Recipe video above. The oven baked version of the wildly popular Mushroom Rice! The idea behind this recipe is that the mushrooms act as a "lid" over the rice as it bakes, and the mushroom juices drip into the rice - best broth ever! The rice is FLUFFY, garlicky and buttery, and the mushrooms are golden brown and juicy inside.

650g (1.3 lb) mushrooms (, quartered (Note 1))
50g (3.5 tbsp) butter (, melted (hot, not cooled))
2 - 3 garlic cloves (, minced (I use 3 - nice and garlicky!))
Salt and pepper
1.5 tbsp olive oil
1 1/2 cups long grain rice (, uncooked)
1 1/2 cups (375 ml) chicken or vegetable broth (, low sodium)
1 1/4 cups (315 ml) water
1 tsp dried thyme
1 tsp garlic powder
3 shallots / green onions / scallions (, finely sliced)
1 - 2 tbsp butter (, optional)

Steps:

  • Preheat oven to 180C/350F.
  • Place mushrooms in a large bowl. Pour over hot melted butter, add garlic, salt and pepper. Toss well.
  • Place all the Rice ingredients in a baking pan - 22 x 33 cm / 9 x 13". Mine is 30 x 24 cm / 12 x 9.5" - don't need to be exact here, but don't stray too much from pan size.
  • Mix and shake the pan to spread the rice out evenly.
  • Spread the mushrooms over the rice - they will be partially submerged but should pretty much cover the whole surface area (to be the "lid" while the rice cooks).
  • Drizzle over olive oil.
  • Bake for 35 - 40 minutes or until mushroom is golden. Remove from oven and rest for 5 minutes.
  • Finishes: Add extra butter (if using) and scallions. Toss through rice. Serve!

fresh ground pepper, (to taste)

1¼ cups long grain white rice
3 cups low sodium chicken broth
grated Parmesan, (for garnish)
chopped fresh parsley, (for garnish)

Steps:

  • Preheat oven to 375˚F.
  • Combine butter and olive oil in a large oven-safe skillet and set over medium high heat; Melt butter.
  • Add onions to skillet and cook for 2 minutes.
  • Season chicken with garlic powder, paprika, and onion powder.
  • Add chicken to the skillet; cook for 5 minutes, or until golden brown on all sides.
  • Stir in mushrooms; season with salt and pepper, stir, and continue to cook for 4 minutes, stirring frequently, until mushrooms are tender.
  • Stir in garlic.

200g basmati rice
1 tbsp olive oil
1 large onion , chopped
2 tsp chopped rosemary or 1 tsp dried
250g chestnut mushroom , quartered
2 red peppers , sliced
400g can chopped tomato
425ml vegetable stock
handful parsley , chopped

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Tip the rice into a sieve, rinse under cold running water, then leave to drain. Heat the oil in a flameproof casserole, add the onion, then fry until softened, about 5 mins. Stir in the rosemary and mushrooms, then fry briefly. Add the rice, stir to coat in the oil, then add the peppers, tomatoes, stock and some freshly ground pepper. Bring to the boil, give it a stir, cover tightly with a lid, then bake for 20-25 mins until the rice is tender. Scatter over the parsley and serve.

This one pot mushroom chicken and rice recipe is an easy one pot meal - flavourful chicken and mushrooms with creamy rice, all cooked in the same pot!

2 teaspoons olive oil
6-8 bone-in, skin on, chicken thighs
6-8 medium button mushrooms, sliced
1 medium onion, diced
5-6 cloves garlic, minced
1 tablespoon dried parsley
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups low sodium chicken broth
1/4 cup heavy cream (35%, whipping cream)
1 cup long grain white rice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large oven safe skillet with a lid, heat the olive oil over medium heat on the stove.
  • Season the chicken thighs with salt and pepper, and add them to the pan. Brown the chicken, about 4-5 minutes per side. The chicken won't be cooked through.
  • Remove the chicken from the pan and and drain any excess grease, leaving a teaspoon or two in the pan.
  • Add the mushrooms, onions and garlic to the pan and cook, stirring, for 4-5 minutes, or until they are softened.
  • Add the parsley, thyme, salt, and pepper and stir to combine.
  • Add the chicken broth, cream, and rice and stir. Bring the liquid to a simmer (steaming with small bubbles forming along the edges of the pot, but not quite boiling).
  • Place the chicken on top of the rice and put the lid on the skillet.
  • Place the skillet in the preheated oven and bake for 35 minutes. Remove the lid and continue baking for another 10 minutes with the lid off, or until the rice is tender.

3 tablespoons oil (or as needed to cover bottom of the saucepan can use butter or half of each)
1 medium onion, finely chopped
3 garlic cloves, chopped (can use more)
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 1/2 cups water
1 cup milk
1/2 cup grated parmesan cheese (more to mix in after cooking if desired)
1 cup uncooked long grain white rice
1/2 teaspoon fresh ground black pepper (or to taste)
salt (optional and to taste)

Steps:

  • Set oven to 400 degrees F (or 350 degrees F for air-convection oven).
  • Set oven rack to second-lowest position.
  • Heat oil in a medium oven-proof saucepan over medium-high heat; add in onion and saute until softened (about 4 minutes).
  • Add in garlic; cook stirring for about 2-3 minutes.
  • Add in the next 5 ingredients; stir over medium heat until smooth and bubbly.
  • Mix in the rice, then season with black pepper and salt.
  • Cover with a tight-fitting lid.
  • Bake for 30 minutes.
  • Remove from oven and stir the mixture ( the saucepan will be hot so handle carefully holding with a tea towel).
  • Return to oven and continue baking uncovered for another 10-15 minutes or until the rice is soft.
  • You may mix in more Parmesan cheese if desired.
  • The rice is best if served immediately.
