CHOCOLATE CHIP PUMPKIN BREAD

I make this recipe during the holidays. It is moist, and freezes well! I bake them in coffee cans, and wrap them in colored cellophane to give as gifts.

3 cups white sugar
1 (15 ounce) can pumpkin puree
1 cup vegetable oil
⅔ cup water
4 eggs
3 ½ cups all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
2 teaspoons baking soda
1 ½ teaspoons salt
1 cup miniature semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 1 pound size coffee cans, or three 9x5 inch loaf pans.
  • In a large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips and nuts. Fill cans 1/2 to 3/4 full.
  • Bake for 1 hour, or until an inserted knife comes out clean. Cool on wire racks before removing from cans or pans.

3 1/3 cups unbleached all purpose Flour
1 tsp pumpkin pie spice
1 tbsp Cinnamon
2 teaspoons Baking Soda
1 teaspoon Baking Powder
1 1/2 teaspoon Salt
2 2/3 cups Sugar
2/3 cups Softened Butter
4 Eggs
1 pound (or 1 30oz can or 2 15oz cans) Mashed Pumpkin
2/3 cups Water
1 cup Semi-Sweet Chocolate Chips

Steps:

  • Preheat oven to 325 degrees. Sift together dry ingredients and set aside. Cream sugar and butter until well incorporated. Add eggs one at a time and then add the mashed pumpkin. Alternate adding dry ingredients with water. Fold in chocolate chips. Pour into three large greased bread pans and bake at 325 degrees for 55 to 60 minutes or until a toothpick inserted into the middle of the loaf comes out clean.

15 ounces pumpkin puree
3 eggs
3/4 cup sugar
3/4 cup brown sugar
1/2 cup vegetable oil
1/2 cup sour cream
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 teaspoon vanilla
2 Tablespoons fresh orange juice
1/2 Tablespoon molasses
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 cups flour
2 cups chocolate chips

Steps:

  • In a large mixing bowl combine pumpkin, eggs, sugar, brown sugar, oil, sour cream, cinnamon, nutmeg, cloves, vanilla, orange juice and molasses.
  • Stir until well blended.
  • Add in baking soda, baking powder, salt, and flour.
  • Stir in just until combined. Then fold in all but 1/3 cup of chocolate chips.
  • Grease and flour 2 9 x 5 inch loaf pans.
  • Heat oven to 350 degrees.
  • Pour batter into both pans. Sprinkle extra chocolate chips on top of both loaves (optional).
  • Cook for about 40 minutes, then cover both loaves loosely with foil and bake for another 10-15 minutes or until toothpick inserted comes out clean.
  • Remove from oven and let set in pan for about 10 to 15 minutes.
  • Then invert to a wire rack to finish cooling.
