POLISH NOODLES (COTTAGE CHEESE AND NOODLES)
This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

Steps:
- Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
- Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.

NOODLES AND KRAUT
I sampled this recipe at a 25th anniversary party and was told it was a family favorite, courtesy of a Polish grandmother. I shared the recipe with my sister-in-law's family and she told me her five-year-old son loved it so much that he would eat it cold for breakfast! Every time our family gathers now, someone brings this dish.

- Cook noodles according to package directions; drain. , In a small skillet, melt butter. Add onion; saute until tender. Add noodles and sauerkraut; cook and stir over medium heat for 2 minutes. Reduce heat; simmer, uncovered, for 10-15 minutes, stirring occasionally.

Aunt Kate used to make this all the time! Not very good on the waist, but man it was good! I've realized over the years that ethnic recipes not only stuck to your ribs, but went to your waist and hips as well!!

Steps:
- 1. Add a can of sauerkraut and 1 can water to pot and bring to a boil. Turn heat down to simmer and cook for about an hour until sauerkraut is tender.
- 2. While the sauerkraut is cooking, boil noodles according to package directions.
- 3. Remove salt pork from rind and dice. Put in hot skillet and fry on medium heat until pork is brown and drippings are rendered. Remove pork and discard, keeping the drippings.
- 4. Drain sauerkraut well and return to pot. Add drained noodles gradually until you have a good equal mix. Add a little pork drippings and stir.
- 5. Stir gently and cook on low heat. Add more drippings if needed. Add salt and pepper to taste, AFTER tasting sauerkraut. simmer on low heat for about 1/2 hour stirring frequently, until flavors are blended. Serve hot with Kielbasa or smoked ham.

Polish egg noodles are made with three simple ingredients: flour, water, and eggs. The dish is child-friendly and is often served with chicken soup.

- In the bowl of a stand mixer or food processor (or by hand), combine flour and salt. Add eggs and enough water so dough forms into a ball.
- Knead until smooth and elastic, about 5 to 8 minutes. Cover with plastic wrap and let rest 30 minutes.
- Roll out dough on a floured surface as thinly as possible. Do not cover. Let dry for 30 minutes but no longer otherwise it will crack when you try to cut it.
- Either roll the dough into a cylinder and slice, or slice dough into 3-inch wide strips, flour and stack them on top of each other, then slice 1/8-inch to 1/4-inch across.
- Scatter noodles across a floured surface so they don't stick together. Let dry 30 minutes. Cook in boiling, salted water 5 to 10 minutes, depending on thickness and your preference. Drain.
- If you want to save the noodles for later use, make sure they are completely dry before storing.

EASY POLISH NOODLES
Growing up in South Bend, Indiana, Polish dinner buffets are extremely common at weddings and funerals. Polish noodles are a staple at these events and served alongside Polish sausage, green beans, mashed potatoes and chicken gravy, and fried chicken. While at a Polish meat market, an elderly Polish lady passed this recipe on to me upon request.

- Fry bacon until crisp and set aside. In same pan with bacon grease, cook onion until tender and translucent.
- In crock pot, add sausage, onions, garlic powder, sauerkraut, noodles, soup, and mushrooms. Stir gently until mixed while adding salt and pepper to taste.
- Crumble bacon and layer on top of mixture in crock pot.
- Cook on high for 4-5 hours stirring occasionally.

POLISH DELIGHT CASSEROLE
I have no idea where this recipe originated, but it is the ultimate Polish comfort food to me. It is a very versatile recipe, as I have made it several times with cooked, sliced cabbage instead of the sauerkraut; substituted cream of celery soup for cream of chicken, and I have even made this once using ham in place of the pork. It uses simple ingredients, and only needs a big loaf of bread or fresh rolls with butter to satisfy any growling belly:)

- In large skillet, heat oil over medium heat.
- Add meat and saute until browned, about 10 minutes.
- Stir in mushroom and chicken soups, onion soup mix, celery, pepper, and garlic powder.
- Spoon into 13x9-inch casserole dish.
- Cover.
- Bake at 350 degrees until tender, 45 minutes- 1 hour, stirring occasionally and adding up to 1 cup of water if needed.
- Add cooked noodles and sauerkraut and stir to combine.
- Cover and bake for 30 minutes longer.
KLUSKI Z KWAśNA KAPUSTA (POLISH NOODLES AND SAUERKRAUT)
Steps:
- Gather the ingredients. Pre heat oven to 350 F.
- In a Dutch oven, sauté onion in butter until translucent. Add kraut and cook over medium-low for 15 minutes, stirring frequently.
- Add cooked noodles to the sauerkraut mixture in the Dutch oven. Add undrained mushrooms, mixing thoroughly. Adjust seasonings if necessary.
- Transfer to a large casserole dish that has been coated with cooking spray.
- Bake 45 minutes or until top just starts to brown. Serve hot.
