Kittencal's Party Meatballs With Cranberry-Marmalade Sauce image

I find this is the best recipe for appetizer meatballs everyone seems to like this one when I serve it at my get togethers, but you most certainly can use your own favorite meatball recipe for this, or see my Parmesan meatball recipe#69173 you can reduce the garlic amount to taste if desired. Don't omit the dry onion soup, it what makes these meatballs Yield is only estimated and all amounts can be adjusted to taste.

2 1/2 lbs lean ground beef
2 tablespoons fresh minced garlic (or to taste)
2 small eggs, slightly beaten
2 (1 ounce) packages lipton dry onion soup mix (can use only one package, two is better!)
2 -3 tablespoons grated parmesan cheese (optional)
1/4 cup breadcrumbs
2 teaspoons black pepper (or to taste)
1 teaspoon seasoning salt (can use more)
1 (16 ounce) can cranberry sauce
1 teaspoon garlic powder (or to taste)
1 (12 ounce) jar Heinz Chili Sauce
3/4 cup marmalade
1/4 cup water
2 tablespoons soy sauce (can use more)
2 tablespoons red wine vinegar
1 -2 teaspoon dried red pepper flakes
black pepper (optional)

Steps:

  • In a bowl combine all the meatball ingredients together.
  • Shape into 1-inch balls.
  • In a skillet brown the meatballs in hot oil over medium heat for about 5-6 minutes (meatballs will not be completely cooked through) remove and drain on paper towels.
  • For the sauce; in a large saucepan mix together the cranberry sauce with all remaining ingredients; cook over medium heat stirring constantly until smooth.
  • Season with black pepper if desired.
  • Add in the browned meatballs; reduce heat to low and cook about 20-25 minutes or until the centers are no longer pink.
  • Delicious!

This may also be made using Lil Smokies in place of meatballs --- these are at there best served from a crockpot with a long fork, you may bake the meatballs, cool then freeze just thaw in refrigerator overnight and drop in the simmering sauce, the meatballs may be oven-baked or cooked in a skillet --- you might need to adjust the sauce ingredients to suit taste, if you like more cranberry flavor then increase the cranberry sauce by half a can or one can --- also see my recipe#69173

2 lbs extra lean ground beef
2 -3 tablespoons fresh minced garlic (can reduce amount)

1 -2 teaspoon fresh ground black pepper
2 (8 ounce) cans jellied cranberry sauce, ' (can use 2-1/2 cans or even 3 if desired)
1 1/2 cups Heinz Chili Sauce
2 tablespoons brown sugar
2 -3 teaspoons lemon juice
Frank's red hot sauce (to taste)

Steps:

  • Place all ingredients in a large bowl; mix well using clean hands (you might need more breadcrumbs to hold the mixture together).
  • Shape into about 1-inch balls.
  • Place on a baking sheet.
  • Bake 350 degrees for about 22-25 minutes or until cooked through or you may fry in a skillet.
  • For the sauce; in a large saucepan over medium heat blend the cranberry sauce, chili sauce, brown sugar, lemon juice (start with 2 tablespoons lemon juice) and hot sauce to taste; mix to combine then adjust ingredients to suit taste if desired.
  • Add in the cooked meatballs and simmer for about 45 minutes.
  • transfer to a chafing dish or crockpot to keep warm.

2 oranges
1 lemon
1 1/2 cups water
1/8 teaspoon baking soda
1 lb ripe cranberries
6 1/2 cups sugar
1/2 bottle liquid pectin

Steps:

  • Cut oranges and lemon into quarters, and remove seeds.
  • Grind the fruit, chop fine, or cut crosswise into wafer-thin slices.
  • Add water and soda.
  • Bring to boil and simmer, covered, for 20 minutes, stirring occasionally.
  • Add cranberries and simmer, covered, for 10 minutes.
  • Measure 5 cups fruit into very large saucepan.
  • Add sugar and mix well.
  • Put over high heat, bring to a full rolling boil and boil hard for 1 minute, stirring constantly.
  • Remove from heat and at once stir in pectin.
  • Skim off foam with metal spoon.
  • Then stir and skim for 7 minutes to cool slightly and to prevent floating fruit.
  • Ladle into hot sterlized jars, and seal.
  • Makes about eight 1/2- pint jars.

