Using this method will prevent your meringue from "weeping" and will hold up well for days, it's great for lemon meringue pies --- prep time does not include cooling time. cornstarch/water mixture. If you are making two pies and using 6 or more egg whites, just double up and use 2 tbsp of cornstarch, 4 tbsps cold water and 1 cup boiling water, and follow same method.

1 tablespoon cornstarch
2 tablespoons cold water
1/2 cup boiling water
3 egg whites
7 tablespoons sugar
1 1/2 teaspoons vanilla
1 pinch salt

Steps:

  • In a saucepan, blend the cornstarch with the water.
  • Add the boiling water, and cook, stirring until clear and thickened.
  • Let stand until COMPLETELY COLD ( I just put it in the fridge for an hour to speed up the cooling process, but by all means it can sit out at room temperature too).
  • With an electric mixer, at high speed, beat the egg whites until foamy.
  • Gradually add in the sugar; beat until stiff, but not dry.
  • Turn the mixer to low speed; add in the salt and vanilla.
  • Gradually beat in the cold cornstarch mixture.
  • Turn the mixer onto high again; beat well.
  • Spread the meringue over cooled pie filling sealing the meringue to the pie crust.
  • Bake at 350 degrees for 10 minutes, or until the meringue is lightly browned.

400 g frozen shortcrust pastry, sheets
2 large eggs, separated
400 g sweetened condensed milk
80 ml lemon juice
1/2 tablespoon lemon zest, to taste
100 g caster sugar

Steps:

  • Preheat oven to 220°C.
  • Cut a dozen 10cm circles from pastry and line a 12-hole non-stick muffin tin. Prick the bases and chill for 30 minutes.
  • Bake for 10 minutes until lightly golden, then cool.
  • Whisk yolks, condensed milk, zest and juice in a bowl and set aside to thicken.
  • In another bowl, beat whites to form soft peaks.
  • Gradually add sugar, still beating, until you have a thick and glossy "meringue".
  • Spoon the lemon filling into the pastry cases and top each with meringue, creating little peaks by drawing the spoon up.
  • Bake for 6 minutes or until lightly browned. Cool before serving.

1 tablespoon cornstarch
2 tablespoons granulated sugar
1/2 cup water
3 egg whites
1 dash salt
6 tablespoons granulated sugar

Steps:

  • Mix cornstarch, 2 tbls sugar and water and cook over low heat till mixture is clear -- remove from heat -- in a bowl, whip egg whites until peaked and then slowly add the heated cornstarch-sugar-water mixture.
  • Beat until creamy.add salt and 6 tbls sugar and beat again till fluffy -- Pile on your pie and bake in a 350* oven till meringue is gold tinged, usually 20-30 minutes.

You will not find a better sugar cookie anywhere you search, this will most likely be the only sugar cookie you will use, not only are these cookies buttery delicious, the dough is an absolute dream to work with, it rolls out easily and is easy to handle, also the cookies hold their shape when baked something many sugar cookies do not do --- make as many different colors as desired in separate bowls with the icing, the cookies must be completely cooled before icing --- plan ahead the dough must be chilled for at least 2 hours before rolling -- since these are topped with icing they are not a sweet cookie if you want a sweeter taste then increase the sugar amount

1 cup butter, softened (no substitutes)
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sifted confectioners' sugar (the sugar must be sifted)
1 tablespoon milk (adding in more if needed for proper spreading consistency)
1 tablespoon light corn syrup
1/4 teaspoon almond extract (can use 1/2 teaspoon vanilla in place of the almond)
food coloring (use your choice of colours)

Steps:

  • For cookies; in a large bowl combine butter with sugar, eggs, vanilla and almond extract; beat using an electric mixer on high speed until light and fluffy.
  • In another bowl combine the flour with baking powder, baking soda and salt; gradually stir into the butter mixture until well blended.
  • Cover bowl with plastic wrap and chill for 2 hours.
  • Set oven to 400°F.
  • Line cookie sheets with parchment paper (do not grease cookie sheets use parchment paper only).
  • On a very lightly floured surface roll out the dough into about 1/4-inch thickness.
  • Cut into desired shapes using cookie cutters.
  • Place cookies 2-inches apart on cookie sheet.
  • Bake 4-6 minutes.
  • Remove cookies to wire racks to cool completely before icing.
  • For the frosting; in a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, you will likely need more milk for the perfect spreading consistency).
  • Beat in corn syrup and almond extract until the icing is smooth and glossy (if the icing is too thick add in a small amount more of corn syrup).
  • Divide into as many separate bowls as you wish for different colours.
  • Add in food colouring until desired intensity is achieved.
  • Paint the icing over the cookies using a brush, or dip edges of cookies into icing.
  • Allow to set on waxed paper.
