EASY STRAWBERRY SPINACH SALAD



Easy Strawberry Spinach Salad image

This recipe uses bottled dressing instead of dressing from scratch. My kids liked it better than the scratch recipe. I also use prepackaged baby spinach. Makes it easier on me!

6 ounces baby spinach leaves, rinsed and dried
1 pint fresh strawberries, thinly sliced
1/2 cup thinly sliced sweet onion
1/2 cup bottled balsamic vinaigrette
1 tablespoon sugar

Steps:

  • In a small mixing bowl, stir together salad dressing and sugar until sugar is dissolved.
  • In a large mixing bowl, toss spinach, strawberries and onion. Drizzle with dressing and toss to coat.

Plan ahead the dressing needs to chill for 2 or more hours before using, feel free to use different cheese and nuts, I have tried this using other but I have to say the feta and candied walnuts are the best... you will LOVE this salad!

3 tablespoons sugar (or more to taste)
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar (can use white balsamic is better)
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1/4-1/2 teaspoon fresh ground black pepper
2 tablespoons poppy seeds (can use more)
1 pint fresh strawberries, sliced (washed then thoroughly dried before slicing)
1 lb fresh baby spinach leaves, trimmed (can use less)
1 small red onion, sliced
1/4 cup bacon bits
1/3-1/2 cup crumbled feta cheese
1/3 cup candied walnuts

Steps:

  • For dressing; in a bowl or in a food processor mix together sugar, olive oil, balsamic vinegar, paprika, Worcestershire sauce and 1/4 teaspoon black pepper; whisk or process until well combined; start with 3 tablespoons of sugar and add in more after if desired, mix in poppy seeds and season with more black pepper if needed, refrigerate for 2 or more hours.
  • For the salad; combine all salad ingredients in a large bowl; pour the dressing over and chill for 10-15 minutes before serving.

This is so refreshing and not too hard to make! It almost makes itself! You could use beef in place of the chicken, or turkey. Use melon, oranges, pineapple or papaya as fresh fruit alternatives.

4 cups torn baby spinach leaves
2 cups cubed cooked chicken
2 cups strawberries, cut in half
1 cup green grape
1/4 cup Italian salad dressing
1/4 cup orange juice
1 tablespoon Dijon mustard
1 dash pepper
2 tablespoons sliced almonds, toasted

Steps:

  • Arrange spinach on 4 chilled plates.
  • Place chicken onto spinach and top with strawberries.
  • In a small bowl, combine salad dressing, orange juice and mustard and mix well.
  • Drizzle over salads and top with almonds.

This salad isn't too sweet, even with the strawberries. It has a good texture with the Monterrey Jack Cheese & the walnuts.

1 (6 ounce) bag Baby Spinach
1 pint sliced strawberry
1 cup shredded monterey jack cheese
1/3 cup chopped walnuts
3/4 cup sugar
1 cup olive oil
1/2 cup red wine vinegar
1/2 teaspoon paprika
1/4 teaspoon pepper
1/2 teaspoon salt
2 -3 garlic cloves

Steps:

  • Make the dressing at least 6 hours ahead of time. I put it in a shaker & shake it every so often thoughout the day. Store it in the refrigerator.
  • Mix the salad ingredients together shortly before serving. Add dressing before serving.
