KOHLRABI AND EGG NOODLES
This is a recipe that my husband introduced me to from my mother-in-law. It is a Hungarian dish; it is really easy and really good. I like No Yolks® noodles.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in boiling water, stirring occasionally, until cooked through yet firm to the bite, about 5 minutes; drain.
- Melt butter in a skillet over medium heat. Add kohlrabi, season with salt and pepper, and cook until the kohlrabi is tender, 7 to 10 minutes. Stir the drained egg noodles into the kohlrabi; cook and stir until the noodles are slightly fried, 5 to 7 minutes.

STIR FRIED RICE NOODLES WITH KOHLRABI
Kohlrabi is a turnip like vegetable that when cooked enhances it's sweetness and adds a light crisp. I love hoisin sauce and candied peanuts on noodle bowls

Steps:
- 1. Cook the noodles according to package directions. Drain and set aside. Mix the soy sauce, wine, brown sugar and chili oil together and set aside.
- 2. Add 1 tbsp peanut oil to a skillet. Add the beaten eggs and when set on the bottom fold the eggs over themselves then remove from the pan to a cutting board. Slice in thin slices. Set aside.
- 3. In a large skillet or Wok add the remaining oil. Add the kohlrabi and saute until lightly browned. Add the garlic and cook 30 seconds. Add the red bell pepper and sugar snap peas. Cook until crisp tender.
- 4. Add the soy sauce mixture, noodles, eggs, bean sprouts, and scallions. Cook and toss until the sauce coats all the ingredients and everything is warmed through. Stir in the basil
- 5. Garnish with hoisin sauce and candied peanuts if desired.

- Spread the kohlrabi noodles out on a baking tray and drizzle over the olive oil, sprinkle over smoked paprika and season with salt and pepper, generously. Toss to coat thoroughly.
- Bake in the oven for 10-15 minutes and then flip over. Bake for another 10-15 minutes or until browned, flipping every 5 minutes if necessary (if your oven starts burning the fries.)
