KITTENCAL'S SALAMI CHEESE OMELETTE
This has been a tradition on weekend mornings at my house for years! This makes enough to feed two hungry men or even three people, the ingredients can be decreased and adjusted to suit taste, I really don't even measure when I make this omelette so the ingredients below are only estimated. I usually purchase the unsliced whole salami chubs for this it is easier to cut into pieces, and also try to purchase the all beef, the taste is much better. If you are planning to make this omelette on a regular basis as I do (and you will, it is so good!) a short cut, is to purchase a whole salami, cut into small pieces and then freeze, it will be handy in your freezer when you want it. If you have any leftovers (which you probably won't lol!) the cold omelette mixture makes a fabulous sandwich. Regular white onions just don't work for this omelette use only green!

Steps:
- Whisk the eggs with baking powder, half and half together well with the salt and pepper; set aside.
- In a medium frypan melt about 2 tablespoons butter (can use more or less butter) and brown the salami pieces.
- Add in the green onions to the salami, and fry until soft (about 2 minutes).
- Pour in the egg/cream mixture.
- Then sprinkle with grated cheese.
- Adjust with more salt and pepper if desired.
- Cover frypan and cook until eggs are soft and fluffy, turning egg mixture occasionally with a spatula.
- *NOTE* don't overcook the eggs, you want them soft and fluffy.
- Delicious!

KITTENCAL'S FLUFFY OMELET
Of course you can double this and make it in a large skillet! You can use any favorite cheese you desire, cheddar is good also, I prefer Monterey Jack for omelets! The trick to a fluffy omelet is the baking powder, so do not omit and don't overcook the eggs! --- also see my recipe#251220

Steps:
- In a small bowl whisk together eggs, baking powder, cream, green onions, salt and pepper until frothy.
- Heat an 8-inch skillet over medium heat until your hands feel warm when held about 2-inches above the surface; add in butter and swirl to coat the bottom of the pan evenly.
- Pour the whisked eggs into the skillet; let set slightly.
- Using a heat-proof spatula, push eggs from edge towards the center; tilt pan to let egg fill the spaces.
- Repeat until omelet if JUST set (about 1-2 minutes).
- Sprinkle the grated cheese down the center of the omelet.
- Using the same spatula, gently fold the omelet over the cheese.
- Tilt skillet and slide the filled omelet onto a serving plate (don't worry if you tear the eggs slightly!).

CARAMELISED ONION & GOATS CHEESE OMELETTE
Adapted from a recipe, from 'Australian Men's Health' magazine that I found online in October 2008. Add your choice of herbs. Lately I've been using grindings of a fabulous rosemary and sage blend in a grinder.

Steps:
- Melt the butter in a (preferably non-stick) pan and sauté the onion and garlic until they have softened and just lightly browned; add the sugar and continue cooking until the consistency of the contents of the pan is sticky like a jam; remove from the pan. If you want to use the same pan, rinse or wash it as necessary and wipe it clean with kitchen towelling.
- Whisk the eggs lightly and pour into a (preferably non-stick) pan; when the base of the omelette is beginning to set, add the cheese, onions and garlic, your choice of herbs and salt and pepper to taste.
- Cook the top of the omelette under a grill; slide the omelette onto the serving plates and serve immediately with your choice of salad greens drizzled with olive oil and sprinkled with lemon zest.

SOLO GREEN CHILI CHEESE OMELETTE
The green chili will add a little excitement to the breakfast table, and the cheese will add some dairy to the diets of those who find milk difficult to digest.

Steps:
- Beat 2 whole eggs lightly until the yokes are broken up, but not totally homogenized.
- Add jalapeno pepper or Green Salsa and beat for another 30 seconds.
- Melt the butter in a frying pan and swirl until the bottom of the pan is totally covered.
- Pour in the egg mixture, and lift the edges until it has have started to set and is no longer liquid Add cheese evenly over the eggs, and remove the pan from the heat.
- Tip the pan towards the center of the plate and start to slide the eggs out.
- When half of the omelette is out of the pan, twist the pan so that the second half flops over the first half, covering the cheese inside.
- Before serving, allow the folded omelette to sit for 30 seconds so that the cheese can melt.
KITTENCAL'S ITALIAN MELT-IN-YOUR-MOUTH MEATBALLS
Cooking the meatballs in simmering pasta sauce will not only add so much extra flavor to the sauce the meatballs will be melt-in-your-mouth tender, you may of course oven-bake the meatballs for about 25 minutes, --- don't be afraid to add in more Parmesan cheese and a little more milk, there is no need to measure exactly, this recipe is pretty much foolproof, leftover cooked meatballs make a wonderful pizza topping just slice thinly and freeze until ready to use ----- these also make wonderful juicy burgers shaped into patties-- for more of my tried and true recipes check out my food blog at www.kittencalskitchen.com

- Mix all ingredients together in a large bowl.
- Shape into small meatballs (at this point you can place on a jelly-roll/baking sheet and freeze to use later, or cover with plastic wrap refrigerate up to 24 hours before using).
- Drop the meatballs into simmering pasta sauce, do not stir for at least 20 minutes or you will risk breaking the meatballs.
- Continue cooking in the simmering sauce for another 20 minutes (depending on how fast your sauce is simmering 40 minutes total should fully cook the meatballs).
- After the 40 minutes cooking time continue cooking your sauce with the meatballs in for as long as desired.
- **note** you may also bake the meatballs at 350 degrees F for 25 minutes or until cooked through.

KITTENCAL'S GREEK FETA AND OLIVE OMELETTE

- In a bowl whisk eggs with whipping cream, baking powder, oregano and black pepper until well combined; allow to sit for 5 minutes.
- In a medium skillet melt butter over medium heat until sizzling.
- Whisk/stir the egg mixture one more time then pour into hot skillet; cook without stirring for 3 minutes or until almost set, gently lifting the edge of the eggs with a spatula to allow any uncooked egg to flow underneath.
- On one side of the ometette sprinkle the feta cheese and olives.
- Lift the uncovered half over the cheese and olives and cook for another 2-3 minutes.
- Slide onto a plate.
