KOHLRABI AND APPLE SLAW
I came up with this recipe when my husband decided to grow our own kohlrabi and I had never had it before. This makes a different but tasty slaw that will go well with most everything.

- Whisk mayonnaise, vinegar, lemon juice, mustard, and sugar together in a bowl.
- Toss kohlrabi and apples together in a large bowl; pour mayonnaise mixture over kohlrabi mixture and toss to coat. Season with salt and pepper.

- Whisk 3 tablespoons olive oil, 2 tablespoons each white balsamic vinegar and chopped chives, 1 teaspoon dijon mustard, 1/4 teaspoon sugar and a pinch of salt in a large bowl. Cut 2 peeled kohlrabi and 1 large Granny Smith apple into matchsticks. Add to the dressing along with 3 tablespoons roasted salted sunflower seeds. Season with salt and pepper and toss.

- Toast caraway seeds in a small dry skillet over medium heat, tossing often, until fragrant, about 3 minutes. Let cool, then coarsely chop.
- Whisk caraway, oil, vinegar, and mustard in a large bowl; season with salt and pepper.
- Add kohlrabi, frisée, apple, and 2 tablespoons chives to bowl with dressing and toss to coat; season with salt and pepper.
- Top salad with remaining 2 tablespoons chives just before serving.

- In a medium mixing bowl whisk together mayo, apple cider vinegar, salt, and pepper. Once combined, stir in currants and set aside. Adding the currants to the dressing early will cause them to plump up, and who doesn't want plump currants?
- Cut your kohlrabi and your granny smith apple into matchsticks. This can be done with a knife, or if you have a mandolin slicer, it'll speed things up. Then finely dice the red pepper and mince the red onion.
- Add vegetables and walnuts to the bowl with the dressing, then fold to combine.
- You can serve immediately, but I find this salad is best if placed in the fridge for an hour to chill and to allow time for the flavors to combine.
ASIAN KOHLRABI AND APPLE SLAW

- Using a knife carefully cut the skin and stems from the kohlrabi (the skin is very thick so a regular vegetable peeler won't do the trick). Sliver or grate the kohlrabi (if grating, use the largest holes of the grater). Place it in a large bowl. Peel, core and sliver or grate the apples, then add them to the kohlrabi.
- Place the ginger, mustard, olive oil, fish sauce, sesame oil and salt and pepper in a food processor fitted with the regular steel blade, or a blender, and processor until fully blended and smooth. Toss the slaw with the dressing, garnish with sesame seeds if desired, and serve.

- Julienne or grate the apple. Peel the kohlrabi and julienne or grate them. If grating, then take handfuls of kohlrabi and apple and squeeze out the excess moisture with your hands. Do this in batches. Lay the squeezed mounds on a paper towel and press down to remove remaining moisture. Add to a mixing bowl.
- Add all the dressing ingredients to a small jar and shake to combine. Taste and adjust seasoning. Refrigerate until ready to serve the salad.
- Dress the salad just before serving: pour the dressing over the kohlrabi and apples. Add raisins. Toss to combine making sure it’s evenly coated.
