4 kiwi fruits, peeled, cut into bite-sized pieces
1/3 cup low fat cottage cheese
4 flour tortillas
4 tablespoons reduced-calorie peanut butter

Steps:

  • Mix kiwifruit with cottage cheese; set aside.
  • Spread each tortilla with 1 Tbsp of the peanut butter.
  • Divide fruit mixture evenly among tortillas.
  • Roll up and eat.

This mexican dessert is a not too sweet treat. The roll ups are a nice way to end a summer meal. For a treat, very lightly dust the roll ups with icing sugar. They are also perfect as a snack. By Mission Foods.

2 large flour tortillas
3 ounces strawberry cream cheese
3 kiwi, peeled and sliced
1 cup peach, sliced (fresh, frozen or canned -if using canned, make sure there is very little syrup or juice on them i.e.)
1 cup strawberry, diced
mint sprig (optional)
icing sugar (optional)

Steps:

  • Spread cream cheese on the whle surface of each tortilla; Arrange kiwi slices over the top 2/3 of the tortilla, leaving the bottom 1/3 with cream cheese only.
  • Top kiwi with a layer of peach slices and then diced strawberries.
  • Roll the tortilla toward the end only covered with cream cheese.
  • Chill for 10 minutes.
  • Slice each tortilla roll into 8 slices each; Garnish with mint sprigs if desired.

The chutney is a good marinade for chicken or fish, but spread cream cheese on a tortilla, add the chutney to rice, and you have a awesome wrap! Adapted from Kiwi Cove Lodge, in British Columbia.

Number Of Ingredients 12

2 tablespoons lime juice
1 garlic clove, minced
2 tablespoons olive oil
1 teaspoon curry powder
1 jalapeno pepper, minced (more or less, to taste)
1 teaspoon cumin
1 teaspoon honey
1/4 cup purple onion, chopped
6 kiwi fruits, chopped (or pureed)
1 3/4 cups cooked rice
cream cheese
tortilla

Steps:

  • Mix lime juice through kiwi fruit to make a lovely chutney. You may use this to marinade chicken or fish.
  • Mix chutney with rice, and refrigerate for about an hour. Spread about 1 tbls. of cream cheese on a tortilla, add aobut 1/4 cup rice/chutney mixture and roll up. You may add whatever else you like to make this to your taste!

  • Peel your fruit. Place in a food processor or blender along with remaining fruit and juice. Blend all ingredients until smooth.
  • Pour on dehydrator tray until all even. If you are using an oven, you will need to use a baking sheet with plastic on it. See notes for oven recipe.
  • For the dehydrator recipe, simply cover and turn on 135F for 5-7 hrs. (See notes for OVEN OPTION)
  • Once you get the consistency you like for fruit roll ups, turn off the dehydrator. Make sure they aren’t sticky in the middle first.
