KIWI CRISPS
This is New Zealander version of chocolate chip cookies. There are no kiwis or Kiwis harmed in making this recipe. As the recipe name indicates, they are crispy, rather than soft.

Steps:
- Preheat the oven to 180°C
- Beat the butter and sugar until pale and creamy.
- Add sweetened condensed milk and vanilla and mix well.
- Add flour, baking powder and chocolate, mixing to firm dough. Add a little extra flour if the dough is sticky.
- Roll into balls and place on a cold greased tray. Press gently with a fork.
- Bake for 15-20 minutes until golden.
- Cool on a cake rack and store in an airtight container once cold.

- In a large bowl, combine the dry ingredients. In a small bowl, whisk the egg, milk and butter. Stir into dry ingredients just until moistened. Fold in kiwi and raisins. , Fill paper-lined muffin cups three-fourths full. Bake at 425° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

- Peel the kiwis. I use a spoon inserted directly under the skin and I then turn the kiwi, keeping the spoon towards the surface of the skin (see the video for a demonstration). You can alternatively use a paring knife to slice the skin off or a vegetable peeler.
- Place on a dehydrator sheet and dehydrate at 135°F (37°C) for 6-12 hours. If you do not have a dehydrator you can also place these on a cookie sheet in the oven at the lowest temperature, checking them after about 4 hours since an oven tends to be hotter. These should be slightly chewy when done.
