SLOPPY JOES
This simple version of sloppy Joes, the classic sandwich served in school cafeterias and at kitchen counters across the country, comes together in about 20 minutes and can be made with ground beef, chicken or turkey. As the name suggests, they are messy, so serve with a fork and plenty of napkins.

- In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
- Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
- Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

- In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, and garlic; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes.
- Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
- Stir tomato sauce, ketchup, and Worcestershire sauce into beef mixture in skillet. Simmer until thickened, stirring occasionally, 6 to 8 minutes.

- make the 'meat': Pulse the mushrooms and walnuts in a food processor in batches until it breaks down into a ground beef texture.
- cook: heat the oil in a large skillet over medium high heat. Add the onions, bell pepper and minced garlic, and let cook for 5 minutes or until the veggies soften. Add the prepared mushroom mix to the skillet, stir so everything is well combined and let cook for 5 minutes. Add the remaining ingredients: ketchup, brown sugar, dry mustard, cayenne, tomato paste, Worcestershire sauce, and apple cider vinegar. Stir everything together and let simmer for 5 minutes. Adjust with additional salt to taste.
- assemble: Serve the prepared sloppy joe mix on top of toasted buns. Best when served the day it's prepared. I find the sloppy joes mixture looses that texture on day two.

Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

- Melt butter in a large pot over high heat.
- Ad garlic and onion, cook for 2 minutes until onion is almost translucent.
- Add capsicum and cook for 2 minutes until softened.
- Add beef and cook, breaking it up as you go, until it changes from red to brown.
- Add remaining ingredients. Mix well, then turn heat down to medium low (or low for strong stoves).
- Cover and cook for 30 minutes, stirring once or twice to make sure it doesn't catch on the base. (If in rush, cook 15 minutes without lid)
- Remove lid and give it a good stir for a minute. Mixture should be thick, not runny and saucy (see video). Adjust salt to taste.
- Toast rolls. Butter if desired (I don't).
- Pile on lots of filling, immediately top with cheese (heat should semi melt, otherwise pop under broiler/grill). Top with lid and serve immediately!

- BROWN the GROUND BEEF in a skillet over medium heat, breaking meat up with spatula as it cooks, while stirring occasionally.
- MEANWHILE as the meat is browning, drop approximately 1 halved medium red bell pepper and 1 quartered green bell pepper into a food processor while running, until pepper pieces are as fine as they will chop.
- DRAIN the GROUND BEEF if necessary after it has browned.
- COVER the skillet with ground beef; REDUCE heat to lowest setting to keep warmed.
- WHISK the following SAUCE ingredients well in a medium bowl: 1 (6 ounce) can quality tomato paste, 1/2 cup water, 1/2 cup Karo light corn syrup, 1/2 cup Heinz distilled white vinegar, 1 tablespoon cornstarch, 1 tablespoon minced onion flakes, 1 teaspoon unseasoned sweet chili powder, 1 teaspoon plain salt, 1/2 teaspoon Lea & Perrins Worcestershire sauce, 1/4 teaspoon ground allspice, 1/8 teaspoon ground cloves, 1/8 teaspoon garlic powder, 1/8 teaspoon red chili flakes, 1/8 teaspoon white pepper.
- POUR the sauce mixture into a medium saucepan; ADD one bay leaf; STIR in the chopped BELL PEPPER.
- BOIL the sauce mixture for one full minute while whisking constantly; REDUCE heat to medium; COOK for 5 minutes, whisking occasionally; REMOVE bay leaf; SEASON to taste with salt if necessary.
- ADD sauce to cooked GROUND BEEF in saucepan; STIR until mixture is thoroughly combined; COVER; KEEP warmed.
- TO PREPARE SLOPPY JOES: For toasted steamed buns if desired, melt butter a large skillet over medium heat; PLACE place halved buns cut-side down; REDUCE heat and cover until buns are browned on bottom and heated through. Spoon sauce over warmed hamburger buns (you may customize your Sloppy Joes to your own preference, such as adding powdered parmesan cheese and/or shredded cheddar cheese, or other extras).

- To make the sloppy (BBQ Sauce) heat a saucepan over medium high heat and add the oil, onion, garlic, and thyme and a pinch of salt
- Cook stirring often until the onion is softened but not browned, about 5 minutes.
- Meanwhile, combine the sugar and water in a skillet over medium high heat.
- Cook, stirring the sugar in the skillet until the caramel is dark brown.
- Add the vinegar and clam juice and simmer until caramel is dissolved.

SLOPPY JOE'S HAND PIES
Hands down, these sloppy joe pies are the best main course to serve for Halloween. They are meaty, delicious and oh so creepy!

- Combine the flour and salt in a mixing bowl and whisk together.
- Place water, butter and shortening in a sauce pan and bring to a boil.
- When the fats have melted and the water is boiling, pour into the flour and stir with a spatula.
- Once the dough has cooled enough to touch, kneed for 5 minutes.
- Divide two thirds of the dough into four large balls and one third of the dough into four small balls. Cover and refrigerate until chilled.
- In a dutch oven, melt butter over medium high heat.
- Add vegetables to the pot and saute until the vegetables are tender.
- Stir in the ground beef, breaking it up with a spoon.
- When the beef is browned, stir in the flour then add the red wine, tomato paste and water.
- Cook until the sauce is very thick and most of the water has evaporated.
- Mix in the rosemary and season with salt and pepper to taste, then chill.
- Roll out one of the larger dough balls between two sheets of parchment. Use the hand as a guide, making sure that there's excess to hang over the sides of the mold.
- Press the dough into the mold then fill two-thirds full with sloppy joe mixture.
- Using the mold, make a hand template out of paper.
- Roll out one of the small dough balls between two sheets of parchment and then cut out a hand shape using the template you just created.
- Trim the bottom crust so that there's about half an inch of dough all around. Place the cut out dough on top of the filling and roll the bottom crust over the top, pressing the dough to make a tight seal.
- Place hand mold open side down on a cookie sheet lined with parchment and place in the freezer until completely frozen.
- Repeat the process for the next three hands.
- Preheat oven to 450F
- Pull the plastic mold off of the frozen hands then let warm up at room temperature for 15 minutes.
- Using a small, sharp knife, cut the dough out of the wrist and reshape dough to resemble cut skin.
- Cut slits in the knuckles and places where skin naturally folds and wrinkles.
- Make indentations around the fingernails.
- Make egg wash by whisking together the egg and cream, then brush onto hands.
- Reopen any slits that have closed up.
- Mix together wine and tomato paste and brush into slits, fingernails and then all over.
- Reopen any slits that have closed up.
- Bake for 45 minutes, checking the hands at 15 and 30 minutes for any slits that have closed. Also reposition the hands in the oven so they bake evenly.
- Make a "bone" out of a white carrot, parsnip or parsley root with a vegetable peeler and roast until cooked but still firm.
- Once the hand pies are done baking, insert the bone into the wrist.