If you don't mind the idea of using canned soup this is a delicious tomato sauce, because of the instant rice in the meatballs it will need about 1-1/2 to 2 hours of cooking time , I sometimes remove about 1/2 to 3/4 cup of the simmering sauce cool slightly then mix into the ground beef mixture before shaping into meatballs, you may need to adjust the brown sugar and vinegar amounts during cooking --- for meatballs I use my recipe#69173

4 tablespoons oil (or as needed)
1 medium onion, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
6 garlic cloves, finely chopped
1 pinch crushed red pepper flakes (optional or adjust to desired heat level)
2 (14 ounce) cans tomato sauce
1 (10 ounce) can tomato soup, undiluted (Campbell's is best to use)
1/2 cup water
1 tablespoon Worcestershire sauce
2 tablespoons cider vinegar
1/4-1/3 cup brown sugar (or to taste)
1 teaspoon seasoning salt (or to taste) or 1 teaspoon white salt (or to taste)
fresh ground black pepper (to taste)
1 1/2 lbs ground beef (use my Kittencal's Italian Melt-In-Your-Mouth Meatballs)
1 1/2 cups uncooked instant rice (such as Minute Rice)

Steps:

  • For the meatballs; mix the ground beef with ingredients stated in the recipe.
  • Mix in 1-1/2 cups instant uncooked rice.
  • Shape into about 1-1/4--inch balls or as desired, then place onto a plate.
  • For the sauce; in a pot heat oil over medium-high heat.
  • Add in onion, oregano and basil; cook stirring for about 3-4 minutes or until softened.
  • Add in garlic and chili flakes; cook stirring for 2-3 minutes.
  • Add in all remaining sauce ingredients; bring to a simmer stirring over medium heat until well combined.
  • Place the meatballs into the simmering sauce; bring back to a simmer (do not stir the sauce for at least 25 minutes or the meatballs will break apart).
  • Reduce heat to low or to a low simmer and cook uncovered for about 1-1/2 to 2 hours stirring frequently after the 25-30 minutes of cooking time.
  • Adjust the brown sugar and vinegar amounts if needed, then season with more salt and black pepper.

CRANBERRY GINGER-GARLIC PARTY MEATBALLS

Use your own favorite meatball recipe to make this. The amounts listed is enough for 2 pounds ground beef, you should get anywhere from 45-50 (1-inch) meatballs, if you are serving a crowd of people then I suggest to use 3 pounds of beef. Serve the meatballs in a chafing dish with long toothpicks or in a small crockpot. If desired you can saute the fresh garlic in the butter first, and then add in the remaining ingredients. This is always a favorite at get togethers!

2 -3 lbs lean ground beef
2 (20 ounce) cans pineapple chunks, drained and reserve juice
4 tablespoons butter
1/4 brown sugar brown sugar
2 tablespoons minced fresh garlic (adjust amount of garlic to taste)
3 tablespoons cornstarch
2 -3 tablespoons cider vinegar
2 tablespoons soy sauce
1 -2 teaspoon ginger powder (start by adding in only 1 teaspoon, adjusting to taste)
1 (250 ml) bottle Russian salad dressing
4 cups cranberry sauce (I just use the whole can!)
2 green bell peppers, seeded and chopped (optional)

Steps:

  • Prepare the ground beef with your favorite meatball recipe.
  • Shape into about 1-inch balls (or as desired).
  • Place on a baking sheet and brown to about HALF cooked, just enough to release the fat (maintain oven heat to 350 degrees).
  • In a saucepan combine reserved pineapple juice, butter, brown sugar, minced fresh garlic, cornstarch, cider vinegar, soy sauce and ginger (start with 1 teaspoon ginger powder) Russian Dressing and cranberry sauce; bring to a boil, simmer and cook until the mixture is thickened and bubbly (about 10-15 minutes) stirring occasionally.
  • Grease a casserole dish (large enough to hold the mixture).
  • Place the semi-cooked meatballs in the dish with the sauce, pineapple chunks and chopped bell peppers; stir gently with a wooden spoon to coat the meatballs.
  • Cover and bake for about 30 minutes or until meatballs are cooked completely.
  • *NOTE* if you find that the sauce is too sweet, then add in another tablesooon cider vinegar and simmer on top of the stove for anoth couple of minutes or so.

