrange balls in a single layer on the prepared baking sheet, about 2 inches apart. Allow balls to rise 15 to 20 minutes.
- Flatten balls, and make a depression in the center of each. Fill each with 1 piece of sausage, about 1 tablespoon hash browns, and 1 quarter slice of cheese.

KOLACE
Pronounced "KO-la-chay" - this is a traditional Czechoslovakian recipe that my grandmother always made. She made them so often that she knew this recipe by heart. My favorite filling was poppyseed.

Steps:
- Bring milk to a boil.
- Add butter, sugar& salt; mix& let cool for 5 minutes.
- Stir eggs, proofed yeast& flavoring of choice into the milk mixture.
- Place milk mixture into bowl of mixer, fitted with paddle attachment.
- Sift in enough flour to make a thick batter.
- Change mixer attachment to a dough hook.
- Continue adding flour, until mixture forms a soft dough.
- Turn dough out onto floured surface, and knead into a smooth dough that does not stick.
- Place dough into a greased bowl, cover& let rise in a warm place until doubled in bulk.
- Punch dough down.
- Cut dough into even, egg-sized pieces.
- Work each piece of dough into a 3inch circle in palm of hand with fingers of other hand.
- Place about 1/2tsp of filling in the middle; draw up sides of dough around filling& pinch FIRMLY to seal.
- Place each kolace on a well-greased cookie sheet, approx 2 inches apart.
- Cover& let rise again in a warm place.
- While kolace are rising, mix together the ingredients for the crumb topping.
- Once risen, brush with beaten egg mixed with 1T milk.
- Preheat oven to 400.
- Sprinkle kolace with crumb mixture.
- Bake for about 30 minutes or until golden brown.
- Remove kolace from pan& cool completely on a wire rack.
- When cool, dust liberally with vanilla sugar.

KOLACE
This is the recipe that I learned to make when I was little from my Czech grandmother. She would bake these by the dozens and since I was the only granddaughter that lived in town, I got to be her helper. These pastries are also sold at the annual Czech Days in Tabor South Dakota by the thousands. The women of the area prepare hundreds of dozens of these every year to be served with meals at the Beseda Hall and at the Legion home and are also sold by the dozens to visitors to the celebration. The most popular fillings are prune and poppyseed, although cherry, apricot and cottage cheese are also popular.

- Scald milk and set aside to cool until lukewarm.
- Remove 1/2 cup of the cooled scalded milk to a small bowl, add 1 teaspoon of the sugar and stir in yeast. Let work for about 10 minutes.
- While yeast is working, beat the eggs, add sugar, then cream, oil, salt and the rest of the scalded milk.
- In large bowl have ready 6 1/2 cups flour. Make a well in the flour and add the dissolved yeast. Stir and then add in the beaten ingredients.
- Beat until smooth.
- Add 1/4 cup of flour at a time until you have a slightly sticky dough.
- Beat well with a wooden spoon for 5 minutes.
- Let dough rest 10 minutes and then stir well with wooden spoon again.
- Cover with a tea towel and let rise about 1 hour, until doubled in bulk.
- Stir down and cut off tablespoon size balls.
- Shape into balls and place on a greased cookie sheet about 2 inches apart.
- Brush with melted shortening.
- Let rise until doubled.
- Make a depression in the middle of the ball with your thumb, and press outward to form an opening for the filling about the size of a 50 cent piece, pressing the bottom paper thin without tearing the dough.
- Add a teaspoon of filling to each kolace and smooth out to edge of opening. I use Solo brand poppy seed filling for most as that is our favorite and cherry pie filling for the rest.
- Let the filled kolace rise 15-20 minutes or they will look like a volcano erupting when baked.
- Bake at 425 for 8 minutes until lightly browned.
- Remove from pan with a spatula as you would cookies and cool on wire rack. Brush kolace with melted butter as soon as removed from oven to keep the dough soft.
- These freeze well once they are cooled--if they last that long.