¼ teaspoon poultry seasoning
½ teaspoon garlic salt
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon Worcestershire sauce
1 pinch cayenne pepper
1 large egg, beaten
¼ cup milk
½ cup plain bread crumbs
1 tablespoon olive oil
1 cup canned jellied cranberry sauce
½ cup orange marmalade
½ cup chicken broth
1 tablespoon minced jalapeno pepper
1 tablespoon minced Fresno pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Mix the turkey, poultry seasoning, garlic salt, onion powder, salt, pepper, Worcestershire sauce, and cayenne pepper together in a bowl. Stir in the egg, milk, and bread crumbs. Cover with plastic and refrigerate for 1 hour.
  • Heat olive oil in skillet over medium heat. Roll the turkey mixture into balls, about one tablespoon each. Place the meatballs in a single layer in the skillet. Brown meatballs on all sides, flipping occasionally. Place browned meatballs on a clean baking sheet. Set aside.
  • Combine cranberry sauce, marmalade, and chicken broth over medium heat in the skillet used to cook the meatballs. Stir in the jalapeno and Fresno peppers, then return meatballs to skillet. Reduce heat to medium-low, and continue to cook until the meatballs are no longer pink in the center and glaze is reduced. Season with salt and pepper.

1 envelope onion soup mix
1/2 cup seasoned bread crumbs

There is a method to making the perfect sauce and that is a very long slow cooking time then refrigerate to blend the flavors, a good sauce needs time to "ripen" and develop it's full flavor, this sauce must be made a day or even up 4 days ahead in order for the flavors to intensify, the longer you leave it refrigerated the better it will be --- this recipe makes a fair amount use what you need then freeze the rest in plastic containers for another meal, for a quick thaw just pop in the microwave for about 8 minutes or a little more or thaw in refrigerator overnight, if desired you may partially precook the meatballs on a greased baking sheet in oven before adding to the sauce --- you will love this sauce and you will be making it often! ---- also see my recipe#150207

prepared meatballs, recipe (see my Kittencal's Italian Melt-In-Your-Mouth Meatballs)
olive oil (to cover bottom of the pot)
1 large onion, chopped
6 large garlic cloves, finely chopped (or to taste)
1 -2 bay leaf
1 tablespoon dried oregano (rubbed with fingers to release the oils)
1 tablespoon dried basil (rubbed with fingers to release the oils)
1 -2 tablespoon salt (or to taste)
1 teaspoon fresh ground black pepper (or to taste)
1 teaspoon crushed red pepper flakes (optional or to taste)
1 (6 ounce) can tomato paste
1/3-1/2 cup dry red wine (or to taste)
2 (28 ounce) cans crushed tomatoes (can use 3 cans if you plan of freezing some sauce)
2 (28 ounce) cans diced tomatoes, well drained
1 tablespoon sugar (optional and to be added in the last 30 minutes of cooking time)

Steps:

  • Prepare the meatball recipe as directed on the recipe; transfer to a plate cover with plastic wrap and refrigerate until ready to use (the meatballs may be prepared up to 1 day in advance).
  • Drain the diced tomatoes over a strainer.
  • Coat bottom of large heavy-bottomed pot with olive oil, heat over medium heat.
  • Saute onion with bay leaf, oregano, basil, salt, black pepper and crushed chili peppers for about 5-7 minutes or until the onions are transparent.
  • Add in fresh garlic; cook stirring for 2 minutes.
  • Add the tomato paste;mix and stir for about 2 minutes or until well combined with the onion mixture.
  • Add in the wine; stir well to combine.
  • Add the 2 cans crushed tomatoes (can use 3 cans if you are freezing some sauce) and the drained diced tomatoes, stir and bring to a light boil; boil for 5-8 minutes then reduce heat to low.
  • Add in uncooked meatballs to the sauce (if you are adding the meatballs uncooked do not stir for 30 minutes or you may run the risk of them falling apart in the simmering sauce).
  • Simmer uncovered on low heat for about 3-5 hours (the longer you simmer uncovered the thicker and richer your sauce will be so don't be afraid to simmer even 6 hours!) adding more salt if desired.
  • Skim off any fat that might gather on top of sauce.
  • Allow to cool to room temperature then refrigerate (with the meatballs in the sauce) a minimum of 1 day or up to 4 days before using.
  • Use as much as desired then freeze the rest for another meal, just reheat the sauce on top of the stove or heat in microwave (this will freeze well for up to 6 months).
  • Note: if desired, you can bake the meatballs in the oven before adding to the sauce.
